When I made chicken pizza crust for first time I used ground chicken and to be honest it wasn't that great, even tho I used a ton of spices to make it tastier. I know that lot of people using canned chicken, which I can't find it here but even if I could 🤢 So last night I baked some boneless chicken thighs I had with olive oil, lemon, mustard, salt, pepper and oregano. Today I put them in a food processor and blended them til become super small pieces. Mixed it with mozzarella and one egg, baked it til golden brown and then added my toppings which were: mushrooms, bacon, red onions, tomato, red pepper and the sauce was heavy cream with cream cheese. For the pizza crust:
2 tablespoons organic cream cheese full-fat
1 ½ organic mozzarella cheesewhole milk
⅓ cup coconut flour
2 large eggs
For the toppings:
¼ cup sugar-free marinara sauce
½ cup organic mozzarella cheesewhole milk
8 slices pepperoni uncured
To make the pizza crust:
Preheat oven to 425°F. Line a baking sheet with parchment paper. (Do not substitute for tin foil as dough will stick.) Add 1 ½ cups mozzarella cheese and 2 tablespoons cream cheese to a microwave safe, medium size bowl. Microwave on medium heat for 90 seconds, stirring the ingredients in the bowl halfway through to properly melt all ingredients.
Stir in coconut flour and 2 large eggs into the bowl and mix thoroughly with a fork. Knead with your hands until mixture becomes dough, about 2 minutes.
With your hands spread the dough on the baking sheet, creating a round shape giving the crust about ¼-inch thickness.
Using a fork, poke holes into crust all over multiple times to avoid bubbles.
Bake for 10 minutes.
To assemble the pizza:
Spread ¼ cup sugar-free marinara sauce onto the crust creating an even layer.
Sprinkle the remaining ½ cup of mozzarella cheese onto the pizza.
Place 8 slices of pepperoni evenly.
Return the pizza back to the oven for 10 more minutes or until the crust edges and cheese toppings are golden brown

Or whatever toppings you like! 375 for about 45 minutes or until cooked through. You can stuff with asparagus too which is one of my favorite things ever! Toddler and baby approved. 👊

Cook the chicken with salt and pepper after is done cooking let it cool down then put it into the food processor add parmesan and eggs till everything is well blended,you can add any seasoning of your choice.
Put it on a parchment paper and cook it at 450 for about 5 to 8 minutes!! After that add your toppings and cook it till the cheese is melted or golden,enjoy!! Macros for 1 slice 130 grams are: 160 calories 1 Net carb. 8 G Fat. 20 G protein. ➡️These macros are only for the crust by itself without any toppings⬅️‼️
Pizza craving in the house tonight 🍕 This is one of my favorite craving buster meals. Pizza chicken!
1 lb of chicken tenders
1 tablespoon butter
1 teaspoon garlic salt
1.5 cups sauce
1 cup shredded mozzarella (or to your preference)
1 tablespoon grated Parmesan
In a copper grilling skillet (favorite way to cook tenders🙌🏽) melt butter and add chicken. Sprinkle each side with garlic salt.
Cook all the way through.
While my chicken was cooking I blended my sauce with my immersion blenders food processor attachment. This was a new sauce and while it's delicious and super low carb (5 carbs per 1/2 cup) it came with whole cherry tomatoes in it 🤔
After chicken is cooked transfer into baking pan and top with sauce, cheese, pepperoni, and sprinkle Parmesan on top.
Place under the broiler for 4-5 minutes, and you're done!
I served mine with some garlic and herb cauliflower / broccoli.
This recipe makes about 5 servings and is approximately 3 carbs per serving with just the chicken. The total macros on this for my plate is approximately
6 net carbs

Didn’t want to cook tonight so I made a little 🍕 and side 🥗. I used Joseph’s pita bread for my crust. I’m at my carb limit for the day so I’ll start my 16 hour fast now. You can swipe for the bread and marinara I used. It makes the perfect little pizza!
