The scale...not the end all, but an indication of where you began, where you are going, and a method of accountability.
Do you ever have that feeling when you wake-up that you might weigh less, feel smaller, or that your clothes all of a sudden are too big?????
Do we ever think this way when we are gaining?
That was how I felt today, and instead of waiting for my weekly weigh-in, I did it! I bravely stepped on the scale...off the scale...back on the scale, and to my surprise, I had moved into "A LOWER TEN."
The LOWER TEN is how I monitor my progress, with every ten pounds I shed, I consider that a victory! Perhaps that is my victory, as it might be different for you.
When I think of "ten pounds" and how long it takes to shed those ten pounds and HOW easily it is to GAIN those ten pounds, I chose the loss over the gain! It was not always like that. There was a time I was seriously unaware of how much I had gained! How does that happen?
When I entered my weight today in My Fitness Pal, I was presented with the "Over halfway to your goal" progress report!

PSA❗️ this is an absolute must in my cooking. I literally use this stuff almost every single day. You can say I’m slightly obsessed with it! any more right now! About a month or so ago they started making keto pizzas once a week (because let’s face it, almond flour ain’t cheap honey) and they absolutely knocked it out of the park. Pictured here is part one of two of my order.... GARLIC FINGERS. Yessss. If you aren’t from the east coast, these puppies have a cult like following and they are one of my biggest weaknesses. Pizza crust with a creamy garlicky sauce, topped with mozzarella and sometimes some spices depending on where you go, and typically accompanied by donair sauce but sadly donair sauce is like the least keto thing EVER. 😭 however, paired with their marinara sauce, I was in 7th heaven. Definitely a loyal customer for sure 🧡
Keto bread made in the microwave, 90 second cooking time. I'm so impressed!!!! Not usually one for substitutes for things but this is quick, easy and if you just want something different it is something to try.
3 x tablespoons almond meal
1 x tablespoon olive oil
1 x egg
0.5 teaspoon baking powder
Mix it all up to a thick paste, pour it into a ramekin, microwave on full for 90 seconds. Run a knife round the edge to loosen, turn it out, slice it and eat it! Needs salt but sprinkled mine on top afterwards as not sure if it would affect cooking??? Toasted a couple slices, spread with butter and topped with cheese.....perfick!

Transformation Tuesday!! The pic on the left is at my wedding in 2014 and the right is me today 4 years later. I worked out so much to look good for my wedding day but still eating starchy and sugary carbs along the way. ________________ 🌀 INGREDIENTS
1/4 cup coconut flour
2 tablespoons grated Parmesan optional
1/2 teaspoon kosher or natural sea salt
1/2 teaspoon ground cumin
1/4 - 1/2 teaspoon ground smoked paprika
1/2 teaspoon garlic powder optional
1/2 teaspoon onion powder optional
1/2 teaspoon black or white pepper
1 pound chicken tenderloins 6-8 pieces
1/4 cup olive oil or a beaten egg
________________ 🌀 DIRECTIONS
1. On plate or shallow container, mix coconut flour, Parmesan and spices with a fork.
2. Pour olive oil (or beaten egg) in small container. Drench each tenderloin in olive oil then gently press each chicken tenderloin in coconut flour mixture. Spray extra olive oil over the coating until wet to prevent dryness.
3. Ensure each tenderloin is completely covered with coating then place on a rack inside shallow baking pan. Spraying extra olive oil on top prevents dry coating.
4. Bake at 400°F for 10-12 minutes then flip each tenderloin.
5. Continue baking for an additional 10-12 minutes. To brown the outside, place tenders about 6-inches from top broiler on high and broil each side for about 1 minute. (You'll need to flip the tenders again to brown each side using the broiler)
6. Eat plain or dip in your favorite sauce.

4 months ago I bought this jacket on my 28th birthday, swearing to myself that spending $45 on a jacket that was so tight it was leaving broken blood vessels on my arms after wearing it for a few hours wasn’t a mistake. I promised myself I’d fit in it soon. Well with the hot weather over the summer I haven’t put it on since early July and buddy.... not only is it not crazy tight but it’s super roomy and I can close it AND still have room left over! It’s still a bit snug on my arms but I’ll take any wins I can get 🙌
