Why is food being so annoying this pregnancy? 🙍🏻♀️ I’m wanting new meals that I’ve never even had and thinking up flavors that I want to become a reality within 5 minutes of the craving all prepared for me by a magical chef. 💫
This morning (post-celery juice 💁🏻♀️🌱) I wanted some type of warming granola-maple-cereal so I whipped this up and 😱 it was so good that it’s worth sharing. In a bowl I put 1 apple (chopped), 1 banana (chopped), and 2 dates (chopped).
In the blender I added pumpkin seeds, sunflower seeds, chia seeds, shredded coconut, maple syrup, vanilla bean powder and a drop of coconut oil. Pulse 10 times, spread on a baking sheet lined with parchment paper and bake on 300 for 20 minutes. Let it cool for 10 minutes then add it to the bowl of chopped fruit. Put a splash of coconut milk in there and mix it up.
🌟 I didn’t use any store bought milk (other than cold pressed nut milks from a juicery) for so long because none were of decent quality and contained too many crappy fillers. If you’re looking for a good milk buy vita coco coconut milk on amazon. It’s amazing. You’re welcome. 🤗

Cold, tired, hungry. Can’t be bothered to cook so cheating with corncakes. Not strictly keto but not terrible either. 12g carbs in total. It’ll do.

Not all is glitz and glam, and it’s sure in hell not an easy sailing journey.
Getting where I am now took more mental strength than anything but I’d do it all over again if I had to go back.
There’s some loss between nov and dec, but with that loss, I gained a little more jiggle- which I’m celebrating. Our bodies will morph multiple times and I feel the sooner we learn to enjoy it all, the quicker we fall in love with ourselves.

My first initial goal was going back to my pre-pregnancy weight, by New Years, which I finally hit today- 12/9/18!
Looking back at my first video while on this journey, my eyes got watery because I remember that girl. She was lonely inside, scared, felt useless, hopeless, insecure, sluggish, bitter..just existing-barely.
She grew exhausted of these thoughts and decided to finally change.
I’m still an emotional wreck haha, but I no longer live in that place I once thought was my life- for life. I know longer avoid mirrors or feel a weight of uselessness when I see myself.
I see beauty, not because of the weight loss, but because I’ve found strength!
My biggest focus now is my mental health, and being aware of how and who I am, I know what needs to be done to get to that full potential place of happiness. For me, my children, my husband; my family.
Just like I made that decision in March of this year, that I was going to physically change..
Today marks a new day, a new focus; mental clarity, mental change.
Keto is my life, that will never change. I will continue to grow better and stronger. Now is the time to get my head in check.

PLANT BASED CREAMY DREAMY RANCH DRESSING:
1/2 cup cashews
1/4 cup water
1/4 cup coconut water
1 garlic clove
1 tsp dill
1 tsp dried onion
1 tbsp diced onion
1/4 tsp sea salt
1/2 tsp black pepper
Juice of 1/2 lemon
1/2 tsp dried sweet basil (or parsley)
Blend on high til creamy, dip, swirl, drizzle, & enjoy!
