Artichokes are unopened flower buds that are cholesterol free, low calorie, fat free, saturated fat free, low sodium, good source of dietary fiber, good source of vitamin C, good source of folate, and a good source of magnesium. Choose plump artichoke heads with tightly closed leaves, heavy for size. Pull back one leaf to check heart for black blemishes. During winter, white, blistered or bronze appearance does not affect quality. Refrigerate artichokes in plastic bag up to one week. Keep dry to prevent mold growth.

It's December, and Marguerite's orchard across the street is still pumping out lots of goodies despite the frost, which means she's still open for now. 😊
I marched down the hill this afternoon, freshly baked focaccia in hand, hopeful that she'd accept my offer to exchange bread for branch cuttings to try a propagation project I'm working on.
(People rarely say no to baked goods. It's kind of a magical thing. ❤)
The epic part about choosing "what plants to grow?" in this fashion is that you have a chance to taste before you decide to put too much energy into something. This process also requires filtering based on a mental checklist (as to what makes something delicious), which tbh is the only way I manage to focus half the time.
Anyway, I'm a big fan of this whole "try before you buy" idea, and plan on building with and around it in the near future.
Also. Idk who's planning a road trip next weekend, but if you find yourself near Paso Robles, CA and want to hunt some intense flavors, I highly recommend catching the end of the season at our neighbor's $2/lb u-pick orchard. .
We're talking smoky earthy pomegranates, jammy grapes, brightly floral quince, apples for any technique and application, figs fermenting and drying on their trees... nevermind the loaded olives and persimmons and herbs and rose hips and... galore.
But seriously. It's less than 200 miles from L.A. or SF. (You wanna inundate your foodie project schedule and taste buds with inspiration next weekend or not? 😂 #getonit

Hier vind je niet enkel verse, verpakkingsvrije groentjes en fruit, je steunt er ook kleinere boeren en handelaars mee en bovendien is het ook gewoon heel erg leuk!
Ook als je wat meer seizoensgebonden wil eten is dit een goed plan, want -hoewel je kan opzoeken welke groenten&fruit in dat seizoen worden geoogst- garandeert de lokale productie bijna altijd de seizoensgebondenheid van je aankopen.
Voor nootjes en olijven bijvoorbeeld kan je je eigen potjes meenemen, terwijl het brood in je eigen stoffen zakje gaat.

I really look forward to market day in Salisbury City. It's been running since 1227.
The whole city was born around this bustling market town after the Cathedral was built. Can you imagine going to buy the fruits and veggies back then?!! #oldskool
Part of the fun is the cheeky banter with my suppliers and marketeers as we've come to know each other well. Plus I'm a good customer and buy more fruit off them than some of the local cafes!
Even more so I love to see what goodies they have for me! Each of them become really quite passionate about their tasty produce - bid for at the docks or bought from the local farmers and the enthusiastic gardeners.
Papaya to walnuts, kol rabi to Italian lemon thyme or purple curly kale alongside the humble apple, this market is brilliant for a small city.
Unfortunately the likes of giant out of town supermarkets such as Asda and Tesco vie for business and now deter many shoppers from entering the city to shop locally at such a historic market just because of the lure of free parking and some cheaper prices.
... soooo you know what I'm gunna say..
Please don't line the pockets of some over paid heartless director..
AND PLEASE SUPPORT YOUR INDEPENDENT MARKETS & RETAILERS.
They need you.

My grandfather was a chef in WWII. My dad solely remembers Bourguignon as the dish to bring him back to his father. Since my grandpa died when I was really young, I too feel like I am with him when I make it.
When I was in culinary school, beef bourguignon was one of the first things I learned how to make really, really well. I was so excited, I came home for christmas, made it for my dad, and it brought him to tears. My tough guy, New Yorker father was literally crying over my food, I couldn't believe it. Only then, did I really understand the emotional power and toll food has on us. It can bring you back somewhere you never thought you would go again.
This stew represents not only my growth as a chef, but it represents all of the love, and tribulations my family has gone through to get me to this point all the way back to WWII. When I finally discovered how to make this dish vegan AND gluten-free, nothing felt more right. So with that said - I’m super super pumped to share this ultimate guilt free comfort food recipe with you! We went to the Ptbo regional farmers' market on Saturday and loved it! So much variety and a great atmosphere :) Loved seeing some familiar vendors from our Toronto market days, like @kendalhillsgamefarm
, which brought us back to our roots ;)
There were also a lot of artisan and food vendors, including some with vegan options 😃 We had a delicious energy bar from @tinygreensca
