Super Seed Choc Balls Ingredients... 4 tablespoons of almond meal 1 tablespoon of chia seeds 2 tablespoons of LSA mix 3 tablespoons of paleo seed mix (Coles) 8-10 dates (fresh works best) 3 tablespoons of activated buckwheat (for crunch) 2 tablespoons of coconut oil Combined everything in a food processor and blitz until combined. Only took me about 1-2 minutes. Once your mixture is ready use a tablespoon to divide the mixture (1 tablespoon is 1 ball) I got 10 balls out of mine. Chocolate sauce 1 & 1/2 tablespoons of coconut oil 1 teaspoon of pure maple syrup 1 teaspoon of almond butter 1 teaspoon of cocoa Combine gently over medium heat. Use a spoon to drizzle over the balls. These balls are great for a snack. Finn loves these balls. I’ll never forget the day in third grade when we were learning about sugary foods and drinks. I happened to be the student of the day when my teacher mixed plain water with the amount of grams of sugar in a coke or root beer and then called me up to drink it. I was actually really excited about being chosen to go up there but it tasted disgusting! She made a great point about what we are putting in our bodies. 😱 This week in science my third grade class has been discussing nutritious food and learning how to read nutrition labels. (Which are very different than American food labels so I’ve had to learn a lot as well.) I had the students bring in empty boxes and jars with food labels from home. They rotated in four groups reading the labels, trying to decide which foods are high or low in fat and sugar and think about which (if any) are healthy choices. After they had a chance to read through all the labels, they shared and sorted into categories. 🥭🥬🍔🍕🍠🥓🥘 Talking about foods at a young age is any interesting topic. I feel they need to know the truth and become aware of what they (or their parents) are putting in their bodies. I know I’m grateful for my third grade teacher Mrs. Baca who taught this to us in such a hands on and memorable way! But I also don’t want kids to overthink what they’re eating too young or to shame themselves or each other for eating sweets and drinking sugary fake juice. 🤔 Also spoiler alert: none of the boxes and jars and bottles of food were nutritious or low in sugar. Had a very lazy dinner tonight, we had a family movie night so I made a quick salad and Baked Sweet potatoes, added Hummus Campari tomatoes and Persian cucumbers. And for the other flavor I mashed 🥑 with sea salt , 🍋 and garlic and added bell peppers and asparagus with sprinkle of shredded cheese from @organicpasturesdairy. A few weeks ago I posted about my experiment with broccoli tacos. They were so yum and realized the broccoli would be a great side dish or snack served this way. - The breadcrumbs give the broccoli a great texture and they are pretty quick to cook. They can be cooked in the oven but I promise you they are so much better and tastier pan fried on the stove. - My eldest really likes these and I have served them as a side dish as well. I know we are all saying it but I can’t believe it’s November already 🙈😬. Today my youngest son starts school transition and in just a few shorts months I will have both my boys at school 😢💃😆 - Having 2 kids in school means no more daycare fees and no more double pick ups after work, yay! It also means 2 lunchboxes to pack!! - I have enjoyed packing my son’s lunchbox but as the year has gone on I am definitely getting less creative. I am also conscious that I am packing the same types of foods most days. I am ok changing around the main food but the veggies tend to be the same. 🤦‍♀️ - I am also aware that my son is more likely to get sick of a food if he keeps getting it every day. So I am trying to vary the veggies a little. I have started using the crinkle cutter to cut them up and tried these orange cherry tomatoes instead of red. Even making tiny changes to how a food is served can help prevent the change your child will stop eating the food. - This is the same for other meals. When I go grocery shopping in commercial supermarkets now it feels like am choking. I am impressed how much my mindset has changed and how my body gravitates to the foods that are natural, mostly organic and are healing. The worst I felt was during Halloween, when I wanted my son to be able to go trick or treating like the other kids, but the outcome would devastate me. I would get anxious about my son eating all the trash people would hand out, because it’s this over commercialized holiday and that’s what we have to live with. It’s difficult if your own philosophy doesn’t match that of the majority, or at least what the big brands have established to be some sort of norm, yet are trying your best to raise a healthy mind and body. • • • • • The resolution for Halloween was to swap in all the ultra bad stuff for a healthier option with a few remnants of the original loot still speckled in between so Takeo wouldn’t get too suspicious 😜 And then every time he would pick something I would remove a few additional candies so the amount gradually got smaller without him noticing. We talk about our food and what it does and why certain foods are bad for you. I have learned that kids even as small as 4 understand explanations when they are brought to them in story form. Simply saying “no” makes them just feel like you are denying them something they have found pleasure in. I explain about diabetes and heart disease and show him real world examples, so he can connect the dots. And even though he likes #sweets he is also very self regulating. He wouldn’t normally eat more than one or two pieces and is happy with a very small amount. What do you do when you have a huge amount of Oregano growing in your house? You make pesto! I was looking for recipes to use up some of the oregano we have grown with our #urbipod and came across oregano pesto. I didn’t even know that was a thing but turns out it is! - I used some of our homegrown basil with the oregano and use almonds instead of pine nuts and it make this amazing tasting oregano pesto 🌿 - I teamed it with these pumpkin ravioli which I had seen on the @pinchofyum website. These ravioli are so easy to make as I used wonton wrappers. I really want to get back into making pasta with my boys but sometimes you have to go with the easy option! #mumlife - The combo of the sweet pumpkin with the pesto worked so well together. As this was a new dish I served it as a side with the rest of our meal. I rarely serve a new meal to the boys without having foods in the table I know they will like. - My eldest had a taste and said he didn’t like it, my youngest refused to have a taste. Hubby and I loved it! I call that a win! This is the first exposure to a completely new meal for my boys. Tortitas de calabacín (zucchini) y zanahoria fáciles y deliciosas. Ingredientes 1 calabacín 1 zanahoria grande 4 cucharadas de avena en hojuelas 1 huevo aceite de oliva virgen extra ajo en polvo al gusto sal al gusto pimienta negra al gusto Preparación 🥘 Lavamos la zanahoria y el calabacín y les retiramos la piel (yo le dejo la piel al calabacín) rallamos la zanahoria y el calabacín. En el caso de que suelten mucha agua, podemos dejar escurrir las verduras en un colador durante unos minutos. Añadimos las 4 cucharadas de avena y el huevo, que lo podemos batir previamente. Lo mezclamos todo muy bien hasta que quede una pasta. Añadimos sal, pimienta y ajo en polvo al gusto. On Saturdays I share another of our favourite juices. This one is definitely my fave. ————————————————————————- 1/4 avocado 2 apples 1/2 raw beetroot 2 carrots 1/4 lemon (if unwaxed leave skin on, otherwise peel) Ice Place the avocado flesh and ice into your blender (not the juicer). Juice the apples, beetroot, carrots and lemon by packing the lemon between the apples and then pour the juice into your blender and blend until smooth. Beetroot is exceptional at helping to rebuild blood cells and for assisting the body with cleansing the bloodstream. Carrots are beta carotene kings and contain many vital vitamins, minerals and phytonutrients. The high levels of beta carotene in this smoothie help mop up free radicals that could create havoc in your system. Free radicals are caused by stress, environmental pollution, nicotine, alcohol and even over-exercising.
