This morning I made the most delish baked eggs! I love a skillet meal!
1x Red Pepper
Half a bag of Spinach
Sun Dried Tomatoes
2tsp Tomato Puree
1x Can Chopped Tomatoes
1tsp Lazy Garlic
1tsp Ground Cumin
1tsp Hot Paprika
1tsp Mixed Herbs
2x Bay Leaves
• Dice the onion, red pepper and place in cast iron skillet, add oil and then add the garlic.
• Once the onions have softened, add spices, herbs and tomato purée, fry for 5mins.
• Preheat oven 170c.
• Add chopped tomatoes, olives and bay leaves, cook on low heat for 15 mins.
• Wilt spinach with boiling water, squeeze excess water out and add to sauce.
• Make four shallow wells and add eggs, sun-dried tomatoes and cheese.
• Make 4 shallow wells and add the eggs
• Add to preheated oven and bake for 20 mins.

Well this stuff is a game changer 😻 I saw someone on here going on about this so like most things thought I’d give it a try and I’ve been using this in my coffee instead of milk and it’s so creamy and tastes lovely!! I probably wouldn’t drink it in cereal or on its own.. but it’s a great substitute for milk in tea 😊
Save my zucchini, corn and chickpea fritter recipe 🙌 Serve them with poached eggs, avocado and tomato relish 🥚🥑🍅 They’re frittering delicious! #getyourmaninthekitchen
3 x zucchinis, ends trimmed, coarsely grated
310g tinned corn, rinsed and drained
1 cup chickpea flour
3 x spring onions, finely chopped
Pinch of cumin
1/2 tsp. baking powder
2 x eggs
1/2 cup milk
1/4 cup parsley, chopped
Salt and pepper to season
2 tbsp. extra virgin olive oil • •
Place zucchini into a muslin cloth and squeeze out extra moisture. Transfer to a large bowl.
Add corn, spring onion, cumin, parsley and seasoning.
In a separate bowl whisk together eggs, milk, baking powder and flour.
Gently add egg mixture to the other ingredients and combine well.
Heat oil in a large non-stick frying pan over medium heat. Ladle mixture into frying pan and flatten with an egg flipper. Cook for 3-4 minutes on each side or until golden brown and cooked through. Transfer fritters to a plate lined with paper towel to absorb excess oil. Repeat with remaining mixture #getyourmaninthekitchen

Here's a few pictures of (not all) the items we tried at the geylang serai bazaar. They were generally quite okay, but nothing i would travel specially to the bazaar for, with both hits and misses (though more misses) which is why i'll just give a quick review of each！
1️⃣Curry Chicken Praffles ($12.90)
There's quite a queue for this, but the line moves fairly fast and we got our praffles immediately after placing our order. Essentially prata in the form of waffles, together with the curry sauce, it was just like plain old pratas haha. What makes this more worth the price is the big slab of fried chicken which was so tender and juicy and not overly battered. .
2️⃣Durian Choux ($12 for 6)
Had actually wanted the durian muah chee which i saw was on their menu in a picture posted by @foodkingnoc
, but when i asked them about it they said that they didn't have such an item available 😥 so i got these durian choux instead but they were pretty disappointing too. They were so soft and soggy 😅
3️⃣Banana Baby Dutch Pancakes ($6 for 10)
I think you can hardly go wrong with these cute, eggy pancakes- definitely one for the sweet tooth though, with the amount of sugar,cream and syrup used.
4️⃣Mentaiko Chicken Bites ($6)
Felt rather cheated for this because the fried "chicken" was all batter and rock hard 😩 The mentaiko sauce was good but that hardly makes up for anything 🙁
5️⃣Meatballs in a bucket ($10)
Had previously had the meatballs in a bucket from the same stall at another event. Not too sure why but it seems that for the same price, the portion size seemed to have decreased😅😥

A while ago I mentioned in one of my posts that I was on a new journey health wise and would explain soon.....I've never advertised the fact I'm a smoker on here....in fact I'd go as far as say I hid it!! I've never smoked massively but when Courtney passed away I started to smoke with a vengeance- I'm talking going from 5 or 6 a day to a minimum of 20 😔 often it would be more. Obviously things settled down stress wise but I found I couldn't cut back down as I'd obviously become more dependent and addicted. It was making me feel shit, cost a fortune and the guilt I felt knowing I needed to be healthy for my kids was awful.... I wanted to stop but was scared I'd not cope (sounds pathetic right?) anyway... my lovely dad, bless him went out and bought me a vape as I'd said before I knew I'd need something to help- there's no way I'd have managed cold turkey as the habit was part of my routine- cigarette break at work, when the kids went to bed, after dinner, with a drink etc....(goodness I can waffle on 😆!!) Proud to say I have not smoked in FOURTEEN DAYS!!! 🍁AUTUMN GRAIN SALAD🍁
This grain salad uses beautiful seasonal produce and is definitely one to share! 🍽 . ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Filled with heart-healthy freekeh, deliciously sticky roasted plums, baked pumpkin and shredded BBQ chicken 👌🏼
INGREDIENTS (Serves 4):
• 5 plums, halved, stones removed
• 4 tablespoons extra virgin olive oil
• 3 cups cooked freekeh (equivalent to 1 cup uncooked)
• 1 BBQ chicken, shredded
• 400g pumpkin, cut into 2cm cubes
• 1 tablespoon mixed herbs
• 1/4 cup pistachios, roughly chopped
• 100g feta, crumbled
• Optional: 2 cups spinach and rocket mix
• 1/2 cup parsley, roughly chopped
• 2 lemons, juiced and finely grated rind of 1
• 1/4 cup extra virgin olive oil
1️⃣ Preheat oven to 200 degrees Celsius, and place plums on a baking paper lined tray. Drizzle with 2 tablespoons olive oil and roast for 15 mins or until tender and set aside.
2️⃣ Place pumpkin on a lined tray, drizzle with remaining olive oil and season with mixed herbs. Cook for 20 mins or until golden and tender, turning halfway.
3️⃣ Cook freekeh according to packet instructions then drain well and spread on a baking tray to cool.
4️⃣ For herb dressing, stir ingredients in a bowl to combine.
5️⃣ Combine freekeh, roasted plums, pumpkin, chicken, dressing (and spinach mix) in a serving bowl and gently mix. Top with pistachios and feta, and serve!
