My 20 minute dinner tonight. Rice and quinoa with turmeric and a few spices, a handful of spinach, tofu and yellow squash fried in a little bit of coconut oil, and broccoli and some leftover asparagus that I tossed into the pan at the end with some water to steam them. I wizzed up a sauce with some peanut butter, juice of half an orange, some tamari, maple syrup, a nub of ginger and a squeeze of lemon. So good I make this sauce all the time rn. So, today didn't go as planned, and whilst I was happily tending to #clients #nails , the washing machine had other ideas and leaked allover the floor, then I opened the fridge to prepare lunch and a hinge snapped on the door 🙄. I grew up eating porridge for breakfast and it’s a habit I’ve continued especially as a great breakfast for sensitive tummies. My toppings vary but I find bananas and blueberries are a lovely combination. I make my porridge with water and then serve it with almond milk but you could also make the porridge with almond/rice or lactose free milk if you prefer🥣🍶

💩Does your gut agree with fibre? For many people with IBS, the answer is simply ‘no!’ . 😞They find that high fibre meals, like salads, bloat them and make them feel fatigued. This is super frustrating as a ‘healthy’ meal should make you feel fab right? . 🧐So what to do? Live off low fibre foods and avoid IBS symptoms or just ‘put up with it?’ . 🙋‍♀️Well why don’t I give you a solution for getting fibre back into your diet without ‘putting up’ with symptoms? . 👩When you increase your fibre intake, going for a huge portion all at once is not the one guys - you will get symptoms! Hell, even people without IBS sometimes getting bloated after huge fibre intakes. . 🤓So, how to do it? Well, firstly get an idea of what you are having on an average day - track your intake of fibre using Myfitness pal. Don’t change anything over this time, just track it. . 🤓Then, make a realistic goal to increase your fibre slowly - say 2-3g / day. This way you can increase your fibre to your own ‘tolerance’ level. 30g a day is what the general population is advised to have, but just see how you get on as this is a ‘general’ target. . 🍇🥕🥒🍅🍌Foods to opt for are carrots, peppers, golden linseed, oats, berries, green bananas, tomatoes and lettuce - these are generally all high fibre foods BUT low FODMAP, therefore least likely to cause you issues. . 👉What I find with my clients also is that they are able to tolerate more and more fibre as they tackle their IBS. Doctors have been worried that my insides are all tangled up so this is the final test to confirm or deny that theory. I feel like I go through phases of wanting savoury or sweet in the morning and right now I’ve been loving savoury breakfasts! I like to eat eggs for my source of protein and then pair it with some toast (today I put cream cheese on it which isn’t lactose free but I usually don’t have an issue if I’m just eating small amounts) and then I usually always have a piece of fruit in the mornings cause I loveee fruit!! Today I had a nectarine and it was super yummy! 🙌🏻

Early dinner al fresco! Today was our first day moving down the river...slowly. We are boat sitting for @floatingideas this week, and that means 5 days of #mindfulliving and #naturetherapy . Some boats are like floating campers, but this one is a real floating home...with home cooking by me. Slow roasted veggies with slowly simmered cod, red wine, and very little company. Another trip around the sun 🎈🎉 . This year on my birthday I’m reflecting back to my last birthday. I was really hopeful that this year I’d be celebrating with champagne. Nope just another matcha, which I’m totally okay with. I’m so thankful for what this last year has brought me. Besides gaining more knowledge, it was one of the hardest years of my life. I went through a lot — but have also come so far: 👇🏼 . 🎈I... Gained 20lbs 🎈Received SVF stem cells 🎈Rode this out for 6 hard ass months while they adapted 🎈Went back to work full time 🎈Am able to jog again and go to barre classes 3x/wk 🎈 Can eat more foods without upper pain and reduced bloating 🎈 MOSTLY, I am letting go of fears. Fear of this ‘sick’ comfort zone I have been in. Not exercising, not going out. Fear of food. I realize the worst scenario is not permanent. . I still get vitamins and NAD for support. THE BEST CRAZY VEGAN SPAGHETTI! Low FODMAP, gluten free, sugar free. VEGAN "MEAT" •100g tofu •1 tbsp nutritional yeasts •1.5 tsp soy sauce •1tsp canola oil •paprika and pepper for better taste Mix everything and bake in microwave (I was too lazy to use oven) 5 minutes on one side and 5 minutes on second side. CRAZY SAUCE •100g tomato passata •2tsp cinammon •15g peanut butter •soy sauce for stronger taste. Mix everything and add to vegan "meat" •145g cooked gluten free pasta Mix all of the ingredients and heat for 3-5 minutes. Let’s talk about a couple things that don’t get talked about very often after someone loses a significant amount of weight. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - stretch marks...yep, these don’t just happen after you have a baby! I have them on my boobs and my love handle area. - Cellulite. It’s like no matter how hard you work, it’s still there. - Food guilt & weight gain obsession. As much as it KILLS me to admit, this is a HUGE struggle for me. After a cheat meal, a glass of wine, etc, I’m always thinking to myself “great, now I’m gonna gain all of my weight back” my jeans feel tight one day, I think I’m gaining my weight back.. I’m up a pound, i think I’m gaining my weight back. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ These things HAPPEN after losing a lot of weight, but one thing that helps me is reading personal development 📖 it reminds you that no matter what, you are beautiful and you are strong. Things don't always go as you expected/wanted 🤷🏻 . I was soooo looking forward to my legday but I tapped out after my first set lol. I started my period today (if this is tmi for you, i'm not even sorry. This is happens/has happened to every healthy girl/woman) and at first I didn't want to work out (you know, cramps and stuff) but I pushed trough since moving usually helps with the pain. . I was already frustrated when my mom kept sending messages (I don't blame her by any means) while I was trying to work out. Then my weight plates weren't doing what I wanted so I just got more frustrated. When I was getting ready for my hip thrusts the barbell and foam thingy (to protect my hips from getting bruised lol) were not sitting the way I wanted and I just decided to stop. Working out is my moment away from everything and a way to de-stress. Getting irritated doesn't help with getting focused and de-stressed. . So this one goes out to my hormones for fucking up my work out lol. . (Happy to know I'm not pregnant tho) . Tomorrow I'll try again and Sunday I'll stuff my face with all the food at @vegansummerfest (@bevegan.be )

GUYS TODAY IS AN EXCITING DAY!! Derek and I are FINALLY done with our 5 months of the lowfodmap diet. This diet is not only super restrictive but we have to eat every meal at home. That means LOTS of cooking and not much socializing. We are headed to Vegas today to celebrate! This is another big thing because Vegas is SOO outside my comfort zone. We are seeing Calvin Harris tonight which means a super late night, something that would normally stress me out. These DOUBLE CHOCOLATE PEANUT BUTTER cookies are actually good for you! The cacao is a fab prebiotic filled with antioxidants, iron & calcium, peanut butter is a great healthy fat, gluten free rolled oats are a good source of fiber & the coconut sugar is a nice replacement for refined sugar. My recipe is below! #DeliciouslyGutsy — ▪️1 cup peanut butter (I love @TraderJoes organic, unsalted chunky) ▪️3/4 cup gluten-free rolled oats ▪️2/3 cup coconut sugar ▪️2 eggs ▪️1/2 tsp baking soda ▪️1 tsp vanilla extract ▪️3 tbs cacao powder ▪️1/2 cup dark chocolate chips ▪️2 tbs melted coconut oil ▪️1 tbs gluten free all purpose flour ▪️Sea salt flakes for the top — Mix gf oats, baking soda and gf flour together and set aside. In separate bowl, mix together all other ingredients (except salt). Fold dry mixture into wet and mix until completely combined. Drop cookie dough in balls onto parchment paper lined cookie sheet. Press down lightly to flatten until about 1/4 inch thick. Bake at 350F for 9-12 minutes. Sprinkle with sea salt immediately after you take them out. The reality of this salad bowl is that everything came straight from Whole Food’s salad bar, and buried under the lettuce is even more sweet potato and chicken.
