It's my last meal in Vietnam (well, for now anyway!) so I went all out and got a big plate of fried tofu. Silken tofu, battered and fried so that the outside is crispy while the inside just melts in your mouth. Can't say it's at all healthy - but definitely a foodgasm!

You ready? This is great for a meatless night / lunch and is Oh-So-soothing this time of year (the spices are -buzzword alert- Ayurvedic afterall). My trick is that I use the Food Network recipe for ‘Ree’s chickpea curry’ (Easy to Google) only I make it more vegan (and I promise you won’t regret it as it’s better this way;) The way I do that is this: Simply sub out the honey for agave. I also kick up the sriracha (hot sauce) up to 3 tablespoons instead of two. If you find that yours is two watery after following the recipe and that it won’t reduce to this delicious paste, don’t mess around, just turn the burner off for a minute and drain off any extra broth then simmer again. Allergy Free Chocolate Cake:
1 3/4 C all-purpose gluten free flour*
3/4 tspn xanthan gum
1 C sugar
1 C maple syrup
3/4 C cocoa powder
2 tpn baking soda
1 tspn sea salt
1 cup vegan buttermilk (1 C plant + 1 tbsn lemon)
1/2 C canola oil
1/2 C aquafaba (liquid from chickpeas)
2 tspn pure vanilla extract
1 C hot coffee
Preheat oven to 350* and grease 2 8-inch.
In a bowl sift together flour, xanthan gum, sugar, cocoa powder, baking soda, and salt.
In a separate bowl, whisk together the aquafaba, buttermilk, maple syrup, oil and vanilla.
Slowly mix the wet ingredients into the dry ingredients. Mix completely.
Scrape down the sides and bottom of the bowl and mix in the hot coffee.
Pour the batter (it will be thin) evenly between the two pans. Bake at 350 degrees for 35 - 40 minutes.
Cool completely before frosting. *1 1/2 C superfine brown rice flour, 1 1/2 C sorghum flour, 1/2 C tapioca starch, 4 tsp baking powder, 2 tsp xanthan gum. (Or your gluten free all purpose flour if choice)
1 C soy-free EarthBalance
3 C powdered sugar
1/2 C unsweetened cocoa powder
1 tspn vanilla extract
1/4 C dairy free milk
Cream butter. Add powder sugar, cocoa powder, and vanilla. Add milk 1 tbsp at a time until desired consistency.

I'm learning more and more about plant based🥗 nutrition, so check out some facts BELOW⬇️
Protein: The combination of oats and chickpea flour packs a protein punch👊🏼 The recipe I use calls for 1/2 a cup chickpea flour 3/4 cup which = about 24g protein. I try to meet the RDA for protein intake, but I don't obsess. Why not? Because.... plants have protein; some have more amino acids and some have less (1). I eat more plant protein because It is lower in calories and associated with better health outcomes (2).
Plant based Iron: Personally, I get my iron from plants. I grew up vegetarian, but didn't understand how important iron is, or how it's absorbed. My son studies public health and he mentioned studies showing a whole food plant based diet ensures women will meet adequate iron intake (3). Furthermore, heme iron has been linked to coronary artery disease (5).
Fiber: Filling fiber is essential for feeling full and satisfied without blood sugar crashes or hunger pangs (4). I've noticed how good I feel when I opt for chickpea/oat pancakes for lunch. Much better than mindless shopping for food. I like to #mealprep

LOOKING BACK. Well it’s officially been one year for me since eating no 🐣🐮🐷🦃🐑. I still eat fish and occasional dairy products including eggs, cheese and cows milk baked into food (like pancakes). I am posting this to celebrate a milestone for myself towards a healthier whole food, plant based future. My reasoning for this switch...well maybe that’ll be another post another time. For now all I know is my body feels stronger, it feels lighter, food tastes better (taste buds have been tweaked it seems), I have more energy and rarely feel sluggish. My skin has almost totally cleared up (it’s not perfect) but new breakouts are extremely rare as compared to before. Above all else I just feel good, not only when I eat the food but afterwards my body is happy! I don’t believe in “diets” and we want to label everything today such as “gluten-free,” “vegan,” “Keto,” or whatever category we can fit you into. If someone has different food choices then you than that’s OK! I honestly can’t think of how many times people have made snarky or just plain rude comments because what I choose to eat is different from them (I never seemed to have this issue eating “a traditional western diet.”) Eat what works for your spirit and body ☺️ Ima get hippie level 7 over here and say I feel like I’ve been “awakened” since starting this new food journey. I’m so happy when I get to share yummy recipes to show how easy it can be to incorporate more plant based food into your meals. 🙏🏼 🌱
