Normal mac n cheese recipe but we replace the butter with dairy free spread, milk with almond milk, cheese with dairy free alternative. I had butternut squash noodles spiralized in the fridge and had a few minutes to kill last night so I made a little #butternutsquash #broccoli
mac and cheese. I made a white sauce using grass fed butter, coconut flour, coconut milk and shredded cheese, mixed it in with the sautéed veggies and topped it with a touch of pecorino. I’ll bake this at 375 for 10-15 minutes until bubbling and brown. 🥦🥥🧀PS: I definitely don’t count cheese among health foods HOWEVER, my daughter has a milk allergy (specifically to whey), but she is able to eat dairy products that are cooked for at least 10 minutes. We have been instructed by her allergist that regular inclusion of cooked dairy into her diet will help her outgrow her allergy and I’m always looking for ways to do this as healthfully as possible. She definitely enjoys pizza on occasion but this is another fun way to hit her weekly dairy quota...and we are all hoping that she will be able to lead an epi-pen free life soon!

A mild curry, suitable for all the family, including those with sensitive tummies. One of our family favourites.
Over the last month Katie has had many different diagnoses from Molluscum, to flea bites, to chickenpox, hand foot and mouth & finally fifths disease. We never got a for sure diagnosis but we had given her milk after running out of her formula. Well after two weeks and switching back to formula and then back to milk over a week ago they have returned. I do not know what is going on but I'm about to lose my marbles. Either she is just really unlucky and got "hand foot and mouth" again or it's a milk allergy.
If anyone has an idea of what could be happening we would love some input.

My squishy baby bear is getting an allergy test done today so we can finally figure out the trigger foods that are causing her allergies. She’s a breastfed baby so it’s actually what I’m eating that’s making her sensitive. It’s been challenging to say the least. I’ve cut out so many things from my diet that we’re staples! So we are doing our best... she has had a hard time packing on pounds Bc of the sensitivity so we started supplementing one meal per day with a special fortified hypoallergenic formula. We try to have James feed her so she doesn’t confuse the bottle with breastfeeding. She definitely loves the bottle- and gets frustrated with my breasts after. It’s been a struggle and I am so happy to be figuring bf out the problem! I’m in an online group called Vegas Crunchy Moms and a nutritionist reached out to me, thankfully. So off we go to investigate the cause.
Fish and Chips Spanish Style 😋🐟🍟Our last meal on this beautiful island and as we were at the port had to try some of the local fish. Found a lovely local restaurant and order red snapper, tuna steak and prawn all grilled to perfection.

pizza tonight. Grabbed the recipe for the dough from @foodrepublic
and chose my own fav toppings. We’ve always been #pizza
mad in our house and i was so glad to see Sally being able to join in.

✨Muffin Recipe ✨Made some low sugar, gluten free “PB & J” muffins for the kids today! My daughter ate 2 in under 5 mins... so I think I’ll call it a win. .
2 cups rolled oats
1/2 cup almond flour
1/2 tsp salt
1 1/2 tsp baking powder
1 large egg
1/3 cup unsweetened milk
1/4 cup nut butter
3 Tbsp honey or maple syrup
Frozen or fresh berries
- Preheat oven to 350 and prep muffin tin with liners.
- In a large mixing bowl, combine the oats, almond flour, salt and baking powder. Set aside.
- In a medium-size mixing bowl, whisk together the all the remaining ingredients except berries. Combine wet and dry, then stir in berries.
- Spoon batter into prepared muffin cups, filling each one to the very top.
- Bake for 20-24 minutes, until the tops of your muffin cups begin to turn golden brown. Cool for 10 minutes before eating.
Note: I added hemp seeds, a chia and a flax egg. I also left out the real egg. I didn’t have enough oatmeal either so I did more almond flour.

Ah remember those days you could just rock up to a restaurant and have a choice of the full menu?! Totally something I took for granted at the time. Now it's a case of researching menus online, phoning in advance, scouring through allergen booklets, double checking with the waiter, triple checking with the waiter.
It was a long time before we plucked up the courage to take Harris out for a meal and put our trust in others. So off we went to Pizza Express armed with piriton and epi pens. It went without a glitch and it was so nice to be able to enjoy a meal out as a family and see Harris doing what all the other kids do.
Now we are far more relaxed about it and he loves nothing more than a McDonald's drive thru for chips 😂
