It's amazing what I can accomplish due to my insomnia... This was such a simple yet super tasty meal. I've never made anything like this before but it's definitely going to become a staple.
I have been feeling worse than normal lately and I think what I eat definitely affects my chronic pain. I know gluten is a trigger for me and I'm also lactose intolerant so I go light on dairy when I can (cheese is definitely a weakness of mine). I've been really bad at staying away from gluten while being on a tighter budget but I think if I stick to stuff like this it'll make it much easier. I made this with lots of leftovers in hopes to start feeling better. I need to start listening to my body. This was great and hopefully a good start to continue eating this way!
This is what's in it (more for my reference but it's really good if you wanna try it!) 😊
1 cup uncooked quinoa
2 cups water
1 vegetable broth cube
1 can black beans, drained
1 can diced tomatoes
1 cup frozen corn
Crushed red pepper flakes to taste
Salt & pepper to taste
Dash Onion powder
A pinch of sugar
Bring all but corn to a boil and then cover and put to med/low for 20 mins. Put corn in halfway through. Serve plate with half an avocado. Sweet n’ sour sesame tofu is now on my blog!! I used to have a quick fried tofu recipe, but this is now in its place with a lot more flavour. Cooked crunchy and served with fried veg is my favourite way to enjoy this! 🌶❤️ link in my bio!

Açai is the big craze at the moment BUT is it really that healthy? -
The berries themselves are very low sugar, packed full of antioxidants and are great for us, the problem lies with what is included in most açai bowls.
Most bowls don’t use the entire açai berry but instead use a mixture of berries that are then blended with other fruits high in sugar like bananas and mango, they are also often blended with coconut water which is even more sugar! they then add other sweeteners like honey, dates, syrups and fruit juices.
Then comes the toppings ! This means extra fruit and granola, packed full of sugar!
It’s a sugar nightmare.
Sure they are a great every once in a while but consider them a treat just like any other dessert. -
Instead make your own smoothie bowl at home with veggies, a little fruit, good fats like avocado, nuts and seeds and a fruit free low sugar granola for topping 🤗

Day Two: TRACKING YOUR CALORIES 🥑🍳🍠🧀 Nutrition will dictate 80%, if not more of your results !!! BUT Before you start dramatically changing your diet, the first thing you should do is track how many calories you are currently eating. That way, you know how many calories you are initially over/under eating, from there, you can then decrease or increase calories depending on your goals.
Tracking your calories has many benefits:
* Helps your to make better choices because it keeps you accountable * Food awareness- You learn how many calories you are actually consuming, it’s generally an eye opener for most people
* Takes out the guess work * It’s free 🙌🏻 I use the app “my fitness pal” to track my calories
Over the next few days I encourage you to start tracking your calories to get an idea of how much you are actually eating.

Sweet potatoes are such an easy, filling lunch!! And so versatile with what you can top with. We baked ours at 450 degrees F for roughly 30-40 mins. I’ll be posting the simple tomato lentil topper we used soon, also finished with guac as always and some crunchy tortilla strips. So satisfying and a great idea for meal prep as you can make a few all at once! Happy Monday!

🍚TOFU AU CURRY 🍚
Une recette que je n'avais pas cuisinée depuis longtemps, simplissime et que j'aaadooree !!! 🤗
Faire revenir le tofu couper en dés dans de l'huile de coco non désodorisée, ajouter le coulis de tomates ou la sauce tomate, les épices de votre choix ( j'ai mis du curcuma, sel, poivre, gingembre), n'oubliez pas le curry !
Ajouter enfin les légumes cuits de votre choix (j'ai choisi des haricots verts), laisser mijoter quelques minutes et ajouter enfin le lait de coco 🥛
Servir sans tarder, avec du riz basmati 😋

Back to packed lunches! I want to show more of what I bring with me over this last semester to hopefully give some ideas. Every day is different depending what’s going on, how much I ate in the morning and what not. It can be super plant based like today or higher in carbs with baking if I’ve made any. Today I packed for work which normally consists of less food since I don’t have as much time to eat. I find in school I tend to snack more and get hungrier so I pack more. The more I make lunches a daily routine the faster and easier they get! •
Today I cooked some wild rice and topped it with fried tofu (recipe coming soon) and fried veg. Then some cantaloupe, veggies & hummus, as well as a @squareorganics

This product is advertised as a great form of protein, high in fibre and low in fat, what they fail to mention is this can of beans has almost 3 teaspoons of sugar !!!!!! And, it is meant to serve one person. Yes, to some people 3 teaspoons may sound minimal, but you have to realise that it is little things like this that add up throughout the day to make your sugar content skyrocket.
Also, there is a high level of refined salt in each can ! Always read your labels 🙌🏻

Garlicky mushrooms, spinach and tofu scramble 🙌🏼
Ive found that adding a little seasoned milk as you cook the tofu helps to keep it soft like scrambled egg whilst giving it a nice hit of flavour 👌🏼 today I used smoked paprika, garlic salt cumin seeds and turmeric 😁
I used big and juicy field mushrooms which keep their meaty texture and absorb the garlicky juices nicely 😋
