Happy Tuesday 💜 dinner yesterday was scrumptious 🤤buttered coriander cumin asparagus with bacon and chicken. #interim
ttentfasting16hours fasted all morning and broke the fast with a chicken Cesar salad, mid afternoon another avocado blt salad, and late night half a polska sausage fried in coconut oil with mustard dressing 😳 ate a lot yesterday but I’m sure it’s just getting back into ketosis and the cravings will go away. Yay back to food pictures lol I haven’t posted food pics for many reasons one being no phone to take a pic and borrowing hubbys phone for every little pic got old quick 😝 also he’s not here most of the day but anyways back to FOOD 🤤 In efforts of staying accountable and sharing some ideas I will start sharing my meals again 🤗 I need to keep a record of what I’m eating to eventually go to my plan of measuring everything 🤦♀️ I haven’t forgotten what I said about measuring all food to focus on macros but at the time I have some crazy projects due and need to just eat without the extra steps/thinking. It’s going to take a lot of research and preparation for me to be successful, I know myself and it’s gonna take time and getting use too.. sometimes when being a busy working mom somethings got to give but not forgotten just put to the side while things settle. ill keep you posted 😊

pic, and if I said I was not terrified, I would be lying. The pic on the left is about 5 weeks before I started Keto, and the pic on the right is from today, almost 2 months in. I think I see a difference, and I’m going to keep pushing. Small changes eventually add up to something big.
Keto Cabbage Lasagna 😋 😍 Let's GO!

1 large head cabbage, leaves separated
2 tbsp. extra-virgin olive oil, plus more for baking dish
1 onion, chopped
2 cloves garlic, minced
1 1/2 lb. ground beef
1 (28-oz.) can crushed tomatoes
1 tbsp. balsamic vinegar
1/4 c. torn basil leaves
Freshly ground black pepper
3 c. ricotta
2 eggs, beaten
1/4 c. grated Parmesan, plus more for serving
3 c. shredded mozzarella
Preheat oven to 350°. In a large skillet over medium heat, heat oil. Add onion and cook until onion is soft, about 5 minutes. Stir in garlic and ground beef, breaking up meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes; drain excess fat. Add crushed tomatoes and balsamic vinegar. Bring mixture to boil then reduce heat and simmer for 20 minutes. Season with salt and pepper then stir in basil.
In a medium bowl, combine ricotta, eggs, and Parmesan.
Grease a large baking dish with olive oil. Spoon a thin layer of sauce into bottom of baking dish. Add a layer of cabbage leaves, then top with more sauce, ricotta mixture, and mozzarella. Repeat layering twice more.
Bake until cabbage is tender and mozzarella is bubbly, about 25 minutes. Garnish with more basil.

KETO CHEESE STICKS .
This quick app will trick even the biggest carb lovers! Just dip a mozzarella cheese stick in egg, roll in breadcrumbs from @baconsheir
and place in freezer for about 20 minutes. Heat olive oil or butter in a pan over medium heat and fry cheese sticks until brown on all sides. Serve with a sugar free marinara.

I’ve been keto since late April. I would always see posts about “25 lbs. lost in 3 weeks with keto” and get SO discouraged because I wasn’t seeing the scale move at all. I knew I felt better, but there were no visible results.
I’ve started to see the scale drop verrrrrrry slowly in late June/early July, but for me, the biggest difference has been in my clothing. My mom bought this coat for me last winter and I never wore it because I could barely zip it up and when I did, it quite demonstratively showcased my back fat on all of its glory. I grabbed it this morning to take my dog for a walk and it kept falling off. When I stopped to zip it, I had a hard time believing what I was seeing. I could fit another person in here with me, y’all.😳 It’s taken me 6 months to lose 22 lbs. If you’re a slow loser, HANG IN THERE! Stick with it. It’s taken me 6 months to drop 22 lbs. and it has been totally worth it.

Had to make dinner quick! Six premade burger patties. Each of them had 1 oz Mozzarella Cheese, 10 g sundried tomatoes, 28 grams diced Pepperoni Jerky. I had three while Lhyn had the other three.
The intent was to make mini meatzas even if they don't look like it. I went with sundried tomatoes because of the concentrated flavor they had, it didn't take a lot of it for the tomatoes flavor to come out. The pepperoni jerky was all that I had in hand.
Like I said it doesn't look like much, but it does the trick 😁! What are other creative ways you guys use premade beef patties?

INGREDIENTS (yields 8)
3 1/2 c. shredded cheddar
1 tbsp. extra-virgin olive oil
1 onion, chopped
3 cloves garlic, minced
1 lb. ground beef
1 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. paprika
Freshly ground black pepper
Sour cream, for serving
Diced avocado, for serving
Chopped cilantro, for serving
Chopped tomatoes, for serving
1. Preheat oven to 375° and line a large baking sheet with parchment paper. Spoon about a tablespoon of cheese a few inches apart. Bake until bubbly and edges are beginning to turn golden, about 6 minutes. Let cool on baking sheet for a minute.
2. Meanwhile, grease bottom of a muffin tin with cooking spray, then carefully pick up melted cheese slices and place on bottom of muffin tin. Let cool 10 minutes.
3. In a large skillet over medium heat, heat olive oil. Add onion and cook, stirring occasionally, until soft, about 5 minutes. Stir in garlic then add ground beef, breaking up the meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes, then drain fat. Season with chili powder, cumin, paprika, salt, and pepper.
4. Transfer cheese cups to a serving platter. Fill with cooked ground beef then top with sour cream, avocado, cilantro, and tomatoes.

Cleaning out my closet and came across one of my favorite dresses I bought while pregnant.. I’ve said it before but I’ll say it again strangers didn’t realize I was pregnant because of how big I already was🤦♀️.. the picture on the left is on July of 2017 - my son was born the next day. The pic on the right is today, October of 2018, 15 mons later and wow what a difference 😳😊 so happy and so excited!! I haven’t been very motivated because life has been so crazy and there are not enough hours in the day.. ive been on and off Keto for a couple weeks now 😕 and I don’t really like to say I’m gonna do one thing then do another. I’ve been telling myself I’m gonna stick to it and reach my goal of 175 lbs but for whatever reason i haven’t been as strict as i should be🤷♀️it’s been a battle but i will continue to push until I get to goal. Even if it’s 1 ounce at a time it’ll get done ✅ I have pushed to hard to get here and going back isn’t an option.. you can and will do the same don’t dwell on the bad but think about the good.. know it’ll be hard and painful but it’ll be worth it in the end.. because I’ve been super busy and down doesn’t mean I will let things get out of control. I will keep myself in check and always be accountable for myself, don’t let YOU tell you otherwise because you can too 😊😊 happy #motivationalmondays

Keto Day 130 ... Maybe 50 is the new 30 now!? 🤔 Lately I can’t get over my skin! Cutting sugar, carbs and WINE did miracles for my skin and for my body! Swipe to see a side to side of my face and skin on June 10, 2018... just 3-days after starting Keto. Even my hair was looking thin and unhealthy! Fast forward 5-months and my hair and skin look a unbelievably healthy! Of course I lost a lot of fat in my face too (including my nose!) Who knew a nose could hold fat! 🤣 Anyway, even with losing fat in my face, it hasn’t fallen and I actually have fewer lines and discoloration now than before! #NoFilter

I’m not a vegan but I can’t eat meat due to the stress hormones found in animal flesh. 1 white onion, chopped
1 lb. ground beef
1 tbsp. Taco Seasoning
shredded lettuce, for serving
Chopped tomatoes, for serving
Hot sauce, for serving
DIRECTIONS Preheat oven to 350F. On a baking sheet lined with parchment paper or a silicone mat place 1/4 cup piles of cheese 2 inches apart. Press the cheese down lightly so it makes one layer. Place baking sheet in the oven and bake for 5-7 minutes or until the edges of the cheese are brown. Let the cheese cool for 2-3 minutes then lift it up and place it over the handle of a spoon or other utensil that is balanced on two cups. Let cheese cool completely then remove. While you continue to bake your cheese taco shells place the ground beef in a skillet over medium high heat cooking until it is completely cooked through. Drain the grease from the meat and then add the cumin, chili powder, onion, powder, garlic powder, and salt. Pour water into skillet and stir everything around mixing it together. Simmer for 5 minutes or until liquid has cooked away. Add meat to taco shells and top with your favorite taco toppings. -
