E a graduação alcoólica?! "Só" 95,1%! Por isso apenas 2-5 gotas são usadas por vez ;) --- Another batch of Orange Tincture! This Ingredient is one of our greatest differentials, as it is not marketed (at least here in Brazil). A few drops take the flavor to another level, turning our Shots into something beyond "tools for the body count" ;) And the ABV? "Just" 95,1%! That's why only 2-5 drops are used each time ;) #oetilista

Eliza Tibbets, who introduced navel oranges to California, was born #onthisday
195 years ago (1823). The cuttings and grafts from her two fruiting navel trees (initially brought to CA from Brazil via a US Dept of Ag official in DC) would form the basis of virtually all commercial navel oranges grown in Southern CA during the next century. Some accounts suggest that she watered these pioneer fruit trees with dishwater, but that could be the leftover talk of angry/jealous neighbors from over 100 years ago I suppose. Her Spiritualism might have played a role in the stories surrounding her as well. Whatever the case, she had a huge impact on CA agriculture and US fruit consumption generally. #history #americancanopy #elizatibbets #oranges #trees #riversidecalifornia #navelorange

The Daquiri Evolution
There are so many citrus juices in the world, so why do we only use a fraction of them in classic cocktails?! The answer lies in their sweetness and acidity. Orange juice and grapefruit juice are fairly acidic, but not nearly as much as lime or lemon juice. I decided to resolve that by adding citric acid to a variety of citrus juices to make them more acidic and then made daquiris and whiskey sours and saw how the flavors changed.
for more recipes and experiments!
I added ~6g citric acid for 100ml of navel orange or blood orange juice.
I added 4g citric acid for 110ml of grapefruit juice.
2oz Flor de cana
1oz acidified citrus juice
0.75oz simple syrup
Shake and double strain
2oz Buffalo Trace
1oz acidified citrus juice
0.75oz simple syrup
Shake on ice then shake again without ice for a nice frothy texture
For the daquiris I found the grapefruit juice to be delightful and the blood orange juice to be almost fruit punch-y. The navel orange juice was a little boring. In whiskey sours the blood orange flavor really carried through the whiskey and egg white. All in all an easy way to put a fun twist on classic cocktails.
The fun bird glasses are from savs favorite distillery Short Path. Shout out to Maruyi, Jeff, George, and Albert for helping with the making, photos, and drinking on this adventure.
