When our bodies and minds are enriched and powered with the bountiful supply of natural, rainbow coloured raw foods from our planet, what better by-product is that of the free gift of compassion. You love all creatures in every form, respect them and see them as part of our earthling family and realise that there is no need for any animal to suffer or be sacrificed for a human's pleasure, for entertainment, clothing, a trophy, to be experimented on or for food.
Meat and dairy cause cancer, heart disease and can be the protagonist for a myriad of other diseases or illnesses. We are not separate compartments like robots, our bodies and minds are so intrinsically connected.
Whether it comes from a place of compassion or from wanting to improve your health, when you stop eating meat and dairy the shift happens when a trip switch rewires and reprograms your entire way of thinking, feeling and being. For the majority of us, we do not exist in a place where killing an animal for food is for survival, it is choice. If you choose to, you consume their adrenalised fear, their sadness and their death. Your body does not thrive on being a graveyard. There is a quote that goes, ‘Once your mind has been stretched by new dimensions, it can never go back’, and this could not be more poignant.
People can tell you their experiences, you can see the changes in them, but you can’t reach into somebody’s mind and physically rewire it yourself…How does anyone know if anything works if not by experience. I love the open minded people, the ones who are questioning more. We are not immortal and extinction of species really does mean forever but I hope 2018 brings about a fresh new wave of more shapeshifters to join the conscious revolution. Oat & Raisin Cookies 🍪🍪🍪 I’ve not done any baking in aggggges... well apart from two lots of banana bread recently but that doesn’t count! 😂 I’ve been wanting to get back in the kitchen and play around with some recipes for a while so today I decided to try out these oat cookies, they’re soft, chewy and go perfectly with a cuppa ~ go on, stick the kettle on!
• 150g oats
• 50g dark brown sugar
• 100g mixed dried fruit
• 1/4 - 1/2 tsp of mixed spice or cinnamon
• 1/2 tsp of baking powder
• 40g coconut oil
• 3 tbsp of milk
Preheat the oven to 180°c and line a baking tray. Add 100g of oats to a blender and blitz for a few seconds until a flour forms, then add to a mixing bowl with the other 50g of whole oats, sugar, dried fruit, baking powder and spices, then stir together. Melt the coconut oil and pour into the mix, adding a tbsp of milk as you go along. Stir until the cookie mix starts to combine, you may need to get your hands in and bring it together to make a big ball. Then portion out golf ball sized pieces and flatten out on the baking tray. Bake for 12-15 mins and leave to cool, the recipe makes 10 cookies 🍪

At a wedding last night, and there was a vegan entree option!!!! Grilled tofu with quinoa, pickled vegetables, and a balsamic glaze. I would give it a 7/10 probably, they tofu wasn't very flavorful but the veggies were delish!😋
Fried cauliflower sandwich on sourdough baguette with grilled paprika hummus & ranch dip 💛
2 large sammies
1 big sourdough baguette
Plenty of thinly cut iceberg lettuce
Vegan ranch, storebought or homemade
Grilled paprika hummus
1 can chickpeas, rinsed
Rind of 1 lemon
Extra virgin olive oil, to thin
1 red paprika, grilled on the stove/bbq until blackened
1/2 t cumin seeds, toasted
Himalayan sea salt, to taste
Juice of 1/2 lemon
1/4 t cayenne powder
Remove blackened skin from cooled paprika & dice coarsely. Place all ingredients in a blender & pulse til smooth.
Fried & battered cauliflower
1 small cauliflower, cut into florets
1 t salt
1/2 t each of turmeric & paprikapowder
1 1/4 cup flour
1 1/2 cup water
1/2 t baking powder
1/2 t salt
Lots of freshly ground black pepper
1/4 t paprikapowder
1/4 t smoked paprika powder
1/2 t turmeric powder
1 T cornstarch
Sunflower oil, to deep fry
Marinate cauliflower in plenty of boiled water with the stock, salt & spices for up to 6 hours. Mix all ingredients for the batter in a large bowl. Add florets & coat. Drop into pan with oil at medium high heat. Fry until golden brown. Strain on paper towels. Assemble sandwiches. Enjoy!
