・・・ Almost No Carb Philly Cheesesteaks 😍 --- INGREDIENTS (4 servings)
2 tbsp. olive oil, divided
1 large onion, thinly sliced
2 large bell peppers, thinly sliced
1 tsp. dried oregano
Freshly ground black pepper
1 lb. skirt steak, thinly sliced
1 c. shredded provolone
8 large butterhead lettuce leaves
1 tbsp. chopped parsley
Heat 1 tablespoon of oil in a large skillet over medium heat, then add onion and bell peppers. Season with oregano, salt and pepper. Cook, stirring often, until the onions and peppers are tender, about 5 minutes. Remove peppers and onions from skillet and heat remaining oil in skillet.
Add steak in a single layer and season with salt and pepper. Cook until the steak is seared on one side, about 2 minutes. Flip and cook until the steak seared on the second side and is cooked to your liking, about 2 minutes more for medium.
Add onion mixture back to skillet and toss to combine. Sprinkle provolone over steak and onions then cover skillet with a tight-fitting lid and cook until the cheese has melted, about 1 minute. Remove from heat.
Arrange lettuce on a serving platter. Scoop steak mixture onto each piece of lettuce. Garnish with parsley and serve warm.

Lasagna Recipe -with homemade meat sauce, and lots of cheese. This is the my best low carb , gluten free lasagna recipe! I made i with two types ( cups & rolls) .
* 4 large zucchini
* 16 oz ground beef * 1/2 cup onion chopped * 15 oz ricotta cheese
* 1/4 cup Parmesan cheese grated
* 1 cup Spinach * 2 Tbsp Jalapeño chopped * 1 1/2 cups mozzarella cheese shredded * 1 large egg
* 1/2 cups marinara home-made or Rao’s sauce * salt & pepper to taste
* 1 tablespoon avocado oil
1. In a large skillet over medium-high heat, combine ground beef, onion, olive oil,peppers and your spices. Cook until the meat is browned.Brown ground beef in pan and add marinara. Season well with salt and pepper
2. mix the ricotta cheese, parmesan cheese, 1 egg, and salt , pepper, garlic & onion powder to taste. Stir just until combined, transfer it to food processor and add jalapeños and spinach and mix it til creamy ( this combination make your lasagna so delicious)
3. In a 9x13 casserole dish, spread some homemade tomato sauce on the bottom.
4. Cut 3 to 4 large zucchini into 1/8-inch slices. spread 1 1/2 tablespoons ricotta filling onto each of the 5 zucchini slices. And mix ground beef and mozzarella cheese
5. Roll each slice place in baking dish. Repeat with remaining zucchini slices and filling.
6. sprinkle with 1 to 2 cups shredded mozzarella cheese (4 to 8 oz). Top with 1/4 cup grated Parmesan cheese.you can Spread remaining marinara sauce evenly over tops of zucchini rolls
7. Heat oven to 375°F.Bake about 30 minutes or until golden and bubbly. Let stand 10 minutes before serving.
Note: for making lasagna cups Place a circle slice of zucchini in each cup. Then add one or two long slices around the sides of the muffin cups.Add a pinch of mozzarella cheese in each zucchini cup.
Next a spoonful ricotta mixture and then a spoon of meat sauce.Add another round slice of zucchini.(swipe pictures to see how to make a zucchini cup)

Keto is something that a lot of people are talking about at the minute. Here’s our quick-ish breakdown of what keto actually is and whether it’s right for you. The one thing you have to remember too is that for it properly work you have to maintain a level of ketosis which means treating yourself to some carby goodness is going to knock you out of ketosis and you won’t see the full benefits. You can actually get strips to wee on to check you’re still in ketosis!

SOUTHERN STYLE GREEN BEANS are what I grew up eating. And look at that, they are low in carbs! The green beans are tender and topped with crunchy bacon. This dish is a staple for the Thanksgiving table.
I cooked these using my Instant Pot. If you don’t have one you can simmer the ingredients in a large pot for 1.5 - 2 hours.

4 slices uncooked bacon sliced into small pieces
1 cup chopped white onion
2 garlic cloves minced
1 pound fresh green beans stems removed
1 cup chicken broth
1 teaspoon Better Than Bouillon Chicken Flavor
salt and pepper to taste I go light on the salt because the bacon and broth provide plenty of flavor for me.
1 slice cooked and crumbled bacon optional
Turn the Instant Pot on the sautee function. Add the 4 slices of uncooked bacon. Cook for 3-4 minutes until the bacon crisps.
Drain the excess fat from the Instant Pot. I reserved about a teaspoon of fat in the pot.
Add the onions and garlic. Cook for 1-2 minutes until fragrant.
Add the chicken broth and deglaze the pot with a spatula. Scrap up all the bits of cooked bacon in the pot.
Add the Better than Bouillon, green beans, salt and pepper to taste. Stir.
Cook for 15 minutes on Manual > High Pressure Cooking.
When the pot indicates it has finished, quick release the steam.
Serve the green beans with additional crumbled bacon sprinkled throughout.

I have pumpkin walnut bread, some sour gummies, and granola I made this week. Zero carb bagels with ham. Salad, veggies. Wednesday is salmon and Friday is chicken thighs. 😍
Veggies are mushrooms, green beans, broccoli, zucchini, and yellow squash cooked in bacon grease, Frank's and alfredo sauce. 😍😍 My food for the next 3 days, besides fat bombs, protein shakes and coffees.

Week 7➡️Back & Waist progress. Believe or not, this is the first time in 7 weeks I looked at my back. I asked Ryan to take a quick picture of it today just to see what it looked like. When he handed me the phone to look at the picture, I was shocked.😳 ”Is that my back?!” I asked. It’s always been a struggle for me to build my back muscles. It still is. While my baby back muscles are growing, my waist is shrinking. These pants fit perfectly in week 1 and are definitely loose now. So many changes are happening and it’s been a whirlwind of emotions to see it all. It isn’t easy by any means (my body is beat) and everyday is a battle of the mind but I know for a fact it’s absolutely worth it. If you want to catch up on the series the link is in my bio! P.S.
