Omelette: 4 eggs, 4 slices of white deli american cheese, spinach, a leftover burger, and some homemade hot turkey Italian sausage. . Now, real talk: Made myself this giant omelette this morning because I am just so done with everything right now and I needed to eat something the size of my head. Living with #pmdd means a solid week or more of my month is complete dysophoric garbage. I tried to start another extended fast today but just can't. Luckily I've lived through this enough times that I know in a few more days I'll be happy again and have ALL THE ENERGY and be able to do ALL THE THINGS! But for now, I eat like a bear and hibernate and try to at least be a semi-decent human being to my family until the storm passes. The trick is to keep the eating lower carb and full of micronutrients, which is a challenge in itself right now because I just want to eat cookies and die *deep breath*. "This too shall pass" and I'll be back on point in a couple of days 👌. Wish me luck and send all the prayers and good juju you can 💚💚 . Finally figuring out how to keep the other 2-3 weeks of my month in check has been one of the major keys to my success this year, and was a huge struggle to learn, but I'm happy to say that a few lbs up on the scale no longer scares me because when I'm feeling better (which I know I will be) those lbs and then some will take care of themselves.
yum yummy yum!!! sooo good!! Jalapeno Popper Wontons Ingredients: (I just look for the lowest carb wontons wrappers) 1 package refrigerated square wonton wrappers 1 8-ounce package cream cheese, softened 3 jalapenos, seeds and ribs removed, finely chopped 1/2 cup shredded cheddar cheese Vegetable oil for frying Coarse salt Directions: 1.) In a bowl, combine cream cheese, jalapenos, and cheddar cheese. Arrange wontons in a single layer on a baking sheet. 2. ) Add 1 teaspoon of the filling to the center of each wonton (don't overfill them). 3.) Dip your fingers in a bowl of water and run your wet fingers around all edges of each wonton. 4.) Fold the wontons over the filling, pinching the edges to seal to make a triangle and removing any air bubbles. 5.) Fry wontons in batches in hot oil until browned and crispy. 6.) Drain on paper towels and sprinkle with coarse salt. Serve warm.
This is my Caramelized Onion Tart and it’s probably the best thing I’ve ever made on keto. Holy cow, this is so tasty! It is definitely time consuming, so only try it if you’re in the mood to cook! Recipe below! ________________________________________________ ________________________________________________ Fathead Pizza Dough: 1 1/2 Cups of shredded mozzarella 3/4 Cup of almond flour 2 TBSP of cream cheese 1 egg Garlic Powder, onion powder, or any other desired seasonings -Put mozzarella and cream cheese in a medium sized bowl and microwave for 1 minute. Stir, then microwave another 30 seconds. -Stir in egg and almond flour -Wet hands and spread dough on a baking sheet lined with parchment paper. Spread thin. -Poke holes with a fork to avoid bubbling -Sprinkle dough with garlic and onion powder (and anything else that sounds good). -Bake at 425 degrees for 14 minutes, or until slightly brown on top. ________________________________________________ ________________________________________________ How to make Caramelized Onions: -Thinly slice 1-2 onions -Place in a pan with 3-4 TBSP of butter (or more) -Add salt, pepper, a few splashes of balsamic vinegar, and a pinch of stevia. -Let the onions cook for about 30 minutes, stirring often so that they caramelize and not burn. ________________________________________________ ________________________________________________ To assemble: Spread a layer of cheese on the cooked dough. I used mozzarella and brie. (Please use Brie, it’s so good.) Add the caramelized onions. Bake for another 5 mins to melt the cheeses. So I've been a little MIA. Personal life issues mixed with a migraine = disaster. I haven't been eating properly either, I've had no appetite. I had to force myself to eat and it was basically some @suziesgoodfats bars once a day and maybe a few deli and cheese slices. That's it. Stress (and in my case PTSD) is absolutely awful for the body. . . This was my first meal of the day today and the first real food I put into my body the last few days. So that’s basically keto meal prep done again for a couple of days. It's official I'm 60 pounds down!!!! At the end of 2017 I weighed 215 pounds. I never thought I'd really being seeing this number again. I've lost and gained weight all my life. The only diet I've been able to sustain is the #ketodiet . I don't ever feel hungry or like I'm depriving myself. I have my occasional cheat meal. Not Day, just one meal.
