A pile of Mexican cheese baked in the oven turns into a taco shell! And it’s so yum yums😋. Inside my shell is taco meat, Rotel tomatoes 🍅 and chilies 🌶. Cheese 🧀 , riced cauliflower, and sour cream. All I ever got from carbs (donuts, bagels, grains, cereal, bread) was lots of stored fat (energy) ! Despite exercising I managed to gain 50 pounds (over 3 years) after Having my 4th child. I never lost the baby weight. This was a *true example of trying to "out work a bad diet" and a terrible sugar addiction -With hypothyroidism- 🚫🚫 Don't fall into the carb addiction cycle..the more you eat , the more you will want!

My TSH was 0.24 . My T4 was 9.4.The office said it was normal. I bet my primary doc disagrees. 😏It is better than it was in Nov of 2017. Which was 0.02. But no, I don't have hyperthyroidism, I have hashimotos..but sometimes it acts weird. I can never tell by symptoms, for instance I've been freezing cold for 3 weeks. I figured my TSH would be at least 5. I'm just surprised both tests were in the normal range..they never are! .
A yummy chicken salad sounded so good after working in our basement for a few hours. The hubs has started a leptin reset plan due to a pretty long stall in his weight loss journey so we decided to reduce our processed food intake. This includes salad dressing. We decided to try our hand at Ceasar. Pretty good for a first try and super easy in the Ninja blender. A special thanks to my neighbor @sueporterhaney

Keto Mexican Egg Casserole. So easy!
1 pound breakfast sausage
1/2 pound chorizo
5oz fresh spinach
1 red bell pepper, diced
1 cup shredded sharp cheddar cheese
1 teaspoon garlic powder
1/2 teaspoon cumin
1/4 teaspoon black pepper
12 large eggs
1/4 cup heavy cream
Brown sausage and chorizo together in a large skillet. Add spinach and bell pepper and cook until spinach is fully wilted down.
In a large bowl, whisk together eggs, cream, cheese and dry seasonings.
Transfer meat and veggies to a greased 9x13 baking dish. Pour egg mixture over the top and stir gently just to incorporate all the ingredients.
Bake at 350 for 45 minutes or until eggs are set. Serve with taco toppings. We had cilantro, tomato, avocado, and sour cream.
Makes 18 servings. I bet it would be good reheated for easy breakfasts all week long.
