What have we here? Fathead Sausage Pizza Bites. As Leslie Knope once said: “I’m big enough to admit that I am often inspired by myself.” 😂 I was thinking after my pizza egg muffins last night that I’d like to make muffin sized Fathead pizzas. They came out ah-may-zing. And I burned the roof of my mouth on one, just like real pizza! 😍😍😍 RECIPE:
Preheat oven to 400F.
Make a batch of Fathead pizza dough. Pop 1.5 cups of mozzarella and 2oz of cream cheese in the microwave for a minute, then mix well. Mix in an egg and 3/4 cup of almond flour. I added 1/4 tsp of garlic powder and a pinch of Italian seasoning to the mix.
Grease a muffin tin. Press dough into tin so it’s kind of cup shaped. Bake for about 7 minutes.
When the crusts are starting to get brown around the edges, take them out of the oven and add your pizza toppings. I used 1 tbsp Guys sugar free BBQ sauce, 1/3oz mozzarella cheese, and 1/2 maple sausage patty. Bake for another 10 minutes or until your cheese is perfectly melty.
Macros (for one pizza bite): 285 calories, 4g net carbs, 23g fat, 18g protein. #ketofriendly

LOW CARB STUFFED AVOCADOS
1 medium avocado
6 ounces Mexican shredded chicken
2 ounces Queso Fresco
Preheat oven to 350 degrees.
Cut a ripe avocado in half and remove seed.
Pack as much shredded chicken into each half as possible.
Top with crumbled Queso Fresco. Bake for 20 minutes. Enjoy!

You've probably heard of fathead dough, if not it's super easy to find online and it takes just a few ingredients & is delish 😋 The first few pics are my pizza! And you'll see there's not much of a size difference between mine (homemade) and Kelson's (cauliflower, last pic) but a huge nutrition difference. 😱
This is just an example of reading your labels and staying committed. 16 net carbs for ONE SLICE of the TJ's cauliflower crust because it's made with corn flour and potato starch as well. I'm a huge TJ fan and drive an hour once a month just to shop there, but just because it sounds good doesn't always mean it is. Not that this is bad for you, it just doesn't fit my goals right now. 👎🏼
The old me would've just been like what the heck, I don't care, I don't want to cook, it's just one night, it's still better than regular dough. But I have goals and am not willing to give in so easily just because I don't want to spend and extra 10 minutes on a dough that fits my macros. 💪🏼 My appetite is totally shrinking so I only at like 1/3 of this, but I could've eaten my entire pizza for around 8 net carbs with sauce and everything; whereas, the other would've cost me nearly my entire day's worth of carbs in one slice after toppings. 🤔🚫
Our health is truly worth the extra work and time. Set goals & do what it takes to achieve them. Find what works for you and your balance. I'm 14lbs down from my highest weight and truly feel better and more motivated than I ever have. No end in sight 😎

Nothing fancy about this one. Just a work dinner. I had initially brought a salad but didn’t feel like eating all that volume. I ate both half’s of the avocado stuffed with pulled pork from Sam’s Club. It was delicious and filling ☺️

Onion Ring Day
1 large onion, sliced into 1/2” thick rings
1 tbsp heavy whipping cream
1/2 cup crushed pork rinds
1/2 cup almond flour
1/2 packet Keto Thyme BETTER//BROTH™
1 tbsp paprika
1/4 tsp Cayenne pepper
Beat together eggs and heavy whipping cream in a bowl.
In a separate bowl, combine almond flour and spices, and Keto Thyme BETTER/BROTH™. Place crushed pork rinds in a third bowl.
Dip onion ring in egg, then press into almond flour mixture coating all sides. Dip flour coated onion ring into egg mixture again, then press into pork rinds.
Place on a parchment lined baking sheet and bake at 425F for 10 minutes.
Turn over onion rings and continue to bake another 10 minutes, or until golden brown.

GARLIC BUTTER MEATBALLS WITH LEMON ZUCCHINI NOODLES 😋🔥🍽
🧀 Cheesy turkey and pork meatballs melt in your mouth. 🤤
* Pork allows the meatballs to be extra juicy. If you don’t eat pork, double the ground turkey.
* 1/2 lb (220g) ground turkey meat
* 1/2 lb (220g) ground pork meat (optional, see recipe notes)
* 1/2 cup shredded cheese of your choice (mozzarella, cheddar, provolone…)
* 4 cloves garlic, grated + 2 cloves garlic, minced
* 1 teaspoon Italian seasoning
* 1/2 teaspoon red crushed chili pepper flakes, optional
* Salt and fresh cracked black pepper
* 1 cup fresh chopped cilantro (or parsley)
* 3 tablespoons butter
* 4 medium zucchini, spiralized
* Juice of 1/2 lemon
* 1 tablespoon hot sauce of your choice (we used Sriracha)
1. In a large bowl, combine ground turkey and ground pork, cheese, grated garlic, Italian seasoning, bouillon cube, red chili pepper flakes, chopped cilantro and black pepper. Mix well with your hands or fork and form medium balls. Arrange on a plate and set aside.
2. Melt 2 tablespoons butter in a large skillet over medium-low heat. Cook the meatballs for 8–10 minutes on all sides, until browned and cooked through. While cooking, baste the meatballs with the mix of butter and juices. Remove to a plate and set aside
3. In the same skillet melt remaining tablespoon butter; add lemon juice, hot sauce, minced garlic, and red pepper flakes. Add zucchini noodles and cook for 3 or 4 minutes, stirring regularly, until zucchini is done but still crisp and juices have reduced a bit. Seasoning with salt and pepper and garnish with more cilantro or parsley if you like.
4. Push zucchini on one side of the skillet and add the meatballs back to the pan and reheat for a minute or two. Serve immediately with a lemon slice on the side. Enjoy!

Primal Chicken Parm Stack .
preheat oven at 350. .
6oz chicken breast, butterflied
s&p, sprinkled on
garlic, sprinkled on
chili powder, sprinkled on
lay chicken close together on baking sheet and sprinkle with seasonings. Bake for 10 minutes. .
Remove from oven and layer on the following:
1 sliced mushroom
3oz classico tomato basil sauce

🍴EASY Baked meatballs🍝
- 1lbs ground beef
- 1/4C grated Parmesan
- 1/4C heavy whipping cream
- 1 large egg, beaten
- 2tbsp parsley
- 1tbsp minced onion
- 1 clove garlic, finely chopped
- 1/2tsp salt
- 1/4tsp pepper
- Preheat oven to 400°F and line a baking sheet with aluminum foil
- Mix all dry ingredients together. Add heavy cream and stir well.
- Add beef to mixture and combine throughly - Lightly oil hands and roll meat into 12 balls. Try to make similar in size for even cooking
- Bake for approximately 20 minutes
- Sprinkle mozzarella on top and broil for a few minutes until cheese turns golden brown
A coworker of mine & I challenged ourselves to a scroll-free weekend. AKA severely limiting our time on social media! We both had discussed & decided we spent way too much time mindlessly scrolling while we could be doing other (probably much more productive) things.
I cleaned my whole house - top to bottom. You know, the kind of cleaning where you pull out the stove & fridge, and wash all the linens too. 😉 I, also, made another batch of zucchini muffins and started watching A Handmaid’s Tale. So 🤷🏻♀️💁🏻♀️ who knows what would’ve gotten accomplished had I kept my nose in my phone instead.
I have decided I am going to make more of an effort to be “scroll-free.” I don’t mind when I am alone AKA in the morning when I sip my coffee, or on my lunch break, but when I am with family - I am going to keep my phone out of sight/out of mind.

I NEED SOME HELP!!! Philly Cheese Meatloaf 😲😲😲 Oh My!! This was so yummy y'all. For those of you who have been doing this a while, I need your advice/opinion. How in the heck do you stay under or at your daily protein?!?!?! This meatloaf made 6 servings and if I were to have a piece for lunch and a piece for dinner, i would be at my allotted protein for the day. That doesnt include the eggs that I had as part of my breakfast recipe. I know a lot of people say with time you will stop eating three times a day, but what the heck do I do until then?
