Well today marks my 39th birthday and I have to say I’m feeling pretty fucking good about it ... I feel like I’m finally at a place in my life where I’m free to become the best version of myself ... I feel the fire and passion coming back and it’s coursing through my veins ... ok maybe that’s a little over dramatic but it honestly feels like for once I’m not standing in my own way of succeeding ... I’m not saying in anyway that my life is perfect, that my family doesn’t fight or argue, that I’m living a dream life, or that I’m always a ray of sunshine ... the difference now is how I choose to see things, how I interpret it, and how I choose to react to situations/people/myself ... I’ve grown so much over the last year and while some of that has to do with just growing up I also believe the mental clarity I get from #keto
has had a major impact on me ... #ketoclarity

, which I continue to do on a regular basis ... For The Chicken:
2 large boneless and skinless chicken breasts , halved horizontally to make 4 filets
2 heaping tablespoons flour (all purpose or plain)
3 tablespoons finely grated fresh Parmesan cheese
1 teaspoon salt
For The Sauce:
1 tablespoon olive oil
2 teaspoons butter (or sub with oil)
8- ounces | 250 grams bacon , trimmed of fat and cut into strips (I use shortcut bacon in Australia)
1 small onion , chopped
6 large cloves garlic , minced or finely chopped
1-1/2 cups half and half (or use reduced fat cream or evaporated milk)* 1/2 cup finely grated fresh Parmesan cheese
1/2 teaspoon cornstarch (cornflour) mixed with 2 teaspoons of water
Season the chicken with salt and pepper. In a shallow bowl, combine the flour and parmesan cheese. Dredge seasoned chicken in the flour mixture; shake off excess and set aside.
Heat the oil and butter in a large non stick pan or well-seasoned cast iron skillet over medium-high heat until butter has melted and pan is hot. Fry the chicken until golden on each side, cooked through and no longer pink (about 4-5 minutes per side, depending on the thickness of your chicken). Transfer onto a warm plate.
Add the bacon strips to the pan and fry until crispy. Drain off some excess fat, keeping about 1 teaspoons worth in the pan. Add the onion and garlic and fry until onion is transparent (about 1 minute). Reduce heat to low heat, and add the half and half (or cream). Bring the sauce to a gentle simmer; season with a little salt and pepper to your taste. Add in the parmesan cheese, and allow the sauce to simmer until the parmesan cheese has melted slightly. (If the sauce is too runny for your liking, add the cornstarch/water mixture into the centre of the pan and mix through fast to combine into the sauce. It will begin to thicken immediately). Add the chicken back into the pan to serve.
Serve with steamed vegetables (broccoli and/or cauliflower work best), over zucchini noodles, your favourite pasta, or rice.

● 2 tablespoons coconut flour
● 2 tablespoons unsweetened cocoa powder
● 2 tablespoons Swerve confectioners
● 1⁄4 teaspoon baking powder
● 2 large eggs
● 2 tablespoons melted butter
● 2 tablespoons unsweetened almond milk
1. In a bowl mix together the coconut flour, unsweetened cocoa powder, Swerve confectioners, and baking powder.
2. Add the two large eggs, melted butter, and almond milk to the dry ingredients. Mix together.
3. Add the cake batter to a greased coffee mug. You'll need one that holds at least 12 ounces.
4. Cook the mug in the microwave for about 2 minutes. Cooking time may vary with your microwave. Usually I know it's done when the cake starts puffing up over the top of the mug.
5. Remove the finished cake from the mug and slice in half to serve.

● 1 medium head lettuce, chopped
● 1 medium red pepper, chopped
● 1 medium yellow pepper, chopped
● 2 large (12-ounce each) salmon filets
● 4 tablespoons olive oil
● 1 teaspoons sesame oil
● 2 tablespoons coconut aminos
● 1⁄4 cup green onions, chopped
● 4 tablespoons olive oil
● 1 teaspoon sesame oil
● 5 tablespoons coconut aminos ●
1. Heat up the 3⁄4 of the olive oil for the salad in a pan over medium heat. Add the sesame oil, coconut oil, and liquid aminos.
2. If needed, cut your salmon into smaller pieces. (I halved both filets to make 4 pieces)
3. Place your salmon in the pan and let it cook for 5-7 minutes.
4. Flip them over and continue to cook for an additional 5 minutes. They
should be a light pink to white color on the inside once they are done.

🌶Lower carb/beanless Chili for dinner tonight... I wasn’t always the biggest fan of Chili but once we started making it without beans and add toppings like lettuce, cilantro and avocado on top, I’ve been loving it...
This is our simple recipe👇🏼
•Brown Ground Beef
•Add 2-3 cloves crushed garlic, 1 white onion & 3-4 stalks celery... sauté
•Add 1 Red and Green Pepper... sauté
•Minced Jalepeno (wash out seeds)
•1 can crushed tomatoes (14oz?)
•1-2 cups Beef Broth
•2-3 Tbsp Chili Powder & 1-2 tsp Cumin & Seasoning Salt
~Bring to boil then simmer for 1 hour
Some topping ideas are... shredded cheese, sour cream, shredded lettuce, avocado, cilantro. Enjoy!👌🏼
It's all fun and games til you have 3 kids, and the postpartum abs to prove it 😂. But here's the thing. These 3 are my "why". I am trying my hardest for THEM every day. And at the end of the day they just want a healthy, happy momma, that still has the energy to do their home reading with them, or play peekaboo, or talk about Fortnite for the 1 billionth time. Yes...3 kids is BUSY, and tiring, and hectic, and madness at times! But I wouldn't have it any other way (so cliché I know). For me it's making the time to go for a run, or eat the kind of foods that give me the most energy possible, and don't drag me down ...that's how I sustain my sanity and healthy mindset! Today I have been on keto for 6 months. As of this morning I am down a total of 36 pounds(I've gone up and down the past 2 months due to bad choices 😫.) What I have gained from this loss is amazing! It’s here! The day has come! Weigh In, Medical Release, Before and Afters. 21 days before the New Year!!! Seriously perfect timing for me to do a little challenge so I can get on track and not be a resolutioner!! A few details: At birth, I weighed 180 lbs. today at my OB appointment for my six week follow up, I weighed in at 155. The pictures on the left were taken one week post partum. Pictures on the right were taken today.
As someone who has suffered with body image issues and a terrible relationship with food in the past. I made a conscious effort and I have worked really hard to focus solely on eating healthy Whole Foods, drinking enough water, and nursing Eli the last six weeks. I haven’t weighed myself, cut food groups completely, or exercised (except for the few walks I took Griffin on.) Do I look ok? Sure. But my fitness journey has morphed into something far beyond looks over the last year and a half to two years. It is first and foremost about my mental health and well-being. Because I try to manage my bipolar without medication, I have to take extreme care of myself in order to keep myself grounded and my moods level. I am so proud of myself and my progress. I look at these pictures and I marvel over how this body, gave me both of my boys. It built them, and birthed them. It was capable of far more than I ever gave it credit for. And if this body was able to do all of that, well, Let’s just say I am thrilled and in awe. And I can’t wait to finally hit the gym, and start training for my half marathon. I’ve talked about it for years. But this, my 28th year. I am determined to run a half marathon.
I can’t and I won’t compare my body to any celebrity’s. I choose to move and love, and honor it instead. I choose not to compare it to unrealistic ideals. And please, fellow moms, do not compare yourselves to me either. Every body reacts differently to pregnancy and post partum. My body is soft now in places it used to be firm. It will take time to get back to where it was and to get it where I want to be. But in the mean time I will honor And love this body and all that it has given me.
Today was a sprint! Once I got home I just wanted to relax...didn’t take a pic of my egg loaf for breakfast because I was hungry 😋Lunch was leftover rotisserie chicken Caesar edition, ham/pickle/cream cheese roll ups 🙌🏼 dinner was super simple...meat/cheese mayo rolled up!

You either wake up with the intention of slaying the day and literally checking off every box.
Or you realize your toddler has the stomach ache and throwing up.
So instead, you just breathe and put on your cape.
You both slow down together and do absolutely nothing but eat cozy Keto foods, sip on cozy fatty coffee (ok just me...he slept a lot), and make DIY ornaments out of your neighbor's oranges.
Recipe for Keto Pumpkin Bread
(This is probably the last pumpkin recipe I share bc the obsession is a bit ridiculous)
1/2 cup butter softened
2/3 cup erythritol sweetener
4 eggs large
3/4 cup pumpkin puree
1 tsp vanilla extract
1 1/2 cup almond flour
1/2 cup coconut flour
4 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/8 tsp cloves
1/2 tsp salt
Preheat the oven to 350°F. Grease a 9"x5" loaf pan, and line with parchment paper.
In a large mixing bowl, cream the butter and sweetener together until light and fluffy.
Add the eggs, one at a time, and mix well to combine.
Add the pumpkin puree and vanilla, and mix well to combine.
In a separate bowl, stir together the almond flour, coconut flour, baking powder, cinnamon, nutmeg, ginger, cloves, salt.
Add the dry ingredients to the wet ingredients, and stir to combine.
Pour the batter into the prepared loaf pan. Bake for 50- 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
