Vegetable Curry by #RawChefYin
Playing around with the different variations of vegetable curry to see what I'd like to teach at the 3 November cooking class.
I just used the ingredients that I had in my fridge for this so the main vegetables were carrots, celery and petai beans.🥕
Since I saw @gan_goodfood
sauteing her onions with water only and I also happened to watch a video by @cookingwithplants
interviewing Adam Guthrie where he also talked about oil-free cooking, I decided to omit the added oil in this curry. I would say it still has oil as I'm using coconut milk which contains oil, right? However I made the coconut milk from scratch, using freshly grated coconut and water and squeezing out the liquid. This time, I didn't heat up the coconut milk at all, instead I just added it in after the curry sauce had cooled down. 🌰
Today I made a paste with red onion, garlic, dried red chilli, fresh turmeric root, galangal, and lemongrass. I sautéed it in just water and then added curry powder and cooked it more while I was chopping up the celery and carrots. The celery, carrots and petai are technically raw as I only heated them up for a bit at 45 Celsius. 🥘
Ooooh, and because I saw that @avantgardevegan
used bananas in his Katsu Curry recipe, I figured that bananas would be perfect in my curry too. I initially didn't want to add any sugar at all but I happened to be watching @gazoakley
YouTube channel while making my dinner I thought that would be brilliant as a natural sweetener since we have so many local bananas in Malaysia. Plus I love bananas.🍌🍌🍌 It worked well, thank you for the idea, Gaz!🙏
