Where are my emotional eaters at?🙋🏽
I would call myself more of a stress eater than an emotional eater. When I’m stressed out I revert to old habits and snack, and snack, and snack.
Today was busy from the minute I walked into work until I left and I didn’t pack a lunch because I was running late. The old me would have picked a drive thru but instead I went to B.Good and grabbed a Caesar salad 🥗 • Slow Progress is still Progress. • I’m not perfect and I don’t strive to be, my focus is more on balance and I’m pretty happy with myself for choosing a Caesar salad today! 😊
What do you grab for lunch when you are pushed for time?
My lunch today was prepared and ready in just 5 minutes.
1/2 bag of prepared salad leaves, added spring onion, celery, peppers, radishes, feta cheese and some sweet corn. Finally I added some cooked salmon.
Delicious and nutritious
Some times cooking for one sucks. You see great recipes or your fancy cooking something but the effort for you isn't worth it. Or cooking is just too much some nights. That's why as a singleton I try and batch cook things that are even better 're cooked and still delicious and healthy for those mid week barrrgh night's.
This sausage, puy lentil and trumpets of death (any dried mushroom will do) is a real fridge and store cupboard special. It tastes so good even when 're heated from frozen. #singletoncooking #cookingforone #batchcooking
What do you eat when you're lonely? Usually, for me, it's a lot of takeout while watching Netflix and feeling sorry for myself. This time, I was determined to do better, so I rustled this breakfast up from odds and ends in the kitchen. Leftover chana masala got heated up and garnished with fresh coriander and pomegranate arils. As an aside, I do love functional garnishes like these that don't just look pretty, but also really add to a dish. The last of the dosa batter got stretched out with the last of the rice flour and a chopped scallion. This I then cooked on my tawa, low and slow, in an inordinate amount of oil, until it was brown and crusty. I ate it all with relish and didn't even think of sharing. Of course, I then ordered in and ate cookies for dinner while watching Brooklyn Nine-Nine.
Adulting is Sisyphean.
Today I stopped by the cute bakery in @luckysupermarkets.
I got to watch them make a race car themed birthday cake! The detail was incredible. They were also selling these beautiful artisanal pumpkin pies for one. A great option for the solo Thanksgiving foodie who wants to treat themselves to something special. 🦃 🥧

. True it’s a larger portion than I’d normally make, but no bun means more fries! 😀
A few people have asked what I’m having for breakfast these days. Honestly, I have a 210 calorie frozen breakfast burrito every day. Probably not the healthiest option, but it makes life easier while I’m #soloparenting
and adjusting to finally having a school-aged kid! 😆

I struggle with staying on track with my nutrition. Especially when the hubby works nights.
Who wants to cook a big meal just for one?! Typically I would go home and binge eat anything from the pantry that I didn’t have to cook i.e. cereal, chips, frozen pizzas... I still don’t like to cook - but I’m re-training my brain to reach for healthier meal options. Like last night- toast, PB and a whole banana.
