CHICKEN ALFREDO W/ ZOODLES .
This is soooo delicious and easy. I never measure anything when I’m making Alfredo. I start by melting butter and sautéing minced garlic. Then, I add in heavy whipping cream and parm. I season with salt, garlic powder, and pepper. I let the sauce simmer while I peel a zucchini with a vegetable peeler to make the, “zoodles” I add the zucchini noodles and rotisserie chicken to the sauce and mix well. I let all of the combine and serve hot. The sauce is soo rich and creamy. This is one of my go-to meals, what’s yours?

Okay everyone, posting this here so that I can be accountable! I am switching it up starting Monday! Not only will I be trying to do 2 weeks of a 20:4 fast with OMAD, but I will also be eliminating flours (almond and coconut), sweeteners (even Stevia), dairy (all the way. Because I have still been having butter, mayo, and the occasional cheeses), coffee, as well as nuts. I am so close to my goal, but I am stalled, not going up, but not coming down either! Admittedly it's been about a month, and I KNOW dairy and sweeteners at the very least are causing the scale not to move because of my PCOS. Going to try this as a way to move the scale! I have already cut way back on the dairy, but as I recently but I really think eliminating these things and tracking a little bit can help me push past these last few pounds! I will try to post all of my meals daily during this 2 week period. Any tips or advice?! Thank you all for being so supportive! I'm learning so much everyday and after losing over pounds in less than a year, I just want to lose at least another 10 by my ketoversary in October!

This is the JAM 🎉Tastes like a milkshake! So freaking good! My first time trying HWC and oh my, it’s yummy. I used 1.5 tbs HWC, about a cup of almond milk and filled to the top with my iced coffee. Then a quick splash of the sugar free vanilla syrup. SO. GOOD. 😍😍😍

1 tbsp. extra-virgin olive oil
1/4 onion, finely chopped
2 garlic cloves, minced
1/2 tsp. cumin
1/2 tsp. chili powder
1 1/2 c. shredded chicken
1/3 c. red enchilada sauce
2 tbsp. freshly chopped cilantro, plus more for garnish
1 c. shredded cheddar
1 c. shredded monterey jack
Sour cream, for serving (optional)
Preheat oven to 375° and line a small baking sheet with parchment paper. In a medium skillet over medium heat, heat oil. Add onion and cook until slightly soft, 3 minutes. Add garlic and spices and cook until fragrant, 1 to 2 minutes more. Add chicken and enchilada sauce, then bring mixture to a simmer. Stir in cilantro, season with salt, and remove from heat.
Make taquito shells: In a medium bowl, mix together cheeses. Divide mixture into 6 piles on prepared baking sheet. Bake 8 to 10 minutes, or until cheese is melted and slightly golden around the edges. Let cool 2 to 4 minutes, then add a small pile of chicken and roll tightly. Repeat until all taquitos are made.
Garnish with cilantro and serve with sour cream, for dipping.

This keto stir-fry with garlic cauli rice might one of the best I’ve ever made! The garlic “rice” is something I learned from cooking Filipino food and wanted to re-create it here! 💕
All you do is mince fresh garlic (I used pretty much a whole bunch/package/clove thing) and put to a pan with avocado oil until the garlic browns a nice brown colour and infuses the oil. At the same time, I had the cauli rice defrosting in another pan (I buy it frozen because = time). Then you take the browned garlic infused oil and about half of the garlic and put into the pan with the cauli rice, add s&p to taste but it changes the whole flavour and texture and it’s by far the best way I’ve made it. 🙌🏻🙌🏻
For the stir-fry, so stupid easy and legit so good. Chopped the broccoli up small and added to the garlic prepped pan, more avo oil while it was getting going and you can add whatever veggies / meat you want! I used left over green beans (bomb), the broccoli, and a 1/4 red pepper for a little sweetness in there. Also I used the rest of the roast because it wasn’t saucy at all, but you could use anything you want! 💥💥
The sauce is: Sambal Chili paste, sesame oil, reduced soy sauce, fresh ginger, gf rice vinegar & stevia all to taste and I played with the amounts because I don’t love spicy but it literally taste like a kung-pow marinade type thing and I’m going to make another larger version very soon! 🥡🥡
Also - It’s dairy-free which I’m starting to try and experiment with reduced dairy for a bit and see what happens! 🔥🔥
— Top with everything but the bagel seasoning or sesame seeds if possible! 😜😜

Back home & back to basics 🍳🥓 My daughter split this with me. I think we could both eat eggs & bacon every single day. Full disclosure, I had 3 days of strict keto on vacation & 3 days of ummmm, not keto. So today was a little rough. It’s easy to forget that I always used to feel this sluggish & have heartburn all the time & headaches. I seriously think my body hates grains & sugar. SO, back to keto for me!
