Protein shake for my first meal of the day! Fasted from last night at about 9pm until now at 4:50pm Before starting keto I wondered what I could do for a protein shake. I used to use vanilla soy milk and various protein powders, but the soy milk is sweetened so there are extra carbs. I still have a case of soy milk from Costco and I will be finishing it even though it’s a higher carb milk. I found that unsweetened coconut milk is great for protein shakes and is low carb! To give it a creamier consistency I add a splash of heavy cream! 😍The @vitaminshoppe body tech powders are low carb and only have 1g sugar per serving! They have a variety of flavors and I really like the rich chocolate and strawberry flavors 😍 still have other flavors I’m going to try! Jalapeño popper chicken bake... wow! Sooo good. Recipe below. #keto #jalapenos #jalapenopoppers #bacon Ingredients: •2 lbs chicken; cooked & chopped •8 oz cream cheese •1/2 cup sour cream •1/2 cup mayo •1/2 cup shredded cheddar •1/2 cup jalapeños; chopped •1/3 cup bacon bits •1 tsp garlic •1/2 tsp salt Directions: -Preheat oven to 350 -Mix all of the ingredients together (except the chicken) -Once the chicken is cooked, add it to the mixture; mix well -Scoop into greased casserole dish -Top with extra shredded cheddar cheese, bacon bits and cut jalapeños -Bake for 30 min or until bubbly
Easy Cheesey Chicken Enchilada Soup - This soup is so easy to make, there’s not even a real recipe for it. Every ingredient I add is to my liking, aka no real measuring necessary. - Ingredients: 2 Tablespoons Butter Onion (I used yellow and about ¼ of one) 2 Cups water (start with ¼ cup, then add more until soup is thin enough) Chopped Chicken 1 can Red Enchilada Sauce 1 can Cream of Chicken soup 8 oz Cream Cheese Shredded Cheese (I used Cheddar and a Mexican blend, about 1 ½ cups) Green Chilis (or whatever kind you prefer, I used about ¾ cups, with seeds) Salt - 1. Cook onions with butter until translucent. 2. Add chilis and ¼ c of water. Let simmer for about 5 minutes. 3. Add in chopped chicken and enchilada sauce. Let simmer another 5 minutes. 4. Add in cream of chicken, cheese and cream cheese. 5. Add in any more water until you reach your desired soup thin-ness. 6. Add in salt and any other spices you desire. I used fresh green chilis with lots of seeds, so no other spices besides salt was needed for my soup 👌🏼. - Soup will continue to thicken as it’s left simmering on the stove, just add water (¼ cup at a time) if you need it to be thinner. - Let me know what you think!
One month in and I’m down 7.9 lbs. This is coming off a LOT slower than it has on #keto in the past, so I’m going to try some tweaks for the next month. 1) Be more strict in my intermittent fasting. 2) Limit alcohol. 3) Limit my snacks (this month I’ve been on a huge cheese and salami kick and it’s way too easy to eat too much of that!) 4) Find some way to get in at least 30 minutes of exercise even on my worst pain days. As someone who has taken close to 6 yrs to lose almost 100 lbs, I have a lot of appreciation for this analogy. . I see people get down on themselves because they only lost 2 lbs in the previous month. When I first started this process years ago, I once had a plateau that lasted over 6 months. Maybe if I knew then what I know now, I could have broken the stall sooner. However, I lost 2 pant sizes and 1 shirt size in that time. I still wouldn't trade this journey for anything. . Taken a back with these side by sides. The photo on the left was right before we started keto, and the right was from yesterday. I feel like these last couple of weeks I’ve seen such an increase in the inches coming off! I just hope that this post reaches someone who may be having a hard time with keto! So I can tell you that this is a maintainable lifestyle to have, with the right mindset. Your body won’t go where your mind doesn’t push it. And we’ve learned that it really is discipline over motivation. I haven’t had that many cheat meals since starting Keto, but will admit there have been some close calls. It’s staying consistent that’s gotten me to where I am today.I can’t see myself stopping with this way of eating. I mean why would I? Strength, Stamina, confidence, feeling happy and healthy! New phone...who dis? Um...if I can make this 'amazing looking basically work of art and the prettiest thing I've ever made', then anyone can! I'm not good at baking and routinely have to throw away stuff I've baked, because it's gross. Not this time my friends! I'm officially a grown up! I got this silicone mold thingy at TJ Max when I was roaming its magical isles one blessed night. I was getting some major looks from my kids' Halloween candy last night, so I said 'no way Jose' and decided to bake something quick myself. Instead of making my usual Double Chocolate Flourless goodness in Brownie form, I decided to shove the batter into the above mentioned silicone tray thingy and magic!!!! Who wants the recipe? One bowl, everything gets mixed at once and then poured and baked in receptacle of choice. Also, poured some ganache (just Lilly's chocolate chips with HWC melted in the microwave) over these adorable mini bundt cakes and topped with chopped hazelnuts. Baller!
How about a wrap for lunch? These low carb (5 net carbs) spinach & herbs tortillas stuffed with your favorite veggies and cheese are great for a satisfying lunch!
Garnish with lime, cilantro, onion and green salsa this #birria tastes better by the second, the only thing there is left is the broth, not to worry I will figure something for tomorrow’s breakfast 😉 #siempretengohambre #amocomer

Ingredients: Base 3/4 Cup Almond Meal 3 Tbsp Melted Butter Filling 1 Sachet Strawberry Jelly Lite 1/2 Cup Thickened Cream 100g Cream Cheese 1 Tbsp Boiling Water 👉 Recipe by: @ketoguidesydney Method: 1. Pre Heat Oven to 150 degrees Celsius (fan forced) 2. Dissolve the Jelly Lite Sachet in a separate mug - using your 1 Tbsp boiling water (set it aside to cool) 3. Combine your Almond Meal and Melted butter - compress at a height of 1cm into small baking tin (I used the mini loaf silicone tray - it filled 3 loaf compartments) 4. Place your tray in the oven for 15mins 5. Combine your Cream Cheese & Thickened Cream using a mixer - mix til smooth & creamy! 6. Add displaced Jelly Lite gel to mixture & mix for another minute! 7. Feel free to taste the filling / it makes an amazing mousse! 8. Add mixture to trays (top your bases!) 9. When I started this journey I set 4 goals. #1 was to get under 200 pounds, #2 was to get to 175. I crossed that mark today and was honestly super surprised since I’ve been way less strict this month due to weddings, food & wine festivals, and birthdays. My next goal (#3 ) is to get to 164, which is what would put my BMI under 25 and into the normal weight range. Final goal is to hit my goal weight of 150. Not sure when I’ll achieve either of those but I’m excited to keep working at it. . . . . I’m also going to try to share more of my daily routine and eating habits. Just an accountability post 🤗 I normally weigh in Wednesday’s, that’s no secret. But we had a cheat weekend, which was planned. NO REGERTS 👏🏼👏🏼 We went to the fair yesterday and had all the amazing, greasy, deep fried, carby, sugary foods! Today I’m up to 202.6, and have officially started out #Ketogivings with a 24 hour fast and will be breaking that fast with dinner! • One of my goals is to get back to my Keto low, and that’s 191.4, I’m currently 202.6, which puts me at 11.2lbs to lose! But we got this! • Meal PLANNED for the week!
