HEALTHY BROWNIE BITES 🍫🍫🍫Everyone knows I'm a sucker for little bite size snacks so I figured I would recreate for the blog one of my go-tos that I make almost every week 🙌🏻 Here's the best part: you literally combine all of the ingredients in a food processor and roll into balls...that's it. No stirring, NO BAKING, nothing. CREAMY VEGAN Carrot Spring Soup🥕 One of my FAVORITE soups to date 💛🌼 y’all ... my soup addiction is real. And no heavy cream or dairy but made with raw cashews and veggie broth. I made it on the thicker side, but just add more broth or almond milk or less cashews to thin it out if you prefer. Here’s the recipe! 💛 if you make, please let me know what you think! __ Ingredients: 2 1/2 cups veggie broth 4 large chopped carrots 1/2 medium onion chopped 1/2 tsp minced garlic 1/2 cup raw cashews 1/4 cup unsweetened almond milk Pinch sea salt Optional: top with edible flowers, fresh parsley & croutons __ Directions: 1. In a pot, add veggie broth and carrots and bring to a boil to soften carrots. As soon as it becomes a boil, reduce to a simmer for approximately 10 minutes or until carrots are soft. 2. Sauté onion and garlic in avocado oil for about 5 minutes. 3. Pour veggie broth and carrots from the pot into vitamix or high powered blender. Add sautéed onions and garlic, raw cashews, sea salt and almond milk into vitamix and blend well. 4. Continue to blend until a smooth consistency to your liking. 5. Pour into bowls, add desired toppings and enjoy!! xo #f52bowl

I could go on and on about how much I love chopped salads, but I'll keep it short. They are a great option to feed a crowd because they are easy to customize. If you have a mix of vegans, vegetarians and meat eaters, just leave the cheese and protein on the side and people can add them if they want. Library lunch 🥗! As much as I love all the healthy takeout options in NYC, packing your own lunch saves you money + gives you complete control of ingredients! Today I had baby spring greens 🍃with a baked sweet potato 🍠 , a hard-boiled egg 🥚 , 1/2 avocado 🥑 , cucumber 🥒 , crumbled blue cheese, unsweetened dried cranberries, olive oil + ACV. On Sunday I batch-cooked some baked sweet potatoes + hard-boiled eggs, so this came together super quick 🤗 What do you guys like to pack for lunch?!
My current sweet snack/dessert obsession: tahini cacao truffles/bliss balls/energy balls (whatever you want to call ‘em) - I based these off of the @healthy_ish recipe but with a few changes⚡️ Ingredients: - 8 medjool dates, pitted - ½ cup tahini - ⅓ cup shredded coconut, plus extra for decorating if you want - ⅓ cup pistachios - ¼ cup cacao powder - Pinch sea salt Method: Combine ingredients together in a food processor or high speed blender, scraping down the sides one or twice to combine everything. When you’ve got a well-combined “dough” of sorts, scoop out in 1-2 tablespoon-sized spoonfuls and shape into balls. Roll or dip in coconut if desired. Morning workout on Wednesday definitely calls for a smoothie bowl after 😍. — Details:. ▪️ smoothie: 1/2 frozen banana, 1/4 frozen avocado, 3/4 c frozen mixed berries, 1 c liquid (I used water this morning), cinnamon, turmeric, 1 scoop @arbonne vanilla protein powder (my fave), 1 Tbsp hemp seeds ( @traderjoes ). ▪️ toppings: @traderjoes unsalted crunchy almond butter, @siggisdairy vanilla yogurt, @traderjoes muesli, & more mixed berries. & of course, can’t forget a tiny drizzle of honey 🍯. — Not gonna lie, this was huge! And for me, my stomach is always the smallest in the morning. I get filled up on breakfast reaaalllyy quick, so I only finish about half of this before i had to rush and get ready for work 🙈 but oh wow it was good. Spring is FINALLY in the air! 🌷🌻 The little guy and I got outside for our first outdoor run of the year yesterday, and I can see some green popping up here and there!  To celebrate all things fresh, bright and green, I whipped up a batch of this south-of-the-border spinach dip to accompany taco night yesterday!  I love that it reheats well, and can be kept in the fridge for a few days and still taste just as good! 😋😋 . Clean creations @eat_cleancreations # 4 : Moroccan pork over zucchini and yellow squash with cauliflower!. I was really excited for this meal because Moroccan sounded delicious and it was a good change up from what I typically make at home! So here’s the deal - I’m a big sauce person, I think the sauce can really make or break a dish. So I wanted to have a bit more sauce on this one, then I remembered all of the @traderjoes dressings I have in the fridge. So I topped the pork with the @traderjoes almond butter/turmeric dressing and it was a perfect component to the already spiced Moroccan pork!. — Details:. ▪️ Moroccan pork, on top of sautéed zucchini and yellow squash, topped with @traderjoes almond butter/turmeric dressing and EBTB seasoning. ▪️ steamed cauliflower. ▪️ avocado with EBTB seasoning - I’m so glad I added the avocado because it gave that creamy fat component of the meal that I love (plus who doesn’t love healthy fats!?). My rule with any stir-fry is to make sure that all the ingredients are chopped & prepped before I start because they are ready so fast. Vegetarian Bibimbap with spinach, sprouts, oyster mushrooms, bok choy, pickled cucumber, carrot and sweet spicy gochujang (gochujang + honey, salt & toasted sesame seeds) sauce to mix into sticky shiso rice and a mandatory drizzle of pure sesame oil. Served with a spoon and enamel bowl intentionally because to experience good bibimbap, you need the sound of that spoon dragging across a metal bowl. So many memories...I can still see tears in his eyes as he looked at me from across the table at a tiny bibimbap restaurant in Osan. We’re presenting our researching in exactly 2 weeks + it feels so surreal that it’s all coming to an end 😳👩🏻‍🎓// In my bowl: mixed baby greens with baked salmon, sautéed pearl tomatoes, quinoa, microgreens, lemon juice, olive oil, herbamare + pepper 🍋. To make the salmon I just coated in olive oil, garlic powder + pepper cooked at 400F for about 12 mins. Have a great Tuesday everyone 💚💚
Happy Tuesday! Sharing my NO COOK meal prep for the week: Mediterranean chopped salad and lemon-chive tuna burgers! 🍋Because sometimes you just don’t feel like turning on the oven 🤷🏼‍♀️ To make the salad: Chop up a cucumber, pint of cherry tomatoes, half a red onion, and a big handful of kalamata olives into small pieces. Add to a mixing bowl with one can drained and rinsed chickpeas and 1 head finely chopped lettuce. Sprinkle in some feta cheese crumbles. The dressing I made was 1 tbsp reserved liquid from the olives, juice of 1/2 lemon, a splash of red wine vinegar, garlic salt, 1/2 tbsp mustard and olive oil. If you’re making this salad for the week, I recommend dressing just the toppings and keeping the lettuce separate so it doesn’t get soggy 🥗 Still perfecting the tuna burger recipe (they were a little crumbly!) but they taste SO good! I used @safecatchfoods tuna, quinoa, egg, chives, lemon juice and @primalpalate seafood seasoning 💯
