I've always believed you're not just what you eat but what you digest😘. A cheeky new twist on my Build Your Own Chia Bowl today guys👌🏻. ⁣⠀ ⁣⠀ Instead of using coconut yoghurt I substituted it with coconut kefir @coyo_uk - so good for your gut health. ⁣⠀ ⁣⠀ I've tried alot of coconut kefirs over the past few months and i'll be honest, I wasn't loving them, that was until I tried Coyo's. Game changing moment today guys that I just had to share👌🏻. ⁣⠀ ⁣⠀ Have you tried making your lattes with a hand blender? ⁣I've experimented with a lot of nut milks over the years but it's some thing about @plenishdrinks almond milk that when you froth it with a stick hand blender, not a frother, it goes so creamy and thick, you'd think it was a smoothie. If there was rehab for this drink i'd have to check myself in🤣!⁣⠀ ⁣⠀ I simply blended 300ml almond milk with @crushedtonic turmeric collagen and vanilla powder. Just wanted to say a massive thank you to you, my IG friend. Gratitude and love should be celebrated every day😘.⁣⠀ ⁣⠀ Never in my wildest dreams did I think that my toughest time (7 years ago when an autoimmune condition was having an uninvited all our street party in my body) would turn into my happiest time. ⁣⠀ Thanks to a radical change in diet (to a wholefoods, keto, paleo, low-carb style diet) I defied the doctors and now keep my #ankylosingspondylitis and #interstitialcystitis in remission naturally with diet. It also showed me the path to a new career as a food photographer⁣ ... and that from sad times can come happy ones🥰. ⁣⠀ Today I wanted to remind those of you struggling right now that this is just a hurdle. You will move past it, even if you have to crawl under the darn thing🤣! ⁣⠀ ⁣⠀ Remember forward is forward. I try and share kindness everyday, and this includes to myself. WELLNESS TIP OF THE DAY✨⁣⠀ ⁣⠀ Recharge your personal power💕. ⁣⠀ ⁣⠀ When I was sick, I relied on the doctors to tell me what was wrong. Truth was, they didn't really know. I had an #autoimmune condition but with so many different things going on. Insane bloating, sacrum and bladder pain, to name but a few. ⁣ ⁣⠀ Truth is, I only started to heal when I regained my personal power. I listened to what was screaming at me... my gut... and pushed for test upon test to slowly but surely rule things out. Then I sought the help of a complementary gut specialist and with my own wealth of knowledge on gut health, made a radical change to my diet... and defied the doctors. ⁣⠀ ⁣⠀ When you're sick, it's hard I know to keep that personal power but guys, if you're struggling with sub par health right now, keeping it is just what you need to get well. ⠀ ⠀ No-one will fight for you. Spreading some sunshine today with this Cauliflower Rice Vegeree✨. The sky is the colour of a dustbin lid so if you need cheering up, this should do the trick! Good for your gut health and full of anti-inflammatory goodness. ⁣⠀ ⁣⠀ INGREDIENTS⁣⠀ 80g tenderstem broccoli⁣⠀ 3 tbsp coconut, olive oil or ghee⁣⠀ 1/2 leek + 1/2 onion⁣⠀ 2 cinnamon sticks, 2 bay leaves, 2 tsp curry powder, 1/4 tsp turmeric, 1/2 - 1 tsp paprika, 1 tbsp coconut aminos @coconutmerchant ⁣⠀ 1 cauliflower, blitzed into cauliflower rice⁣⠀ 80g kale, blitzed fine⁣⠀ 700ml stock⁣⠀ 6 quails eggs⁣⠀ 25g pine nuts⁣⠀ Salt and pepper to taste⁣⠀ ⁣⠀ METHOD⁣⠀ Preheat the oven to 400F/ 200C / 180 fan. ⁣⠀ ⁣⠀ Toss the broccoli in 1 tbsp of oil and a pinch of salt. Roast for 10 minutes until slightly crispy.⁣⠀ ⁣⠀ Melt 2 tbsp of oil in a pan. Fry the leek and onion for 3 mins. Add the spices, cinnamon sticks, coconut aminos, cauliflower rice, stock and season. Simmer for 10 minutes on a medium heat or until the rice is soft and absorbed the stock. Stir through the kale and simmer for a further 3 minute until wilted. ⁣⠀ ⁣⠀ Boil the quails eggs to your liking. Whilst I was healing I thought alot about other things aside from food that probably exacerbated my symptoms.
