I’m excited about my Scoop organic low waste haul today. Tonight I’m using lots of this in a slow cooked Moroccan tagine. They had mutton on sale there today so I used that instead if lamb (really tasty!) and I’m using their British Carlin Black Badger peas instead of chickpeas. I’ve used their gorgeous dried apricots which are very dark brown because they’re not preserved with sulpher dioxide (that’s what’s used to make conventional dried fruit have a nice bright colour - who’d have thought!) All Served up with a side of Russian kale sautéed in garlic butter, roasted cauliflower leaf crisps and minted yoghurt. Definitely not a quick meal but worth it for such gorgeous full flavors. The kids enjoyed theirs with lots of yogurt to mellow the chili. .
