We were pleasantly surprised, not only with how wonderful the #vegan
options were in Iceland, but how much variety and fresh food that was offered! It was one of our most memorable trips abroad, we’d go back in a heartbeat! Also one of the most beautiful countries we’ve ever seen!💕🙌

Hello Hello! Bueno diassss! antes de cualquier cosa recuerden la cita que tenemos hoy a las 5:30pm un en VIVO de mi clase de yoguita con una sola intención “compartir” 🥰
Y ahora si! les dejo esta receta tempranito porque me enredo y quiero que la hagan pa hoy o mañana le digan a la señora q les ayuda o a su mamá... no se 🤷🏻♀️, pero que cuando vuelvan a almorzar la tengan lista (las afortunadas que aún tienen el hotel mamá)🤭
En fin como sea q la hagan o quién se las haga seguro va a quedar muy rica!
Sofríen en aceite de oliva (poquito 3 cucharaditas maso!)
1 taza de ahuyama cruda (debe ser picada pequeñita para q pueda quedar blandita rápido)
ESTO LO HACEN POR 8 MIN MASO HASTA Q LA AHUYAMA ESTÉ BLANDITA, REVOLVIENDO CONSTANTEMENTE
1 cucharadita de comino
1 cucharadita de jengibre en polvo
1/2 cucharadita de cúrcuma
1 cucharada de curry
REVUELVEN 30 SEG +
Luego, llevan esto al procesador con:
1/2 taza de agua
1/4 de taza de leche de coco en polvo la mía es @we.organic
Agregan sal y pimienta y vuelven a llevar la salsa al sartén, agregan 2 tazas y media de garbanzos cocinados (yo puse a remojar 1 taza y cuando crecieron y los cocine salieron dos tazas... yo no los iba a usar todos, pero ajá! era mucha salsa entonces le agregué esas 2 tazas y media y obvio me sobró la otro plato! (Cuando habló de tazas recuerden que son Tazas MEDIDORAS, eso lo consiguen en cualquier supermercado)
Bueno!, revolví por un min mas, a fuego medio bajo y listo. Acompañe con ensalada con espinaca fresca y vegetales encurtidos (en el post de nevera les digo como lo hice)
Chauuuu espero que no se sobrepasen con los LIKES!!! Mentiras mentiras 😘😘😘 todos los que quieran 🤣✌🏻

Veggie Soup since its Meatless Monday (...everyday for me 🌱) I had veggies I wanted to use before they went bad so I threw them all in a pot and boiled them until they were soft and this happened 😋

Kept it dairy-free and meat-free, and just used veggies as toppings, but you could easily add your favorite cheese, meat, etc. to customize. Oh, and fresh basil 🌿 is a MUST! 👌

in the Uptown neighborhood on Day 2 of vacation. Day 1 was filled with fried goodness, so this was a welcome retreat back to additive sustenance. So what is it?
-Kitchari is the traditional cleansing food of Ayurveda, made of a mix of split mung beans and in this version, lentils and spices like cumin, turmeric and ginger.
-It improves Agni, or the digestive fire (ie metabolism). It’s easy to digest, filling and the protein content stabilizes blood sugar.
-Mung beans also have a natural detoxifying effect essential after a French 75 and beignet 😉.
If a salad loaded with spirals of beets, carrots, avocado and kitchari qualifies as a cleanse, I’m all in! Anyone else ever done a cleanse and lived to tell the tale? Also, let me know if there are any other spots I need to hit while in New Orleans!

Love these quick and nutricious meals that I can throw together last minute without ever having to resort to take out. This bowl consists of a bunch of staples i have in the fridge such as pre-roasted beets and squash that I froze and roasted potatoes and brussel sprouts that can bake in the oven while I do other things. The protein I chose today are @yvesveggiecuisine

- This is a great fall/winter meatless dish. This dish is very hearty, thick, stewy, great combination of butternut squash, chickpeas and lentils, savory, flavorful, have a bit of a spicy kick, very satisfying, warming, comforting, healthy, vegetarian and delicious! I could eat this everyday!

MY MODIFICATIONS: I started off with a large butternut squash weighing 3+ pounds. After peeling, discarding innards and cutting into cubes, I was left with 2.5 pounds of squash. I decided to use all of it so I increased the vegetable broth to 3 cups, salt to 2 tsp. and black pepper to 1 tsp. I simmered the stew for 45 to 50 minutes or until the squash was tender. The stew cooks up thick and stewy. It will thicken more as it sits in the refrigerator. You will need to add a little more vegetable broth to thin it out a bit during reheating.

Last meal before the Thanksgiving order madness! This one is everyone’s favorite and I can’t disagree. Sweet potato glass noodles with veggies, ginger soy tofu, and peanut sauce.
My mum sent me a gousto box this week (like hellofreshso) I have 4 recipes to make and each recipes are for 2 people (8 meals in total for the week). Today I made Harissa Hummus, roasted veg and freekah salad. This is the first time I’ve ever made hummus myself and it was delicious and so so easy. I’ll be making this so regularly from now on. All that’s needed is tahini, chickpeas, olive oil and lemon juice & then any extras to make flavoured hummus. This recipe took me about half hour it was delicious 🌱💚
