Ingredients: 1/2 glass rice, 3/4 glass chickpeas, 150 gr lean ground veal (about the size of an orange), 1 small sized egg, 250 gr lean diced lamb or diced veal, 2 glasses yogurt, 1 eggyolk, 1 tbsp lemon juice, salt, ground black pepper, dried mint, butter.
Direction: Soak chickpeas overnight. Cook them in a pot filled with slightly salted water. Sieve(You can also peel the chickpeas if you want). Rinse meat then season with salt and few black peppers. Boil and sieve. Set to cool in room temperature. .
Soak rice in hot salted water 2 hours prior to preparing the meatballs. Sieve the rice too, rinse and dry off on a kitchen towel. Once they are completely dry, grind them until they have a powdery. Now you have homemade ground rice for the recipe.
Combine ground veal with ground rice, continue grinding the mixture until they are homogenious. Add egg, salt and ground black pepper and knead. The texture must be similar to a paste. Grease your hands with olive oil and prepare tiny, chickpea sized meatballs.Transfer them in a tray.
Fill a ceramic pot with 1.5 l water (makes about 6 glasses) and bring to a boil. Add meatballs first and once they are cooked add chickpeas and diced meat next. Whisk yogurt, eggyolk and lemon juice in a small bowl. Pour in some of the soup (sieved and lukewarm) into the yogurt mixture and whisk. Slowly add the yogurt mixture into the soup, stir and cook. Bring the soup to a boil and let it simmer for 10 minutes over low heat afterwards. Season with salt to taste and remove from the stove. In a small skillet, heat butter and stir in a generous amount of dried mint. Pour the mint butter on the hot soup, allow to rest for 10 minutes and serve. Bon appetit.
