Julia Child's French Onion Soup
We have all had the bad kind. Let me show you the good kind.
The most important part of this soup is the sweating and then gradual browning of the onions. Start with some butter and olive oil. Then add the onions and cook on low for 15 min. Add salt, pepper and a pinch of sugar. Cook on medium heat for no less then one hour untill its a dark brown.
Julia adds her flour and then boils the stock in a separate pot and then adds it to the onions. I just made sure my stock was not cold. My secret ingrents for all french onion soups are chili and star anise. The flavor they add take the soup from warm and buttery to mind blowing. I also use oregano, thyme and white wine.
Simmer for an hour. Add a dash of brandy before serving.
Top with bread and cheese.

Yesterday I mashed bananas, prepared my ingredients, and mixed up a batch of banana muffins. When the timer went off I went to take them out of the oven and wondered hmmm what did I miss here. Behind me on the counter was the baking powder and mashed bananas, both of which were missing in the muffins. Needless to say that batch of chocolate chip bricks were garbage. Today I took the mashed bananas I had intended to use and made another batch, this one is fluffy and rich and delicious. Mommy brain really got me this time! Muffins are one of my daughters favorite treats and I love making them for her. Recipe on the blog! 🍌🍫

Sea bass and vegetable "En Papillote"! Baking your fish, any kind of fish in parchment packets, or en papillote, gives you a "big bang for your buck" without much effort. Just throw a few ingredients into parchment paper and form it into a parcel then let them do the work--they lock in flavor and moisture and are are impressive looking a piece of art! Put vegetables and fish with spices on a piece of parchment paper and form a packet . Any veg any fish spice and put olive oil and some more liquid like white wine. Close up the parchment tightly and bake for 40 to 50 min on 400 depending on the size of the slice of fish. Wrap each slice separately.
I used broccoli, cauliflower, mushrooms, red onion, squash and carrots. For spices I used lemon pepper, paprika and garlic powder. I put a slice of lemon and a small scoop of garlic butter. I sprinkled zeta olive oil generously over the fish and veg and then added 1/4 cup white wine per pack. I baked it on 400 for 50 min.

Kamikaze inspired salmon
This supper was so light and refreshing and surprisingly filling. Something I find a challenge during the 9 days. I find my kids are hungry after supper. And even my husband who never eats at night tends to scrounge around the pantry.
I had made my husband a kamikaze the other night (his favorite drink) and the ingredients were still left out on the counter. Which gave me the idea to use them.
I try to come up with suppers that my family will like but at the same time keep within the theme of the 9 days and not go over the top with Gourmet meals. •
5 slices of salmon (I used salmon ends it’s much cheaper)
2 Tbsp vodka ❗️check w your Rabbi, not everyone cooks with alcohol during the 9 days
2 Tbsp lime juice
3 cloves garlic minced
Approx 15 pieces of cilantro
Salt and pepper
Oil ➡️Place the salmon on a cookie sheet and drizzle with oil and salt and pepper score the salmon and set aside ➡️meanwhile mix the vodka, lime juice and garlic and drizzle over the salmon ➡️sprinkle w the cilantro and bake 400 for 20 minutes and broil for 3 minutes ❄️freezes well

This is the combination of creaminess, crispiness, and just amazingness 😱 If your as in love with eggplants as me and my hub, you’ll definitely be a lover! ❤️❤️

, were taking the opportunity to go all out on cheese (also cuz my baby’s allergies to fish suck 😣)
of the tower 🏢 (yields 2 stacks)
1 eggplant 🍆
Cheese (I used Italian blend) 🧀🇮🇹
1️⃣Start by slicing eggplant about half an inch thickness and laying on paper towels. 2️⃣ Sprinkle salt on both side and let it sit for 10 minutes. Use another paper towel to absorb any water released by the eggplant. 4️⃣Preheat oven to 350 F. Line a baking pan with foil then spray with cooking spray. 3️⃣ Bread each slice: first dip in beaten eggs, then in breadcrumbs. 4️⃣ Place them on foil and bake for 10 min on the first side then 5 min on the other side. 5️⃣ Take the pan out of the oven and layer marinara sauce, Italian blend cheese and parmesan cheese. 6️⃣ Place it back in the oven until melted then turn on the broiler for about 3 minutes until you get a golden crust. .
I KNOW IT LOOKS LIKE A LOT OF STEPS TO FOLLOW BUT ITS SUPER EASY TO MAKE! ✅✅
