•Marinate diced chicken pieces in: olive oil, salt, pepper, herbs and balsamic vinegar.
•In a seperate pan, heat some butter and sauté 8-10 sliced mushrooms and 1 small green capsicum. Season with salt and pepper. •Set aside for later. •in the same pan, heat a little olive oil and add 3-4 pods of chopped garlic and 1 small chopped onion. Sauté til translucent. Do not brown the onion. •Add 1 tsp of paprika and 1 tsp red chilli flakes and 1 tbsp of flour. Stir and add in 2 chopped red tomatoes. Stir. Add 1 cup of chicken stock.
•Let it boil and thicken. •Add salt and pepper. •Now blend with a handblender and then strain the sauce.
•Transfer the sauce back into the pan and let it boil again, now adding the sautéed mushrooms and peppers. •Boil until the sauce is nice and thick and chicken has cooked well. •Lastly, add a dollop of cream and it’s ready to serve on a bed of rice.
