Masala Kaaju I made for Diwali. Deep fried, spicy cashews. Such indulgence. We like ours fiery. With that nutty rich taste, they can get sooo addictive.

One of the most loved snacks as well as diwali gift box treat were these cashews. The tangy chaat masala, zafrani garam masala (the saffron in there and the golden hue it lends to those cashews, do you see?, love love) these are blends I couldn’t have imagined my masala kaju without.
I discovered Shan’s virgin pink Himalayan salt a few months back,I add it in here with other spice powders for that salty oomph. Pure perfection!
How to make them? Just fry up a pound of raw cashews. Start with mixing a half tablespoon each of spice powders- black pepper,chaat masala, garam masala, red chili powder, roasted cumin powder, pink salt (or table salt or both). Taste and adjust whichever spice as per your liking- hot, tangy, salty, fiery. You decide! Massage the fried cashews with that spice mixture. Make some chai and go munching :)
