Today we’re having spätzle for dinner. And it’s all @pardonyourfrench ‘s fault! 😉 Usually I save spätzle for when sauerbraten or fleisch rouladen are on the menu (or if I have a late night carb craving!) But I figured that they would be great with these thick cut pork chops (Thanks @cheese_boutique ) in mustard sauce (extra sauce was made for the noodles to swim in!) There are also some fantastic soy and pomegranate molasses glazed baby beets, and roasted potatoes for @jim_emilson_ (he doesn’t appreciate spätzle the way I do!🤣) . The pork chop recipe as well as the spätzle recipe are in the archives. The beets will be added soon (I’ve had requests for this recipe for two years now- sorry for my tardiness! 🙄) . I’m Staying curious and experimenting with a GF egg pasta recipe, so far so good BUT I haven’t cooked the dough yet so THAT will be the determining factor. : Yesterday when I was putting the dough together it felt so good to slow down, and make something with my hands, each yolk I pulled from the white was like a poetic song- I felt ALIVE. You guys, this dessert 👅 This dessert is just next level. I would even dare to say that it's our best dessert this autumn so far: Chocolate Stuffed Baked Pears with Phyllo Dough 🤩 . At the bottom there’s the most delicious, flaky caramelized baked phyllo dough with tiny bits of sugar here and there, then fresh, naturally sweet pears, filled with a fantastic chocolate filling that has a wonderful addition of crunchy chopped almonds. Oh and to top it off, served with a generous amount of homemade vanilla sauce . NEW BLOG POST ALERT 🎉 This pasta dish is one of the first recipes I ever developed - and I'm happy to report I still love it, considering I was only a teenager at the time. . . I started cooking when I was around 12 and my “recipes” were… interesting (i.e. sometimes edible, sometimes not) 🤷🏻‍♀️ But I kept going, and after a few years and a plethora of questionable creations, my food actually became okay! This year Texas really went hard into fall when it literally dropped 50 degrees overnight, started pouring rain and hasn’t stopped since. I’m embracing it by getting into all things pumpkin (except PSLs, am I the only one who thinks they taste like poison?! 🤐 I miss yours the most, @nuggetmarkets ). If you need a little fall pumpkin action in your life, these sous vide pumpkin pot de cremes are the ultimate thanksgiving dessert, they’re super easy to put together and they keep extremely well in the fridge. ———————— Sous Vide Pumpkin Pot de Creme: ———— I measure everything in grams and highly recommend purchasing an inexpensive kitchen scale on amazon. But I’ve included the conversions if you don’t have one (but buy one!!). ———— 250 g (about 15 large) egg yolks 5 g (1 tsp) salt 73 g (1/3 cup, packed) light brown sugar 52 g (1/4 cup) granulated white sugar 625 g (2.5 cups) heavy cream 5 g (1 tsp) vanilla bean paste (or extract) 5 g (2 tsp) pumpkin pie spice 200 g (heaping 3/4 cup) pumpkin purée (not pie filling!) Preheat water bath to 176° degrees. In a large bowl whisk together all ingredients until fully combined. Using a ladle, fill desired jars up to the threads (if you don’t fill them enough they’ll tip over in the water bath). If you’re using weck jars put the lids on normally. If using mason jars secure them fingertip tight (screw the lids closed, then unscrew one turn and turn one more time to tighten using just your fingertips. You want air to be able to get out but not in). Cook at 176° for 1 hour. Remove from water bath and allow to sit at room temperature for 20 minutes. Move to fridge and chill for 6 hours or overnight. Unopened they will last several weeks in the fridge. Top with fresh whipped cream and ginger snap cookies.

I don’t CARROT all that these didn’t come out to perfection the first time around 🤷🏻‍♀️🥕 but I was so happy I tried something new in the kitchen! I loved finding these organic tri-colored carrots from @traderjoes 😍 so I roasted them with some evoo, salt, pepper & dill! Need to tweak the cooking time and add a litttttle more seasoning, but once I master the recipe, I’ll share it with all of you! 🥕🎉✨
Hi. It’s been a while! I took a little unintentional break these past two weeks. Because you know I moved to Dallas and stuff! And then I jumped on a plane forty-eight hours later for a major fall adventure with all my best friends in the Adirondacks. And then family time in Buffalo with these beautiful Concord grapes. // Did you know western New York is the biggest producer of this variety? They remind me of my childhood. Still trying to get rid of my apples and loving every minute of it! 🍎🍏 If you know me, you know I’m not a huge apple-in-savory-dish-person, but I had to give this a try! Pork and apples go so nicely together so I decided to make sage and herb crusted pork chops with sautéed apples! For the pork I added salt, pepper, fresh sage, paprika and some dried thyme and rosemary onto each side. I sautéed them in a large pan with some olive oil for about 5 minutes total just browning on each side. I took the pork chops out of the pan and added some more oil, sliced shallots, apples and garlic. Then I put some more of the herb mixture I added onto the pork and let the apples lightly brown. Next, I added some chicken stock, and put the chops back into the pan to finish cooking on a low heat. The stock will create a yummy sauce and you can serve with potatoes or roasted veggies!! 😋🍏🧡
Tried @modern_honey ’s copycat recipe for NYC’s Levain chocolate chip walnut cookies since it’s pretty different from all the other recipes I’ve tried. They’re gooey in the center with pools of chocolate chips, slightly crisp on the outside, comically large, and perfect if you like a cakier and thiccer cookie. No idea if they taste like the actual Levain cookies since I’ve never tried them, but they’re GEWD. Shared in stories how I made them 🍪🍪

It wasn’t hard to resist the urge to lift the lid to peak at this slow cooker curried butternut squash soup before it was finished because it had the most wonderful aroma, so I knew what I was about to eat. The scents of Thai red curry paste, ginger and garlic filled my kitchen. I made the soup in this beautiful new Digital Sauté Slow Cooker from @Calphalon. I was able to sauté the ingredients on the stovetop in the same cooking pot used in the slow cooker, so prep was a cinch. After a few hours, I pureed the soup in the Auto-Speed Blender also from @Calphalon ’s new appliances collection in dark stainless steel. Recipe link in profile. #CalphalonAppliances #ad
I spent this past Saturday in Rouen for the annual Fête du Ventre, which is a food festival showcasing Normandy's culinary riches. Before I started going to this festival three years ago, my knowledge of the region’s cuisine was limited to their crème fraîche and butter, which are among the best in all of France. Through my exchanges with the farmers and artisans each year, I discovered the region’s specialty dishes and products, including cheeses, apples, ciders, calvados, pastries, snails, etc. What really stood out from my conversations with them, though, was the pride that they have for their products. Vegetable Bibimbap with Sweet & Spicy Gochujjang Sauce. I never liked bibimbap in Korea 🤷🏻‍♀️ I think the sesame oil was too pungent for my then underdeveloped palate. When making this now, I usually just cook whichever vegetables I have separately, top on steamed rice (or cauli rice), add Korean red pepper paste combined with honey (3:1 ratio), sesame seeds, a little rice wine vinegar & #putaneggonit .
