Got leftovers, but not enough for an entire extra meal? How about making tostadas out of it? For the one on the left I used leftover taco meat with melted swiss cheese, nappa cabbage, tomatoes, onion and avocado. For the one on the right just simple scrambled eggs, bacon, avocado, tomatoes and onion. Top them with cilantro, lime juice and a dash of Greek yogurt and voila..perfect for breakfast, lunch, brunch or even dinner.

New batch of home made bacon on the way. A bit of time and effort but simple and so worth it. 7 days in the cure of sugar, salt and maple syrup and a bit of rum for extra flavour, then these pork belly’s will be ready for the smoker and will finish their transformation into bacon.
