Happy Sunday to you and yours. We are still buzzing after soaking up the mountain air this weekend. It was the sort of thing dreams are made of for this mama.⠀ ⠀ Thanks to the generosity of @sophiejameswine , the magnificent Kelsey of @shelterco , and the brilliance of @katiehintzzambrano and her company @beingoodcompany , we had a chance to spend the night here surrounded by other lovely mamas and kids for a camp out. ⠀ ⠀ It was a memorable night with just my oldest daughter and dear friends. This was a night of firsts for me and my oldest daughter, neither of us have ever slept in a tent. The stars were shining so bright, we were all filthy, the kids were roaming free exploring the land, the weather was epic, the rose was delicious, and waking up at the top of a mountain above the fog took my breathe away. I could get used to glamping! I hope your weekend was lovely and you had a chance to get outside and play.

Sunday breakfasts cooked by the hubby and miss 4 🙌 Simple almond meal pancakes 🥞 with frozen fruit, dark choc chips and honey 🍯 😋👀👏 INGREDIENTS 1.5 cups of almonds 3 eggs 1/2 cup of #nuttybruce coconut and almond milk 1 tbsp of coconut oil 1 tsp of baking soda 1/4 tsp of apple cider 1 tsp of of vanilla bean paste 1/4 tsp of Himalayan salt METHOD Blitz almonds in a high speed food processor and add all the other ingredients in and mix for 1 minute on med/high speed. Cook on medium heat in a fry pan with coconut oil. Healthier donuts 🍩 If you get some time this weekend, try making these. They are a variation from ‘The Good Life’ cookbook. It is important that all ingredients are at room temperature. When I first made these I added cold eggs and it made the coconut oil solidify. If this happens to you, don’t panic, just wait till all the ingredients in the bowl come to room temperature and then mix through. 1. Preheat oven to 160 degrees fan forced. 2. Grease 6 hole donut baking tray (I got mine from #daiso ) 3. Mix 1/4 cup coconut flour, 1/4 cup cacao powder, 1/4 tsp bicarbonate soda, 4 beaten eggs, 1/3 cup extra virgin coconut oil, 1 tbs coconut sugar, 1/3 cup mayple syrup. Mix till smooth and place in donut tray. Bake for 15 mins till firm. 4. When cool melt about 50g dark chocolate with 1tsp coconut oil and drizzle over the donuts. Sprinkle some desiccated coconut over the top 🥥 💚 These can be frozen and popped into a school lunch box or eaten when you have a sweet tooth. The recipe has been requested so here it is @ecky1808 21/2 ripe bananas 400g Nutella 2 tbsp flaxseed mixed with 4 tbsp water 2tsp vanilla essence 1 cup coconut sugar 2 cups quinoa flour ( google how to make this from quinoa) 4 tbsp cocao powder 1 tsp baking soda Heat oven 200deg C Mash banana and Nutella to make smooth mixture Add vanilla , sugar and flaxseed Mix Add quinoa , cocao powder and baking powder Mix Pour into a lined dish and bake for 20-25 mins Cool down completely before cutting into pieces Enjoy 😉 Complete protien✅ Fibre✅ Omega 3✅ Nutritious✅ #brownies #quinoa #healthytreats

I get lots of people ask if I get paid at all to blog. The answer is no.
