The cold weather is here. And I love it. 💗This means I can have more of Sinigang dish. Tonight I am making Chicken Sinigang in Sampaloc (Sour Chicken Soup using Tamarind). It's my comfort food. So healthy. Tamarind is very good to cleanse our liver. I like using fresh tamarind over instant sinigang seasoning powder. Not only do you get the right sourness, you also avoid msg, hidden sugars and preservatives which can be high in carbs. And it's not very hard to do. 🤗 •Chicken cut ups, washed and cleaned -best to use bony parts of chicken. It makes the broth tastier. 🤗 •Water enough to cover the chicken. Tip: For ketoers, you can add more water and keep them in clean containers when you need bone broth in your IF. •Sliced radish •tomatoes, quartered •okra, sliced •green finger chilis •winged beans, sliced to 1" thick •a handful tamarind leaves, cleaned and washed •kangkong leaves (water spinach/swamp spinach) •himalayan salt ~boil together the chicken, tomatoes & radish until chicken is cooked & tomatoes has rendered its juice, and the radish is translucent but not too soft. ~boil in separate sauce pan the tamarind. Water should be enough to cover tamarind pieces. Once soft, turn off heat and mash the softened tamarind and use a strainer to get the extract. Throw away the seeds and the hard cover of the tamarind. ~season with salt ~add remaining vegetables except kangkong and tamarind leaves. Simmer for 5 minutes until all vegetables are cooked through but not soggy ~turn off heat and add last the kangkong and tamarind leaves. Let rest for 5 minutes. ~Serve with patis / fish sauce with mashed finger chili. 😋🤤🤤 If you noticed, I don't have exact amount of each ingredient. 😝 Depends on how many chicken cut ups you are using. For me, I love vegetables so I out in as much as I want. Carbs? The carbs in this veggies are low but the fiber is high. So if you calculate (good luck!) the number of carbs in the veggies minus fiber, you get very low carbs. Weekend adventures in Michigan! Mike and I were long distance for almost 6 out of the 12 years of our relationship! We spent every single weekend of those 6 years traveling anywhere from 3-6 hours (one way) to see each other! ... Week 2. Day 1. Done. ✅ Chest & Tris. This workout wasn't meant to get all hyped and burn 1000 calories. Most of it was on the floor using weights and focusing on muscle groups. CREAMY BUFFALO CHICKEN SOUP _ As promised here is the recipe for the buffalo chicken soup I made yesterday. I will also add it to my highlights and you ca. Also swipe to screen shot the recipe card💥 and yes there is carrot in the soup. If you feel some type of way over the carrot on Keto , leave it out. . . Creamy Buffalo Chicken Soup Ingredients: _ 2 chicken breasts, cooked and shredded OR rotisserie chicken 4oz softened cheese cheese 1 cup franks red hot 1 container of bone broth or chicken stock 1 cup water 1 package ranch seasoning or 8oz homemade ranch seasoning 3tbs butter 1 medium carrot, peeled and chopped 3/4 cup chopped celery 1/2 white onion, minced 1 clove garlic, minced 1/2 cup heavy cream Directions : _ In a large pot melt the butter over medium heat. Add carrots, celery, garlic and onion and cook until they begin to softened, about 5 min. Add the bone broth, cream cheese, water, red hot, chicken and ranch seasoning and stir until combined. Pop a lid on the pot and let the soup come to a slow simmer Simmer for 1 hour. After one hour turn the heat off and stir in the heavy cream. Whisk until thoroughly combined and set aside. Cream butter in a large bowl with an electric mixer, 2-3 minutes. Add in sweetener and continue to beat until light and fluffy and the sweetener has dissolved. Add in egg, mixing until just incorporated. The mixture will appear slightly 'broken'. With your mixer on low, add in half of your flour mixture- mixing until just incorporated. Mix in the rest. Wrap cereal dough with cling film and refrigerate for at least an hour and up to 3 days. Preheat oven to 350°F/180°C. Roll out the dough between two pieces of parchment paper until thin. Using a ruler, cut dough lengthwise and then crosswise into squares. Prick each piece with a small fork. Transfer parchment paper with the keto cinnamon toast crunch to a baking sheet or tray, and place in the freezer for 10 minutes prior to baking. Bake for 8-12 minutes, until fully golden. If you like them crisp you'll want to push the baking time as much as possible (until deep golden). Brush with melted butter and sprinkle with cinnamon 'sugar'. Allow to cool for ten minutes before transferring to a cooling rack. Allow to cool completely, as they'll continue to crunch up! Preheat oven to 400°F/200°C. Brush a baking dish or rimmed tray with olive oil. 2. Rinse and peel your jicama. Carefully cut in half, place cut-side down and slice roughly 1/2-inch thick pieces (this will keep the jicama stable). 3. Slice the pieces further into ‘fries’, keeping in mind that the thinner your fries, the faster they’ll cook! 4. Add jicama fries to prepared baking dish, drizzle with olive oil and season with salt and freshly ground black pepper to taste. Roast for 45-60 minutes, until golden and crisp, tossing them about half way through. 5. For the longest time I always made my spaghetti squash in the microwave. Then a few weeks ago my mother-in-law made a spaghetti squash dish in the oven and I was hooked. The squash has so much more flavor! Started by baking the squash. Mixed together ricotta with garlic powder, oregano, basil and some parmesan along with some marinara. Took the squash out of the oven, cooled for a little bit and scrapped it out into a big bowl. Added the sauce mixture to it, mixed it up and then put it back into the shell and topped with parmesan cheese.
