Cucumber/Avocado rolls. This will make a good side or snack on a warm summer day. I made them last night to go with my grilled burger. The macros for 3 rolls break down like this 259 calories, 7g protein, 6 net carbs (mostly from avocado), and 21g of fat, this is dependent on how many rolls you get from your cucumber.
1 medium sized cucumber with peel
3-4 dill pickles chopped
2 hard boiled eggs chopped
1 medium Avocado diced
2 tablespoons avocado mayo
1.5 teaspoons horseradish
Paprika and cayenne pepper to taste
Making them is easy. In a mandolin slice the cucumber lengthwise. In a good sized cucumber you should get about 12 slices or so. Take the chopped pickles, eggs, avocado, mayo, and horseradish and mix it in a bowl. Then just place a bit of it along a slice of cucumber and roll it up. Secure it with a toothpick, and season the top with paprika and bit of cayenne pepper. You can use cracked black pepper if cayenne is too spicy.

🔥BUFFALO CHICKEN QUESADILLA W/ PEPPER JACK CHEESE 🔥
Ingredients for chicken:
2 cooked chicken cutlets ( I coated mine with olive oil/salt then baked at 350 for 25-30 min)
1 tbsp mayo
1/4 cup of buffalo wing sauce
A little bit of salt and garlic powder
2tbsp of sour cream for side or ranch
Once the chicken is cooked shred the chicken and mix in all ingredients in medium size bowl.
Next, on 1 tortilla place 1 slice of pepper jack cheese in pieces on 1/2 of the tortilla. Layer with some of the Buffalo chicken mixture and top the chicken with the last slice of cheese, fold the quesadilla in half and cook in a frying pan with some olive oil over medium high heat for 3 minutes on each side or until light brown.

What a beautiful omelette🥚
Chicken, chorizo, broccoli, gouda, paprika seasoning.
Buffalo chicken salad 🐓 canned chicken, Sweet Baby Ray’s buffalo wing sauce, mayo, celery, and parmesan cheese (like from a shaker) with a side of jalapeño and garlic stuffed olives and tomatoes 🤤🤤
The truth is: we were so dedicated to the whole “keto, low-carb, no sugar” diet that it never even occurred to us to look into keto desserts! It took us 3 months and 1 Katia’s keto-converted coworker to discover the blissful land of keto treats! 😁😁
🍫This is our second batch so far, and it’s too fudgy and too good to not share the recipe with you guys! Read along!
🔸2 sticks (1 cup) of butter
🔸2 eggs at room temperature (‼️that’s important!!)
👆for these guys, you can put as much as wanted/needed
🥣HOW DO I MAKE IT?
🔹Add butter, sweetener, cocoa powder and salt to a medium heatproof bowl. Melt over a water bath whisking constantly.
🔹When all butter is melted and xylitol is dissolved completely, set the mixture aside to cool down.
🔹Add one egg at a time, whisking until the texture is completely smooth.
🔹Crumble macadamia nuts a little, and whisk them into the mixture as well.
🔹Add as much flour as needed to solidify the mixture (make sure it still pours!) and whisk it.
🔹Line your baking dish with parchment paper and pour the mixture into it.
🔹(Optional, but highly suggested) let the mixture chill in the fridge over night – that would add to the fudginess!
🔹Bake for 15-25 minutes at 350 degrees (you should start checking on them 15 minutes into it and take it out when you think the perfect level of fudginess has been reached 😊)
🔹Let the brownies cool down before trying to lift or cut them!

ZOODLE “MAC” N CHEESE 🔥🧀🔥🧀🔥🧀 .
🔸4 medium sized zucchini, spiraled using a Veggetti & then chopped
🔸1/3 of a small yellow onion, chopped
🔸1 chopped shallot
🔸1 tsp of paprika
🔸pinch of dried thyme
🔸1 stick of butter
🔸1/2 cup of heavy cream
🔸1/4 cup of Parmesan cheese
🔸2 tbsp of cream cheese (I used chive 😋)
🔸1/2 tsp of Xanthan gum (to thicken)
🔸however much cheddar/other cheeses you fuckin want.. I had a mix of cheese that I had on hand: 2 slices of Colby, 2 slices of pepper jack and 1/4 cup shredded cheddar. Make it work bisssh. 🔸salt, pepper, garlic powder, to taste 👌🏽
🔸grounded up pork rinds as the topping (optional, but bomb AF!) .
I started of by melting the stick of butter in a large pot, then adding the onions and shallots. Add in the paprika and thyme.. stir and then add the zucchini noods. Let it sauté for a few minutes then add the rest of the ingredients except for the pork rinds... add that in the end and put in the oven to get all toasty 😛 MmMmMmmm. .

Please don’t ask me for the macros cuz I honestly wasn’t going to post a recipe for this as I just threw all of this together 🤷🏽♀️ I took the time to share this recipe just for you guys as I got a lot of DMs asking me for the recipe & wanted to share cuz I love ya’ll ❤️ I hate that I have to put a disclaimer for this but I’m not strict keto at all anymore, I used to be in the beginning.. but I don’t log shit anymore. I don’t count calories. I don’t count macros. I eat intuitively and live my MF life. I eat to fuel myself and stop when I’m full. I practice intermittent fasting 18/6 and eat OMAD on most days.. but some days I don’t. I march to the beat of my own drum and do keto MY way. And guess what, I feel amazing inside and out & that’s all I’ve ever wanted for myself.
