Umm say hello to my best chicken salad ever! I wanted to make something quick and easy for dinner, and I bought some chicken breast tenders that I intended to use for parmesan crusted chicken but wasn't feeling it today, and that's how this chicken salad came about!
I cut up my chicken breast tenders in half, and marinated with some salt and a lot of pepper. Poured a little olive oil in a pan and sauted the chicken and covered for about 20 minutes. Boiled 2 eggs in a pot. Finely chopped up 1/4 of an onion. Then I shredded my chicken by hand and chopped my boiled eggs. Combine the chicken, eggs, onion, 3ish tablespoons of mayo, pepper, chopped parsley, and dried dill, and some paprika. Mix it up and voila!

Combined eggs, red peppers, green peppers, yellow peppers, a little hash brown shreds & onions. Throw some Greek yogurt & saracha on top...boom YUM!!!
So fresh and so green. 🌿 arugula + asparagus + grilled broccoli (my number one new fave) + tempeh. Happy heart, full belly. Ahhh.....

So many people create or make single serving recipes as a form of control. You’ll hear these people say “I just can’t keep those in the house”. If you’re one of those people, cookies have too much power over you! You should feel confident in identifying the situation in which you truly are craving a cookie, then satisfying that craving. If you do this consistently, you won’t feel the need to eat the whole batch of cookies because you deprive yourself.
However, single serving recipes can be so clutch. Especially when you always crave a different type of cookie!
Last night I was in bed at 6:15 because that’s the kind of day I had. I ate dinner (a yum salad from @plumbistro
Chop’t) but two hours later I was hungry. And I was hungry for a cakey, gooey, peanut buttery cookie. Now. I never crave pb cookies and I’ve told you guys a million times that variety is key for me. Sweet potato burrito:
In a skillet, heat coconut oil until it sizzles when you flick water into it.
-While it's heating, slice 1/3 sweet potato very thin and drop carefully into pan (once oil is at temp). -Dice one regular size carrot. Drop into slillet
-dice 1/2 jalapeno. Drop in. -season skillet with 3 T cumin, 2T garlic
-dice 1/4 white onion. Drop into skillet until onion is brown.
-while onion is browning, heat a tortilla. 8-10 inch diameter is best. If your skillet is small enough you can just sit the tortilla over the top like a lid. Flip after 30 seconds. -move tortilla onto a plate, and dump the contents of the skillet into said tortilla
-Add hot sauce, mixed greens, 1/4 diced roma tomato, and shredded smoked chipotle gouda.

The tricky thing about dinner recipes is that they usually aim to serve 4 or more people which is a little more leftover goulash than I need. I'm all about leftovers, but I'd rather not make a family sized meal when I'm only cooking for one. This goulash makes enough for 2-3 servings (depending what your definition of a serving is).
