Cross section spanakopita: Added sweet potatoes for flavor and balance. RECIPE: sauté lg onion in 3T EVOO, parboil 3 small sweet potatoes. Mix both with 1 lb fresh spinach, 1C ea crumbled feta & shredded kasseri (Asiago will do if you can’t find kasseri), 6 beaten eggs & 3T Greek Savory Blend. Layer 1/2 lb filo on bottom of 13” x 9” pan using Arbequina EVOO. Press spinach blend onto top of filo. Grate fresh nutmeg over spinach layer. Add remaining 1/2-lb filo again brushing ea layer with EVOO. Dust top generously with our Greek Savory blend. Cut prior to baking. Bake 375, 40 min until golden brown.

THE HOW-TO 🐄
*2 LBS Ground beef *2 eggs
*2-4 cloves crushed garlic
Mix and roll into balls or use a small ice cream scoop, drop on a lined baking sheet and bake at 350 for 20 minutes. .
Pull from the oven and dump in a Crock-Pot with your favorite BBQ sauce or make your own and simmer for 6ish hours on low! .
Serve over rice with some yummy steamed green beans and enjoy!! 👌

This was breakfast yesterday with a super simple 'hollondaise' sauce.. no it's not the real deal but it's delicious and saucy and garlicy.👌 .
This is some fried potatoes with onions and peppers, 2 over easy eggs🥚 and the sauce... .
Blend 1 cup of cottage cheese, the juice of a lemon and a couple garlic gloves in a blender. .
Heat it up and enjoy over anything you wanna!!! 💕🤤

Ok, so it needs a little work.
But with @goodfoodca I have meals prepped and on the table in 30 mins or less. That’s crucial for me after a 2-hour commute home. I’m also working on 3 side hustles in my spare time, so I’m a busy gal.

My all time favorite soup; its an Indian dish so you KNOW its jammed packed with flavor 🤤Gluten & Dairy free. Full of protein and fibre ☺ the cilantro and toasted coconut with the rice and chicken ... is to die for!! Perfect for when #WinterIsComing 🤭☃️ ••
■ Chicken Mulligatawny Soup ■
with Spiced Basmati & Toasted Coconut
4 Chicken thighs 🐓
1 Bunch of cilantro
1 Apple 🍏
1 can coconut milk 🥥
157g Basmati rice
25g Shredded coconut
28.5g Golden raisins
7g Mulligatawny spice •
Peel & thinly slice the carrot into rounds. Peel and thinly slice the onion. Zest & juice the lime, thinly slice the apple. Roughly chop the cilantro leaves and stems.
In a medium pot, heat a drizzle of olive oil on medium-high. Add the lime zest and a big pinch of the spice blend. Cook stirring frequently for 1 min. or until fragrant. Add ghe rice, a big pinch of salt and 1.5 xups of water. Bring to a boil, reduce and let simmee for approx. 14 mins or until liquid has been absorbed. Fluff with a fork 🍴 and set aside
While the rice cooks, heat a large pot on medium add the shredded coconut 🥥 and toast stirring often, approx. 2-4 mins. Transfer to bowl and wipe out the pot.
In the same pot, heat a drizzle of olive oil on med-high. Pat the chicken dry and cut into bite-sized pieces. Add the chicken to the pot stirring occasionally 4-5mins. Or until browned on all sides. Transfer to a bowl and leave any browned bits (or fond) in the pot.
To the pot of fond add a drizzle of olive oil, remaining spices and stir for 30sec. Add in the carrots, apples and onion. Season with S&P. Cover and let it cook 4-5 mins stirring occasionally until the vegetables & apple start to soften. Add the raisins, cooked chicken, coconut milk & 1 cup of water. Simmer stirring occasionaly 14-16 mins or until slightly thickened.
Remove from heat, add the remaining lime juice and season with S&P. Divide the soul between your bowls and top with rice. Garnish with cilantro & toasted coconut!
