Kind of Left over lunch today at the office. Today goat cheese, mesclun salad, olives, beet and the roasted aubergine from yesterday.

FAT. It's Week 5 of my Low Carb Challenge and I'm reflecting on its meaning. I don't know about you but it's always had a negative impact. Growing up we were told 'don't eat fat because it makes you fat and you'll get heart disease etc etc'. But eating good healthy fats DO NOT make you fat. Insulin does. Insulin is secreted when you eat carbohydrates. Carbs turns into glucose and insulin is the hormone which tries to get it out of your bloodstream and into your cells to use up as energy. When there is too much glucose it goes to the liver where it coverts into fat. Yes that stuff around your tummy and legs which is hard to shift. So if you decrease your carb intake you decrease the insulin amount and the amount of fat stored. But you need energy so you eat good fats instead such as Olive Oil, Coconut Oil, Avocado Oil, Macadamia Oil and Animal Fats such as Butter, Tallow, Lard, Chicken Fat, Ghee, Duck Fat and add these to your protein and veggies at each meal. So these fats turn into ketones and that's your energy source. Plus eating this way helps burn off the fat you've accumulated making you lose weight.

ALSO my legs look amazing sometimes tbh. I don’t have much fat in my calves anymore because I’ve literally been carrying around all this weight my whole life so my calves are buff as fuck.
Was way into my workout today but for some reason at the end I felt like I didn’t do enough. But I did. I worked out for 100 minutes. I keep expecting way too much of myself and comparing my journey to others. It’s MY JOURNEY no one else’s so I need to focus on my damn self. I took in a lot of calories today because I drank (yes you read that Right) some coconut oil to help with digestion because literally I am so constipated.
Measured out and calculated carbs for salads for every day this week. Also cooked corned beef and chicken-veggie soup. I also have Brussels sprouts, asparagus, cauliflower, broccoli, and zucchini for sides with meals. Rotisserie chicken, bacon-wrapped stuffed chicken, and hamburger patties are in the freezer ready for meals. Week One of keto is a go!
