Ever find a kitchen tool or gadget you’re obsessed with? I LOVE these measuring spoons from Progressive! They snap together, which makes it so much easier than taking spoons on and off of a ring, and they have different spoons on each side! This makes it easier to get into certain containers (ahem, looking at you here, spices) and they’re AMAZING if you’re using a recipe that calls for wet and dry ingredients - no more washing between ingredients. Just use the different sides.

1 head cauliflower, (to make about 4 cups processed cauliflower)
2 eggs, lightly beaten
1/2 c. finely grated Parmesan
1/2 tsp. oregano
1 1/2 c. shredded white Cheddar
Cut cauliflower into florets. Process cauliflower florets in a food processor until the texture resembles rice. Alternatively, you can grate the cauliflower.
In a medium bowl, combine processed cauliflower, eggs, Parmesan and oregano. Mix until evenly combined then season with salt and pepper.
Heat a large nonstick skillet over medium heat. Spray with cooking spray then scoop the cauliflower mixture into a small patty on one side of the pan. Repeat to form a second patty on the other side. (These are your “bread” slices.) Press down on both pieces with a spatula and cook until golden underneath, about 5 minutes. Flip and cook until the other sides are golden, about 3 minutes more.
Top one cauliflower slice with cheese then place the other cauliflower slice on top. Cook until the cheese is melted, about 2 minutes more per side. Repeat with remaining ingredients.

This morning I woke up jetlagged after Trans- Atlantic flight, my fridge was almost empty. Thankfully I had some organic sheep yogurt! Excellent, I can make my budwig breakfast! I didn't have any fruit, nuts or chia to add some taste to the bowl, but I had some super food powders that I typically take for my travel. ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp of honey
1- 2 tbsp of flaxseed oil
2 teaspoons of superfood powder. It can be freeze dried acai, blue spirulina, freeze dried beets, or other berries. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Chopped walnuts or almonds
Rasberries, blueberries or blackberries for keto dieters

Heute in Dubbellugg's Ketoküche gab's den 4. Teil der losen Reihe ,,Gerichte bis 600 kcal"😉mit Lust auf Fleisch: Tomaten-Ingwer-Nackensteak mit Paprikagemüse. Meine Zutaten waren heute pro Portion: 140 g rote Paprika, 40 g rote Zwiebeln, 5 g frischer Ingwer, 1/2 Tomate (48 g), 10 g Kokosöl, 175 g Nackensteak, Gewürze (Salz, Pfeffer, Thymian, Paprikapulver) und 12 g Butter. Meine Nährwerte für heute waren pro Portion dazu: 600 kcal, 6 g Ballaststoffe, nur 12 g Kohlenhydrate, 32 g Eiweiß und leckere 47 g Fett. Der Herr Skaldeman ist jetzt erstmal auf der Suche nach seinen Nackenmuskeln, aber vergab mir vorher noch 1,06 Ratiopunkte für's Essen. ☺

Now this one was more of a craving. I was in the mood for some bread pudding and since the #eggloaf
has such similar texture I decided to experiment a bit see if I can get something similar. Very close.
To the traditional #eggloaf
4 cream cheese oz
4 tablespoons of butter
I added one teaspoon of vanilla extract and some grounded fresh nutmeg. Lots of cinnamon since I love cinnamon.
For the sauce I mixed one egg with a cup of whole milk, one teaspoon of vanilla extract and stevia or other sweetener to taste. The original recipe calls for a teaspoon of bourbon but since I didn’t want licour I just added a teaspoon of orange blossom water for a spicy flavor.
Boil stirring constantly until it coats the back of the spoon.
For serving I added the sauce as well as a drizzle of #sugarfreemapplesyrup

Trying to get back to my 18 hour intermittent fasts and only made it about 15 hours today before caving. (Lifting at 4 am makes me starving by noon!) On an semi-related note, egg cookers are seriously amazing for having in the office! I can make either hard boiled eggs or a quick omelet in less than 5 minutes! This bacon, mozzarella, sautéed mushroom & onion beauty is paired with half an avocado for plenty of protein and healthy fats. I will usually also add in about a tsp of coconut oil. Not only does it keep it from sticking to the little pan, but it tastes great!
Happy Wednesday friends and fam! I’m posting my progress photos to hopefully inspire someone that might be in a rut or in a bad place mentally/physically right now. This is how much a difference can make in a short time of two months with consistent diet and training. Not only have i released a lot of my water weight, but my body is finally toning up and I’m feeling amazing from the clean foods I’ve been eating. I used to get bad anxiety - got to a point when I was anxious almost every day, today I am super pumped to say that I haven’t had anxiety in weeks. I have so much more work to go but I am loving the process so far and can’t wait to see what another Month looks like. 💪🏻🤟🏻 stay tuned bitches, this body is under construction. #workingonsummer2019body

2 medium sized zucchini
1/4 of a red onion sliced very thin
4 tsp olive oil
2-3 ( to taste) tsp apple cider vinegar
1/2 Tablespoon Italian seasoning
1 packet Splenda if desired
1/4 teaspoon salt
Whisk together the olive oil, apple cider vinegar, Italian seasoning, and salt in a large bowl and set aside.
Use your spiralizer to make zucchini noodles.
Add the zucchini noodles and red onion to the dressing and toss to coat.

I am a fruit LOVER (açaí bowls are my shit I plan to post a keto approved recipe v soon) ... anyways I was disappointed when I found out most fruits are too high in carbs to include in my diet if I wanted to sustain my daily restricted amount of net carbs. Exciting news is that berries are an exception! They are high in fiber and low in carbs. Here are just a few interesting benefits strawbs have:
- antioxidant packed=reduce inflammation, Vitamin C =improves immune system, reduce signs of early aging. -increases production of fat burning hormones known as lepton & adiponectin -Potassium in strawberries is known to improve cognitive function
-high fiber boosts digestion. •1/2 cup strawberries = 6g net carbs (8 grams total carbs). •Second drink your fluids! I try to take a water bottle with me every time I leave my house.
