Tonight's dinner - keto chicken pot pie - was 💯 a labour of love!
It's a lot of steps, but in the end was worth the effort. It kind of comes out like a cross between chicken a la king & a pot pie.
Each servings is only 5.4g net carbs! 346 calories, 18.6g fat and 35.4 protein. The perfect comfort food.

Keto Garlic Butter Meatballs --- ❤

INGREDIENTS (4 SERVINGS)
1 lb. ground chicken
5 garlic cloves, minced and divided
1 egg, beaten
1/2 c. grated Parmesan, plus more for garnish
2 tbsp. freshly chopped parsley
1/4 tsp. red pepper flakes
Freshly ground black pepper
2 tbsp. extra-virgin olive oil
4 tbsp. butter
Juice of 1/2 a lemon
1 lb. zoodles
1. In a large bowl mix together ground chicken, 2 garlic cloves, egg, parmesan, parsley, and red pepper flakes. Season with salt and pepper then form into tablespoon sized meatballs.
2. In a large skillet over medium heat, heat oil and cook meatballs until golden on all sides and cooked through, 10 minutes. Transfer to a plate and wipe out skillet with a paper towel.
3. Melt butter in skillet then add remaining 3 garlic cloves and cook until fragrant, 1 minute. Add zoodles to skillet and toss in garlic butter then squeeze in lemon juice.
4. Add meatballs back and heat just until warmed through. Garnish with Parmesan to serve.

Day 11 - Zero Carb Reset
Thurs. Jan 17th
I hit the sack late last night. Hubby woke me up (he's kinda like a bull in a china shop) early this morning because he had an early call time. It mucked up my groove a little.
I was happy with the 1.8mmol/L blood ketone concentration. It seems that things are going smoothly. This will be my last reading for a while as I've run out of all diagnostic strips in the house. I'm not in a huge rush to get any more either.
I'm really finding it a challenge to drink enough water while I'm busy at work. Someone told me about the Plant Nanny app that helps you track your water intake. Where you have an animated plant and as you "water" it, you can watch it grow. Or die. (I guess it's like one of those Tamagochi electronic "pets" from the late 90's.) I don't do well with house plants in real life. We'll see how well I do watering this plant and in turn, myself.

I got home kinda late from work today and was looking for something easy to make. So bacon it is! 😜
Though I didn't have enough to fill out my macros, I filled the rest in with a can of sardines. Nothing special straight out of the can. I dislike getting home so late that by the time you've done the basics like cooking, eating and cleaning...it's time to go to bed.

about eating cheese and I’m here to say IDC! I broke #whole30
again but this time with intention to see how cheese makes me feel. .
So no cheese until further notice and definitely I will be eating much less of it from now on but I am one to not deny a craving and my body wanted cheese (it has been wanting it for a few days!) so I gave it cheese.
When it comes to cravings, sometimes they are fleeting but sometimes they nag at you for days, these are the kind you should listen to because denying your body something it craves can cause overeating or binging (two things that are a big part of my past).

Not fasting through lunch today, as Friday lunches are my favourite! 😍 Chipotle salad with chicken, mild salsa, sour cream, cheese, cilantro, and lime. Skip the rice and beans obviously, but maybe not as obvious is to skip the salad dressing! Their vinaigrette has 18g carbs! This meal, according to their nutrition calculator on their website, was 7g net carbs (or 9.5g net carbs, depending on what you believe in the controversy of how Chipotle reports carbs in their nutrition facts 🤷♀️) and 405 delicious calories. Yum yum!!! .
