Christmas is COMING!
It’s my favourite time of year. I’m not going to lie.
And in Australia we are particularly lucky because we can make all the traditional northern hemisphere bakes AND all our traditional Christmas summer bakes incorporating the abundance of fresh fruit and veg that Christmas and December brings. Granted, having the oven on for nearly a month solid when the temperature is generally well over 30 is not my favourite part!
Who, like me, is planning for Christmas already?! I have a list as long as my leg of bakes I want to do this year!

Braised pork belly with spicy noodles.
If you read my blog today or listened to my podcast you know about first time I ever had pork belly and the impact it had on my life.
If you did read or hear that story just know that without pork belly I very possible might not be writing this right now. .
Pork belly, for those of you that don't know is what bacon is made of. Bacon is just pork belly that has been cured and smoked. .
When braised (cooked in a moist environment for a long period of time on low heat) pork belly becomes so tender that it practically melts in your mouth. The layer of fat become little clouds of flavour that burst with every bite.
It is also amazing if you braise it and then deep-fry it. It gets really crispy on the outside and soft and juicy inside. There really is nothing like it. .
The pork belly I made today was braised with ginger, garlic, leeks, gf soy sauce, fish sauce, mirin, rice vinegar, honey, Chinese five spice, and dried chilies. .
I served in a broth of chicken stock flavoured with ginger, garlic, leeks, and soy sauce. .
For vegetables I used bean sprouts, Bok Choy, more leek, jalapenos, and carrot.
This was all served over rice noodles.
