Made potato and butternut squash fritters tonight! Omg SO good! Everyone loved them, and my husband does NOT like butternut squash. Served with freezer stash lentil and garbanzo soup and I added some black beans and chicken broth. 2 medium peeled and shredded potatoes. Soak the shredded potatoes in ice water while you work on the butternut squash. Peel and shred a small butternut squash. Drain the potatoes and mix them in with the butternut squash. Add 2/3 c flour, some garlic powder, salt, 1/4 shredded cheddar, 2 eggs, some nutritional yeast and a little pepper. Form patties and fry on a hot buttered griddle until browned on both sides. SO GOOD! My daughter even took her beans and piled them on the "pancake" and made a sandwich. This morning I knew it was going to rain mid morning so we packed up in the pram for cardio and the twins got their torches and we left in the dark. It was so great to be out as the day started. Once we got back, I fed the kids and then set up to make rice paper rolls. I had a crumbed chicken breast in the fridge, so I added carrot, zucchini, cucumber, mushroom, chicken, coriander, mint and lettuce. This will be our lunch today, fresh ingredients and the rice paper rolls contain tapioca, water, rice flour and salt. FIXATE : VEGETABLE EGG CUPS : 2 eggs (1R) mushrooms, red peppers, green onions (1G) cheddar cheese (1/2B) sriracha hot sauce, strawberries (1P) maple almond butter (1tsp) . These were DELICIOUS! I tweaked the recipe a little and added cheddar cheese to mine. . You know what's weird? I wasn't full after these 2 egg muffins. It's 2 eggs, but they feel small. My omelettes I make, I use 2 eggs too, but I'm stuffed after eating it. I definitely needed the strawberries to keep me satisfied. . My kids ate these egg muffins too, but I sliced theirs in half and made sandwiches for them with bagel thins. They enjoyed! This recipe is definitely kiddie approved! πŸ™ŒπŸ½ . I've been challenged by @amanda.valcarcel to make FIXATE : VEGETABLE EGG CUPS before this weekend ends. I was planning to make these tomorrow, but I headed out this morning and decided to make these for lunch instead of my usually spinach, tomato, and feta cheese omelette. . THESE ARE A WINNER! My kiddies enjoyed these for lunch with me. I honestly think they're a little small (I like to EAT πŸ˜‚) 2 egg muffins makes 1 serving. I probably could have eaten the whole dozen easily πŸ˜‚πŸ˜‚ I made my children egg sandwiches by slicing their egg muffins in half and placing them between bagel thins. The recipe in the book doesn't require cheddar cheese, but I topped each egg muffin off with cheddar cheese for some extra umph πŸ˜‹.
