•Boneless Chicken Thighs 500gms
•1 Tbsp vegetable Oil
🧂 Dry Rub🧂
•1 Tbsp Corn flour
•½ Tsp White pepper
•½ Tsp Salt
•1 Tsp Coriander Powder
•½ Tsp Garlic Powder
•½ Tsp Turmeric Powder
🥭 Mango Sauce 🥭
•1 Tbsp Butter
•½ Tsp Ginger garlic paste
•½ Tsp Peri Peri Sauce @Jarsofgoodness
(Use a chilli paste or hot sauce in place of peri peri)
•2 Cups Fresh Mango
•Juice of 1 Lime
•2 Tbsp Sugar
•1 Lime to garnish (Optional)
1.Rinse chicken & pat dry. Transfer to a large bowl, toss with vegetable oil. In a small bowl mix together the dry rub ingredients then pour over the chicken, thoroughly coating each piece.
2.Heat a nonstick pan with some oil and cook the chicken pieces until fully cooked through. Feel free to use a griddle pan for the grilled look.
3.To make the mango sauce puree 2 cups mango flesh and set aside. (Use a little water if need be)
4.In a small saucepan add butter, ginger garlic paste and heat through until fragrant. Next add in the mango puree, sugar, peri peri sauce and juice of 1 lime. Cook for 3 mins.
5.To thicken the sauce mix 1 Tsp Corn flour with water to form a paste then add it to the sauce and cook for a further 3 mins.
6.Transfer the cooked chicken to a bowl then pour over the mango sauce. Tossing to thoroughly coat each piece. Garnish with lime wedges and fresh dahnia. Serve immediately.
