I had no idea how honey was harvested until last week, when I had the good fortune to be invited to the @sevenswansfrankfurt
permaculture in Bad Homburg whilst on assignment. These wooden frames are lifted out of the hives, solid with honeycomb, and the thin layer of beeswax is removed (as shown here). After that, the frames are spun round by hand in a special barrel known as a honey extractor in order to get the honey out by centrifugal force; the honey is then filtered through a fine sieve before being poured into jars. Each frame produces around 3kg of honey - ! My friend and beekeeper @erinnehm
tells me that the frames are then slid back into the hives for the bees to clean. Never stop learning where your food comes from, kids 🐝

As they say, "it takes a village". SRI (System of Rice Intensification) training part one: making bokashi fertilizer with farmers here in Dao, led by Joby Arandela of ZIDOFA Iloilo. Joby & ZIDOFA have successfully converted over 30 hectares of conventional rice fields in Iloilo to organic SRI in just 3 years. Now they're coming to Dao to teach us!💪
SRI is a management strategy for crop improvement, allowing farmers to use fewer seeds and water, giving them greater returns from their capital. It is a low tech approach that uses half the amount of water and 90% less seeds; it allows farmers to produce more than with conventional chemical rice farming.🌿
ZIDOFA is an organization dedicated to creating a closed loop organic food value chain: training farmers in SRI, post harvest drying & milling, packaging and marketing. 🌾

My first focus when it comes to cooking is to make food healthy because I learned the hard way that health must come first.
My second focus is to make food tasty because life is far too short to eat bland/boring food.
My third focus is to create meals that are sustainably sourced because it's the responsible thing to do, it supports real people, & it makes my first & second focus just a little bit easier.
My fourth focus, however, is to make the food beautiful. It's not necessary to achieving any of my other focuses. But... we eat with our eyes first.
Since this is Instagram, I kind of have to make beautiful food because there are only so many words for delicious & it's a cop out to say "boy, I wish you could taste how yummy this is."
I tried to keep this Black Rice & Romanesco Broccoli as focused as I could.
It's full of nutrients.
It tastes good because I seasoned it well, I added herbs, I cooked with chicken broth, & I played with textures with a puree, raw, & roasted broccoli.
The Rice is ethically sourced & the veggies were grown locally from Viravongsa at the Mill Woods Farmers' market.
I tried to keep as naturally beautiful as possible because nature is beautiful & more often than not that is the only clue one needs in order to know there is goodness in every bite.
Making dinner in the summertime is always so much fun. It’s always full of so much flavor and color. Made this into a pasta with the addition of my homemade pesto I made with the basil from my garden!
