I've always been a firm believer in you are what you eat, but only more recently in you are what you digest😉! I didn't realise quite how important that really was until I was struck down with an autoimmune condition, a type of arthritis called #ankylosingspondylistis which had a devastating effect on my health for about 8 years. ⠀ ⠀ Thankfully, after alot of swotting up on gut health, trial and errors with supplementation and diet, i'm 6 years in remission this xmas... and drug free😍. One of the healing supplements I take regularly is collagen. Home to a ripped open packet of raw cacao, an extremely large jar of cacao nibs, a tub of luscious cacao butter and thick slabs of 100% Ecuadorian dark chocolate. Mr B thinks its his but lets just say there’s a frequent visitor that raids it at least 4 times a week😉 . I’ve wanted to make a chocolate shake that’s creamy and delicious but which uses vegetables instead of fruit or sugar for a long time. So that’s what i’ve been up to today. . I'd seen specialist after specialist but no-one could explain my long list of symptoms, inflammation and pain. The strong, carefree woman I once was, was replaced by a worry wort and big over thinker. When i'm shooting a soup recipe i'm always thinking about not only the taste of the base but the soup topper. It elevates a soup from nice to OMG 2nd bowl pls. Here are some of my favourite toppers for inspo😉 ⠀ ⠀ Nuts and seeds. Toasted with spices, herbs or my current favourtie pink himalayan salt and apple cider vinegar! ⠀ ⠀ Coconut yoghurt or nut cream. Swirl on top for the ultimate in plate prettiness.⠀ ⠀ A veggie rice crumb like cauliflower, broccoli or pumpkin rice. Blitzed in a food processor, sautéed in coconut oil and a pinch of salt.⠀ ⠀ A flavoured oil. I love homemade paprika oil. Simple heat a littel olive oil. Turn off the heat and drop in some paprika. Drizzle on the soup. Magic!⠀ ⠀ Chopped herbs, chilli flakes and always cracked black pepper.⠀ ⠀ What's your favourtie soup topping? Each day i'd tick off 1 or 2 things and feel like i'd failed at the end of the day. Then i'd re-write the previous day... and add to it! The past 5 years have been a roller coaster ride of emotions. From a pit aching low when an autoimmune condition had an all out street party in my body to the most rewarding highs. ⠀ Back then I questioned why life had dealt me such a cruel blow, but now I realise it was to direct me in a new path. One that brings me so much joy and happiness, I literally want to pinch myself everyday. ⠀ ⠀ I'm sat on my suitcase praying it to close 😂 as i get ready to cook an amazing vegan menu for the guests @wildviewretreat and indulge in a week of rebalancing yoga with the amazing @stepinsidewellbeing. Thank you so much Fin and Erika for believing in me, to all my lovely clients who gave me opportunities when i needed a break. Giving up sugar, and that included all fruit too guys for many years, was one of the key things I did to kick start my autoimmune condition into remission. ⠀ Funny thing is once I got over my sugar habit, the craving totally went. And it stayed away. 6 years on I rarely crave sweet things. And that's seriously bonkers considering i thought nothing to demolishing a bag of grapes on my way home from work! ⠀ What I do crave now is fats. Omg I could drink olive oil (i confess i have been known to search out olive oil tastings like most women search out wine🤣) and eat avocados till i turn green🤭. Not a day goes by when i don't get my avocado fix. It keeps my energies high and me feeling satiated. So tonight a roasted carrot and avocado salad with a sundried tomato and toasted pumpkin seed tapenade.⠀ ⠀ A very diff kind of shot for me tonight. What do you guys think? I've been given the responsibility of taking care of Molly this week. Molly is my mum's dog. Now this four legged friend eats better than me, home cooked chicken every day so the two very important things i told myself were:⠀ ⠀ 1) Don't lose the dog⠀ 2) Don't kill the dog😂 ⠀ ⠀ This weekend I thought i'd killed the dog🤣. Not on my watch i thought. I ran like a loonatic to the neighbour, next think you know out she bounces like tigger! WELLNESS TIP OF THE DAY⠀ On my journey back to health, I learnt to BE A FIGHTER. No not ur get in a ring and take on Muhammad Ali kinda fighter as lets be honest guys these skinny chicken wings aren’t going to take down many 😂 but I did learn that only you can be the change in your health.⠀ ⠀ What often comes as the toughest challenge when physically your health takes a turn for the worst is the mental strength to keep fighting. I was pulled in so many directions, diagnosed and undiagnosed, thought I was safe to eat a certain food then I wasn’t, I didn’t know if I was coming or going.⠀ ⠀ If i’d have listened to the doctors i’d be on a lifetime of immuno-suppresents. Now i’ve healed my gut, am in remission and manage with a #grainfree , low gi sugar and #dairyfree diet alone. What I did learn was to push to see every specialist i’d read came highly recommended, pushed for every test to rule out the sinister and gave myself the space to try the next chapter of my healing journey. NEW RECIPE✨⠀ Good Morning! This Hazelnut Crunch Vegan Blackberry Parfait has to be one of my speediest recipes guys and is one of my favourites. It's great if you need a quick healthy breakfast recipe or an on the fly vegan desert.⠀ ⠀ I love to make these in little sealable jars and take them to work or the movies! I know i'm that sad, I take my own snack pots to the cinema, but it's the best way to stay healthy and not be tempted with all the sugary popcorn and goodness knows what's in them nachos😉. ⠀ ⠀ Sweetened simply with low GI berries so are paleo, keto, whole30 and #iqs friendly. For an Autoimmune Paleo version, simply leave off the nuts, or as I do, soak them overnight, dry them off on kitchen paper and roast them. Some people say they're from a certain place but the truth is i've moved around a lot in my life. For me home is where Mr B is ... and where my slouch pants live of course🤣! But it's this love for travel and try new things attitude that's heavily influenced my palate choices today. I totally love exploring new healthy dressing combinations or how to 25 ways with kale😝! ⠀ ⠀ This salad combines the earthy flavours of kale, massaged .. because we all know it tastes better this way😚, with shredded sprouts and a new love pairing of lime tahini. ⠀ ⠀ Are you a summer or winter salad kinda gal? Jo x ⠀ ⠀ INGREDIENTS (serves 3 as a side)⠀ 200g sprouts⠀ 200g kale ⠀ 2 tbsp coconut oil @coconutmerchant ⠀ 50g chestnuts (optional)⠀ 50g nut cheese (or feta if you prefer)⠀ 3tbsp flaked almonds⠀ 1 avocado ⠀ 1 tbsp sesame seeds⠀ ⠀ DRESSING⠀ 2 tbsp tahini @meridianfoods ⠀ 1 tbsp EVOO (+a little water to thin if you prefer)⠀ Juice of 1/2 lime⠀ Pinch of salt⠀ 1 tbsp coconut aminos @coconutmerchant ⠀ ⠀ METHOD⠀ Heat the coconut oil in a pan. Saute the sprouts for 2 - 3 minutes or until slightly soft. Add the kale and saute until it wilts. Add chestnuts. Mix the dressing. Season to taste. When we have sub par health we block so much, the good and the bad, in an effort just to function. But guys, healing takes time. You are on a journey of self discovery, improvement and rediscovering self love. It's important to tune in and listen to your gut instinct. ⠀ ⠀ My journey so far has been inspired by so many complementary therapies. Some didn't do much for me, or perhaps in hindsight I wasn't open enough to receive their healing powers, others I found rung true, like kinesiology, but what took me to the next level of healing? Brussels sprouts aren’t just for Christmas! Try delicious crispy roasted sprouts, pecans and pomegranate made with our coconut merchant oil! Recipe below: Ingredients: Brussels sprouts 500g 2 tbsp melted coconut oil 1/2 a pomegranate Pinch of salt Handful of chopped pecans. 2 tbsp chopped fresh parsley Dressing: 1 tbsp extra virgin olive oil 2 tbsp toasted sesame oil 1 tbsp lime juice 1 tbsp coconut savoury sauce Pinch of salt and pepper Method: Prepare the Brussel sprouts by removing the out leaves and slice in half. Place in a baking tray with coconut and a pinch of salt and mix. Roast in the oven for 20-25 minutes until golden and crispy. Meanwhile mix all the dressing ingredients together. When the sprouts are crispy, place in a serving bowl, toss with the dressing, pecans, pomegranate and fresh parsley.
