Cauli rice & roasted garlic tomatoes 🤩 so NOMS. I’m lazy so I just buy the pre-made cauliflower rice at the grocery store then sauté it in some coconut oil & garlic while roasting cherry tomatoes in the oven with garlic, oil, salt and pep👌🏼
Not sure where the week has gone but I can’t complain that it Friday tomorrow! Tonight’s dinner was super fast and delish. We had layered fajita bowls. Fresh Spinach, Cauliflower Rice, Grass Fed Beef, Red Pepper, Cilantro and Squeeze of Lime Juice! Hope you all had an amazing day.

A Friday Favourite for the kids (and grown ups!). Everyone loves these super yummy sticky chicken wings! There are 100 ways to do them but we love the recipe in @ourtamaramakitchen - using our hormone and antibiotic free chicken and healthy substitutes such as tamari and coconut nectar in the marinade - they are virtually guilt free! 😋💛

**New Recipe on the blog**
#GoatCurry , or as known in India - #MuttonCurry , or as I fondly remember in #Bengali - “#KoshaMangsho ” (pronounced as ko-shaa maang-sho), has always been my favourite curry, especially if cooked by Mom.😍 I remember, she used to take hours to sauté masala first and then the meat and in the end pressure cook them together. I tried it multiple times in the US with lamb meat but never got a similar taste and meat texture as Mom’s, even when I cooked meat on low flame for hours. Never as good as I remembered it to be.....
Thanks to #InstantPot , the problem with the meat texture is solved along with enormous time-saving. First time I cooked #lambcurry in Instant Pot, I miscalculated the time and meat became too tender. But it was delicious enough to fall in love! And my half-Bengali self was too ecstatic. There is something about the combination of tender meat, perfect spices and potatoes to not love…Right?! All Bengalis reading this should know what I mean by potato and happiness! Since my Mom is Bengali, growing up I used to see potatoes in almost all curries - egg curry, chicken curry, mutton curry, or any vegetable curry. Even though I am not a big fan of this particular starch, seeing half #potato floating in the curry always made me happy.
With this recipe, I tried to recreate the taste from my Mom’s Indian kitchen to my kitchen in States. And Instant Pot made sure I get the perfect meat tenderness and in less half the time required on a stove top. Most importantly, DO NOT forget that this curry tastes way more delicious the next day!! 🤩

It is always touching to see someone sharing their blessings to those people who are there to help and care for us. Such was the case when I was asked to cook food packs for the personnel of St. Luke's Hospital at their Renal Department to celebrate our family friend, Tita Sonia's birthday while her hubby, Tito Ed, was undergoing dialysis. The doctors and staff became friends as that little department forms a community to help out their patients and their families when they come in every week and make the best of a situation that is far from ideal.
I saw how the staff went out of their way to give beyond what was required of their jobs, treating the families who were there like their own families. The staff even came in to surprise the birthday girl with a birthday song. We definitely can't pay for that but we can also give back in return even with just a small gesture as sharing a meal together which went a long way in making the staff feel appreciated in return. Simple gestures coming from the heart goes a long way in creating a community that cares for one another. It doesn't matter what circumstances we are in, we can still choose to be thankful for the blessings that we are given.
Thank you for letting me be a part of your mum's special day, Jen, and being a fine example of how a daughter cares for her parents and those around you. I was asked to make food packs and I didn't imagine how that little department in a hospital can show me so much love in a few hours.
Maraming Salamat to our birthday girl for showing me such a great example of the strength of a woman. I always thought Tita Sonia to be beautiful when I was growing up and her beauty went beyond her looks but she always showed it through her sweetness and strength in character in handling what life throws out at her with so much grace.

Rustic strawberry and almond galette. Because spring! And I could have this everyday while strawberries are in season. I adapted my recipe to make a smaller size as I ate half of the berries before making it. It was every bit as delicious. I know we don’t have a Trader Joe’s in Lafayette, but that is where I got this crust. Any pizza crust works. Mine is whole grain and had super clean ingredients, which is why it was my choice. I’ve also heard great things about @simplemills pizza crust too!💯

I feel very fortunate to have opportunities such as today, talking to NHS England staff in Tonbridge about ways to implement a healthy diet, particularly in the workplace; we are bombarded with so many inaccurate food messages in the media so it is really refreshing to see high profile organisations such as these, taking the initiative to promote staff wellbeing • from little acorns and all that..... I brought along a few props today, but most important are my rainbow-coloured pencils to highlight the importance of including as bright an array of multi-coloured vegetables and fruit each day as possible; my top tip is always to scribble down your meals from the past few days and then take these pencils and underline your vegetables and fruits with the corresponding coloured pencils .... have you got a beautiful Jackson Pollock?
