Mini Bacon Cheddar Corn Muffins made with Masa Harina
Masa Harina is a corn flour which is made from freshly prepared hominy. To make hominy, field corn is dried and cooked and soaked in lime water. When you do this it becomes more digestible.
Here's how we prepared our mini Bacon Cheddar Corn Muffins using Boxiki mini corn muffin tins with a silicone cup. @boxiki
1 cup flour
1 cup masa harina flour
1/4 cup honey
1/4 teaspoon baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 large egg
1/4 cup safflower oil
1/4 cup grated white cheddar cheese
2 strips of cooked bacon, chopped
Preheat oven to 375 degrees F. With Boxiki brand, no need to butter or spray the silicone cups. But, if you don't have the silicone cups, go ahead and lightly butter or spray muffin tins.
In a large mixing bowl, whisk flour, masa harina, baking powder, baking soda, salt together. Add egg, honey and safflower oil and mix until well combined. Add crumbled bacon and cheese.
A small ice cream scoop would work best, but if you don't have one, add batter into a ziplock, snip the bottom corner and slowly fill each up 3/4 high.
Bake for about 12 minutes or until toothpick comes out dry.
Pop them out of the silicone cup and transfer to a wire rack to let cool. This go great on their own, with butter or served with Chili.
