Repost: TAG FRIEND WHO WOULD LOVE THIS! 😍💪🏼 Quick quinoa burger for your summer grilling!😍💪🏼 By @feelgoodfoodie ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 1/4 cup uncooked quinoa 2/3 cup water 1 15 oz can black beans rinsed and drained 3 oz tomato paste 1 teaspoon paprika 1 teaspoon onion powder 1/2 teaspoon garlic powder 1/2 teaspoon oregano 1/2 teaspoon salt 1/2 teaspoon pepper 1/3 cup breadcrumbs 1 tablespoon olive oil Burger buns and toppings of choice INSTRUCTIONS In a small pot, cook the quinoa with water and add salt to taste. Bring a boil, cover and simmer for 14 minutes. Uncover and fluff with a fork. In a large bowl, add the rinsed black beans and mash the bean fully with a fork or potato masher. Add the cooked quinoa to the black beans, then add the tomato paste, all the seasoning and the breadcrumbs. Form four patties. Heat olive oil in a grill pan, place the quinoa burgers in the pan and fry over medium heat for about 4 minutes per side. We come home from swim practice at 7pm and kids need to be in bed by 7:30, that means we need to start eating dinner at 7:05 the latest. . . For those days I love to have a meal in the freezer that I can just pull down into the fridge the night before or the morning of to defrost and then just reheat as soon as we come home. . . This is a strategy we use a lot in the 21-Day Clean Eating Challenges and there are days during the challenge where we don't have to cook ANYTHING at all while still enjoying healthy nutritious meals made with clean ingredients. . . A few hands have asked me about my workouts, so here's a snippet of one of the exercises I do! (Sorry that IG cropped it a bit oddly). I prefer workouts that work multiple muscle groups at one time, if possible. I find them, personally, more effective and the best use of my time. I used lower weights today, just because my workout on Monday was intense, and I didn't want to blow out my shoulders (because that is not a fun time). 💪🦵 Usually, when doing this type of workout, I do them for a minute, then rest for 30 seconds and repeat. When I'm weightlifting I do sets and reps, rather than timed exercises.🎽 . Thank you @goodybeats - for those that know, the struggle is real 😉 In all seriousness, there has been a lot in the UK press recently about how the standard adult diet is falling well below (i.e. eating less than half of) the recommended 30 grams of daily fibre. (I imagine the trend must be comparable to the SAD - Standard American Diet). The good thing about following a Ketogenic lifestyle is that generally we practice a more ‘mindful’ approach to what we eat as a whole. Although there is a common misconception that when you ‘go Keto’ you eat nothing but meat, dairy and nuts - what they fail to appreciate is that there is a wealth of leafy green, and no-to-low-carb, vegetables that provide you with a wealth of fibre and micronutrients. I tend to eat handfuls of spinach, broccoli, cabbage and cauliflower and oodles of grass-fed-butter-fried asparagus and a daily avocado to keep my fibre intake higher than the average non-Ketogenic UK adult. Ingredients for 2 portions: 200 gr of any type of mushrooms - 50 cal 200 gr of brussel sprouts - 86 cal 20 gr of fresh dill - 3 cal 1 Tbsp of Extra Virgin Olive Oil - 120 cal Sea Salt . . . Very easy and fast to cook. Eat with your favorite protein! . . . Preparation: Dice mushrooms, dill and brussel sprouts. Fry mushrooms with olive or sunflower oil for about five to seven minutes. Add brussel sprouts and dill and fry for another ten minutes on a low fire. Enjoy your food . . . Nutrients: 1 portion - approximately 130 calories. TAG FRIEND WHO WOULD LOVE THIS!! 😍❤️ Here’s how you make this exceptionally tasty Red Thai Curry: (This recipe will easily serve 4 hungry people)👍🏽 Ingredients: 2 tbsp coconut oil 1 white onion (finely sliced) 4 cloves garlic (finely sliced) 2 inches ginger (grated) 2 red chillies (finely sliced) 2 red peppers (finely sliced) 1 zucchini (courgette) (finely sliced) 2 cups coconut cream (from cans of full fat coconut milk) 1/2 cup red thai paste (always read the label) 1 cup baby sweetcorn (sliced) 1 cup tenderstem broccoli 1 cup mangetout 1/2 tbsp coconut sugar 1/2 tbsp salt 1/2 pint coconut water (left over from the coconut milk cans) 1 cup roasted butternut squash 2 limes (juice) 1 cup cilantro (coriander) leaves Serve with: Fluffy rice (I like basmati but if you prefer something else, that’s your call!) I bust my butt everyday during my workouts and for what?? To throw it away once I hit the kitchen. . Hell No!!! . Happy Saturday friends! Just still over here reminiscing holiday food 👆🏼🤤 . It is SO exciting for me knowing how many more people are becoming away of the incredible relationship between food and Mental Health. When I started studying my Bachelor of Nutrition with a Major in Psychology 5 years ago, people thought I was crazy for studying two things which had ‘nothing to do with each other’, but I was CONVINCED. Fast track 5 years and here we are today 💃🏻 . I have seen so many people in my life battle this journey and have at many times felt so helpless, wanting to do more than just ‘be there’ for them. ➰ . So this me doing something! My main focus here at Young Consumption is using nutrition to aid in the management and alleviation of mental health issues and symptoms and I can’t wait to continue providing you education on how YOU can do what’s best for you mind and body 🙌🏼
