HEALTHY BROWNIE BITES 🍫🍫🍫Everyone knows I'm a sucker for little bite size snacks so I figured I would recreate for the blog one of my go-tos that I make almost every week 🙌🏻 Here's the best part: you literally combine all of the ingredients in a food processor and roll into balls...that's it. No stirring, NO BAKING, nothing. And they seriously taste just like brownies, so when you don't have time to become Betty Crocker - these definitely do the trick. 🙆🏼🙆🏼 The link to the recipe is in my bio! HAPPY THURSDAY FRIENDS!!! ♥️

When your kids ask what’s for dinner and you turn out these Grilled Beef Banh Mis and they give you back a plate covered with scattered veggies, bread cored out with little teeth marks that show you they don’t care for the crunch of a good loaf. I should have made my life easy and just served them beef skewers. #reallife #dinnerisbust #sandwich #carnivore
CREAMY VEGAN Carrot Spring Soup🥕 One of my FAVORITE soups to date 💛🌼 y’all ... my soup addiction is real. And no heavy cream or dairy but made with raw cashews and veggie broth. I made it on the thicker side, but just add more broth or almond milk or less cashews to thin it out if you prefer. Here’s the recipe! 💛 if you make, please let me know what you think!
2 1/2 cups veggie broth
4 large chopped carrots
1/2 medium onion chopped
1/2 tsp minced garlic
1/2 cup raw cashews
1/4 cup unsweetened almond milk
Pinch sea salt
Optional: top with edible flowers, fresh parsley & croutons
1. In a pot, add veggie broth and carrots and bring to a boil to soften carrots. As soon as it becomes a boil, reduce to a simmer for approximately 10 minutes or until carrots are soft.
2. Sauté onion and garlic in avocado oil for about 5 minutes.
3. Pour veggie broth and carrots from the pot into vitamix or high powered blender. Add sautéed onions and garlic, raw cashews, sea salt and almond milk into vitamix and blend well.
4. Continue to blend until a smooth consistency to your liking.
5. Pour into bowls, add desired toppings and enjoy!! xo #f52bowl
Veggie mezze platter with the creamiest beet hummus ever is on the blog, as the first in a 3-part series about portable dinners we can enjoy outside (preferably on a cute picnic blanket with someone who makes you ugly-laugh). There are also veggie kebabs, baked feta, garlicky yogurt dip, baked lavash & roasted/raw crudites involved, because options are everything!🥕Recipe link is in my profile ✨
Springtime dinners should be fresh and casual, something easy enough to throw together and tastiest enough to crave again and again. I’m using @lagostinausa
nera cookware to prepare this homemade fettuccine with leeks, fennel, asparagus, shiitake mushrooms, and clams...all tossed with lots of lemon, butter, and spicy breadcrumbs. It’s such a lovely, rustic dish to bring to the table right in the pan, so everyone can share and enjoy together. You can shop the cookware set at your nearest @macys

there's like a 0.006% chance i'm sharing this with you, beau. but kudos for lurking so hard like you have a chance 😂 shout out to my mum, who is the og and best salmon + avo sushi roller 🍣!
I could go on and on about how much I love chopped salads, but I'll keep it short. They are a great option to feed a crowd because they are easy to customize. If you have a mix of vegans, vegetarians and meat eaters, just leave the cheese and protein on the side and people can add them if they want. Search 'Italian chopped salad' on lastingredient.com for the recipe.
Library lunch 🥗! As much as I love all the healthy takeout options in NYC, packing your own lunch saves you money + gives you complete control of ingredients! Today I had baby spring greens 🍃with a baked sweet potato 🍠 , a hard-boiled egg 🥚 , 1/2 avocado 🥑 , cucumber 🥒 , crumbled blue cheese, unsweetened dried cranberries, olive oil + ACV. On Sunday I batch-cooked some baked sweet potatoes + hard-boiled eggs, so this came together super quick 🤗 What do you guys like to pack for lunch?!

Morning workout on Wednesday definitely calls for a smoothie bowl after 😍.
▪️ smoothie: 1/2 frozen banana, 1/4 frozen avocado, 3/4 c frozen mixed berries, 1 c liquid (I used water this morning), cinnamon, turmeric, 1 scoop @arbonne
vanilla protein powder (my fave), 1 Tbsp hemp seeds ( @traderjoes
▪️ toppings: @traderjoes
unsalted crunchy almond butter, @siggisdairy
vanilla yogurt, @traderjoes
muesli, & more mixed berries. & of course, can’t forget a tiny drizzle of honey 🍯.
Not gonna lie, this was huge! And for me, my stomach is always the smallest in the morning. I get filled up on breakfast reaaalllyy quick, so I only finish about half of this before i had to rush and get ready for work 🙈 but oh wow it was good. So many nutrients from the berries, fiber, protein, and healthy fats - all components of a great breakfast to help keep you fuller longer and avoid that mid morning crash (cus those are SERIOUSLY the worst). #heartbeets #heartbeetsforfood #arbonnelife #traderjoesfinds #siggisdairy

Fell in love with them in Lisbon and I’m head over heels again in Tokyo- Pastel de Nata. A Portuguese flaky pastry filled with a rich, eggy custard.

Spring is FINALLY in the air and it’s got me craving all the healthy, fresh vegetable dishes. These turmeric honey roasted carrots & radishes couldn’t be easier, plus make really great leftovers. I’ll throw them back in the oven the next day before chopping and tossing them into a big grain salad or something like that🍃 (recipe link in bio)

# 4 : Moroccan pork over zucchini and yellow squash with cauliflower!.
I was really excited for this meal because Moroccan sounded delicious and it was a good change up from what I typically make at home! So here’s the deal - I’m a big sauce person, I think the sauce can really make or break a dish. So I wanted to have a bit more sauce on this one, then I remembered all of the @traderjoes
dressings I have in the fridge. So I topped the pork with the @traderjoes
almond butter/turmeric dressing and it was a perfect component to the already spiced Moroccan pork!.
▪️ Moroccan pork, on top of sautéed zucchini and yellow squash, topped with @traderjoes
almond butter/turmeric dressing and EBTB seasoning.
▪️ steamed cauliflower.
▪️ avocado with EBTB seasoning - I’m so glad I added the avocado because it gave that creamy fat component of the meal that I love (plus who doesn’t love healthy fats!?).
Hope everyone is enjoying their Tuesday’s ☺️ I have a crazy busy week this week, so I’ll be working allll night ✌🏻.

One of the delicious side dishes from tonight’s dinner: English Peas with Prosciutto & New Potatoes (from #SixSeasons
). This was so good and came together so quickly. (And would be a perfect BBQ side dish, since there is no mayo.) #f52cookbookclub
Three of my favorite things: simplicity, seasonal produce, and Mexican cuisine. I made these super delicious and super easy Oaxacan zucchini flower tacos with Oaxacan cheese, fresh zucchini flowers, radish, a dash of cilantro and lime juice. They were AH MAZING! Pretty straightforward but if you’d like the “how to” you know the drill, it’s on the blog.
CAULIFLOWER 101: yes it tastes delicious and can be used in pizza, smoothies, and even desserts but it’s also rich in nutrients!☝🏻Cauliflower has tremendous compounds involved in cancer protection that also help with reduce inflammation, improve cardiovascular function, maintain digestive health (sulforaphane found in cauliflower helps protect the digestive lining and prevents bacterial overgrowth such as H. pylori.) and fiber! Tenderness and kindness are not signs of weakness and despair, but manifestations of strength and resolution. -k.gibran
I believe in the extraordinary ripple effect of an ordinary act of kindness. I believe that sometimes we wear cynicism as a badge of intelligence and harden so we don’t feel too much. Because vulnerability is scary. To see and be seen is to stand in the fullness of of your purpose. I want this for myself and I want it for you. // kindness can change the world for good //
👆🏻and breakfasts that nourish the body help a bit too 😋. A little oat bran with almond milk, nut butter, flax, maca, bloobs, cacao nibs and a touch of maple syrup. ☀️
My rule with any stir-fry is to make sure that all the ingredients are chopped & prepped before I start because they are ready so fast. These are udon noodles with asparagus, peas, shiitake mushrooms, scallions and plenty of ginger and garlic. Search 'udon-noodle stir-fry' on lastingredient.com for the recipe.
Vegetarian Bibimbap with spinach, sprouts, oyster mushrooms, bok choy, pickled cucumber, carrot and sweet spicy gochujang (gochujang + honey, salt & toasted sesame seeds) sauce to mix into sticky shiso rice and a mandatory drizzle of pure sesame oil. Served with a spoon and enamel bowl intentionally because to experience good bibimbap, you need the sound of that spoon dragging across a metal bowl.
So many memories...I can still see tears in his eyes as he looked at me from across the table at a tiny bibimbap restaurant in Osan. Omg...but that’s a story for another day. 😌💔

😍😍 I’ve just recently started eating RXbars and so far I’ve only had the peanut butter chocolate flavor but I really really liked it. I’m so picky with bars/protein bars because I’m a huge texture person, so it’s difficult for me to find a snack/protein bar that I really enjoy! .
Taking an recs for RXbar flavors, LMK your fave 👇🏻.

What’s your favorite cozy-time meal? You know the one you crave when you are sleep deprived and perhaps just a little hungover?
Well this is mine — a hearty bowl of full-flavor pasta. Back in the day, when I used to go out all night and listen to my hubby DJ until the wee hours of the morning, we would stay in bed all day Sunday and order-in pasta. We coined the term “Tortellini Sunday’s” back then because I would always order the highly indulgent Tortellini Alfredo! I share more of this tale and take you through the recipe process of this dish on stories! #EyeSwoonUnplugged
Brain fuel for working on the last paper of my master’s degree!! We’re presenting our researching in exactly 2 weeks + it feels so surreal that it’s all coming to an end 😳👩🏻🎓// In my bowl: mixed baby greens with baked salmon, sautéed pearl tomatoes, quinoa, microgreens, lemon juice, olive oil, herbamare + pepper 🍋. To make the salmon I just coated in olive oil, garlic powder + pepper cooked at 400F for about 12 mins. Have a great Tuesday everyone 💚💚
Happy Tuesday! Sharing my NO COOK meal prep for the week: Mediterranean chopped salad and lemon-chive tuna burgers! 🍋Because sometimes you just don’t feel like turning on the oven 🤷🏼♀️ To make the salad: Chop up a cucumber, pint of cherry tomatoes, half a red onion, and a big handful of kalamata olives into small pieces. Add to a mixing bowl with one can drained and rinsed chickpeas and 1 head finely chopped lettuce. Sprinkle in some feta cheese crumbles. The dressing I made was 1 tbsp reserved liquid from the olives, juice of 1/2 lemon, a splash of red wine vinegar, garlic salt, 1/2 tbsp mustard and olive oil. If you’re making this salad for the week, I recommend dressing just the toppings and keeping the lettuce separate so it doesn’t get soggy 🥗 Still perfecting the tuna burger recipe (they were a little crumbly!) but they taste SO good! I used @safecatchfoods
tuna, quinoa, egg, chives, lemon juice and @primalpalate
seafood seasoning 💯
