Trying to create a complete #protein with legumes and grains this week. Eating less meat and more #vegan protein meals has been waaay better in many different ways than I ever thought or planned. I still eat some meat but it's less and less as I discover new options. Roasted Chickpea + Veggie Wraps 🐥 . Tonight’s dinner was one of our top favorites we’ve made. It was super easy and quick- what we pride ourselves on. The thing that took the longest was the wedged potatoes which aren’t pictured and that isn’t even complicated, just put them on the tray to bake at 425 degrees. 😎 . Now let’s get to it! Ingredients: shredded carrot, lettuce, avocado, everything humus, baked chickpeas, and fresh picked tomato and pepper from my garden. The spinach wraps are from @toufayan . The seasonings we used: garlic powder, onion powder, salt, pepper, red pepper, red pepper flakes, and lime juice. . This dish just screams “summer time” to me for so many reasons. It’s light, but filling, colorful and scrumptious. . When John first suggested this meal for tonight I was a little skeptical/hesitant to say yes right away because I thought I wouldn’t be full. Turns out, I’m still stuffed from it. I think that’s the problem with some people. They aren’t only closed off to healthier options for whatever reasons, but maybe also because they think it won’t be filling. Truth time: I took a 3 month hiatus from my consistent workouts 😬🙈 . For the past few years I’ve been on my game, completing workout program after program. Some being 3 weeks long , some being 30 days, and some being 8 weeks. I’ve done them (some more than once) from start to finish. . A few months ago, I just hit a wall. I’ve lost my mojo. I’ve tried digging deep, and still can’t find my motivation. . Today that stops. Today I’m committing to completing a new 8 week workout program - START TO FINISH whether I feel like it or not 😜 . 3 Minute Pesto dinner! I’m definitely using this recipe on a busy day. Heat up frozen peas and frozen diced cauliflower in a pan for 3 minutes, toss some pesto in, mix and serve. So much faster than pasta. Much healthier too. 28 G of protein

Can you believe this is vegetarian?Chicken-fried mushroom po-boy with pickles, a house made aioli, and a HOT 🔥 HOT🔥 HOT sauce. . There were no chickens harmed in this sandwich. Chicken-fried is a cooking technique where you batter the main thing, in this case mushrooms, and fry it. This sandwich could have been vegan, but I suspect that would require removing the aioli (Don’t know... didn’t ask). . It's seitan mo fos!!! . Young un was wheat intolerant so the vital wheat gluten I ordered for bread making has been sat lonely on the shelf. Since learning that we likely all struggle to digest the modern hybridised wheat we get in the shops, I hadn't intended to go back to eating wheat in the way we had before. However now it's looking like she can cope with a bit, I was dying to try out one of the amazing @miyokoschinner 's #veganpantry seitan recipes. This one is "unpork" with a stock cube and extra tamari added to the cooking broth (which has left the most incredible juices that look a bit too meat like?! Saving for a sauce base as recommended!). Such a tactile process; this smelled and felt great even at dough stage - daughter was ripping it off to eat it uncooked! Baked Turbot over herbed Farro with a side of Sugar snaps . I made the dish in parchment over spiraled zucchini and carrot with garlic S&P and thyme. Topped each parcel with a lemon slice , thyme sprig and 1/2 tsp smart balance . Farro has cilantro a little garlic and coriander . The sugar snaps were blanched then sautéed in a little EVOO, garlic and S&P , then I added Teriyaki sauce and sesame seeds. We had a lecture on beans and grains at @naturalgourmetinstitute last week and I learned something that blew my mind... • Even though beans and are an EXCELLENT source of protein, the average American eats only 7 lbs of them per year. Compare that to the TWO HUNDRED AND FIFTY lbs of MEAT consumed yearly and I’m like WHOA pass me the legumes! • Y’all know I have no issue with a little omnivore action, but beans are cheaper than meat, shelf stable, and DELICIOUS so why not get some more magical fruit in my life? • The burger above is black bean-based and I topped it with a chipotle cashew mayo, romaine, tomato, cabbage, caramelized onion, avo (DUH) and used a sweet potato as my bun! As you guys may have noticed, I haven't posted anything during the weekend. After spending hours on end all week infront of the pc working, I thought I deserved some off time from any technology involving screens 😅 My eyeballs deserved a good rest and for any of you out there who work long office hours infront of the pc should do the same!
