Yesterday, I put my 4 kiddos to work and had them mash fruit with a mortar and pestle. They actually spent an hr on this project to customize their own popsicles. Their favorite was the strawberries and golden kiwi (shown in picture), overall it was a success! .
Note: make sure you have the kids clean up their projects! It’s good to build responsibility AND keep the mom sane!

By eating more calories than your body requires (or has burned through 🚴🏽♀️🤸🏼♀️⛹🏾♂️🏋🏼♀️exercise) you can gain weight. 1 pound of fat 💪🏻 is worth 3500 calories.
If your goal is to gain weight than look to eat foods dense/high in calories. Remember⚠️ fats are 9 cal per gram, carbs are 4 cal per gram, and proteins are 4 cal per gram. .
Polyunsaturated Fats (healthy plantbased fats) 🥑🥥🥜are an easy way to increase calories due to being so calorically dense. Try not to choose foods with trans or saturated fats...🌭🥓🥩🍗🍕...OR you can just eat MORE!!!
IDEAS: Sneak some Avo 🥑into your sandwiches or smoothies. Have pb 🥜on your toast or smoothies. Sauté your vegetables 🥦🥒🍆🥗 in coconut oil....any TIPS???

What an amazing day. While we may not be able to sponsor a hospital wing or donate to advanced research, there are tons of smaller acts of kindness we can act on. Today we helped sponsor the TREAT YOURSELF event at Holland Bloorview Children’s Rehabilitation Center, handing out free Nicecream cones to the children, families, volunteers, and staff. We were treated to a tour of the hospital afterwards and were amazed by the facilities and resources available. From the in-house creation of prosthetics to sensory rooms and therapeutic pools, we were in awe of @hollandbloorview.
We can’t wait to help brighten more days with the amazing team there!

Jag har ju alltså visat den förut (den översvämmade läckerheten lite längre ner 👇). Därför funderade jag, för ett ögonblick, på om jag inte skulle ta något annat. En ny bowl, macka eller sallad 🥗 För att ha något nytt att visa er. Men snart tänkte jag "NEJ, varför det? Hur konstlat blir inte det?". Har ju även hört om x antal influencers som bara fotar maten utan att äta 🙄
Så vill inte jag ha det, äter allt jag visar! Och är jag sugen på en Peanut bowl ska jag banne mig ha en 😁 Lika smarrig som vanligt 💖

Quick lunch pic🍫😛 crunchy peanut butter cinnamon chocolate nice cream. Fun fact about me: I started eating peanut butter when I turned 20 😂😂 Everyone always thought I was allergic but I was just so repelled by the smell, the taste, everything about it. Even peanut butter candy (never had Reese’s or a snickers😱) I don’t really know what happened but one day I was just like I want peanut butter and ate about half a container and loved it 🤣 i started eating a lot of stuff I never ate after going vegan so idk if I can attribute it to that or not but there’s my peanut butter life story
Chocolate brownies 👅credits @vegan.niinja
240 g boiled chickpeas*
110 g dates (pitted and chopped)
3 tbsp peanut butter or other nut butter*
100 g of your favourite vegan chocolate (I love this raw dark chocolate)
3 tsbp raw cacao powder
2 tbsp virgin coconut oil
pinch of vanilla ⬇️
(Don't preheat the oven!)
1.Melt the chocolate in a bowl placed over a pan filled with hot water.
2.Blend the chickpeas, nut butter and the coconut oil for some minutes in a high speed blender before adding all the other ingredients.
3.Add the melted chocolate and blend until smooth/well combined (for at least 5 minutes or until the mixture is very smooth.
4.Press out the batter on a baking sheet or make some bliss balls. (NOTE: If you make bliss balls out of the batter, turn them in scredded coconut or popped amaranth and freeze them for some minutes!)
5.Heat the oven to 180°C and let the brownies bake for about 25 minutes. (Note: if you double the recipe, heat the over to 175°C and bake for 30 minutes!) Be careful to not bake the brownies to long, then they will get to dry.
6.Let the cake cool down before slicing it into cubes.

Summer “break” is officially over for me, but I’m keeping my cool with these banana chip nice-cream bars (almond butter choc chunk cookie crust ❗️) and heading into the new school year with big goals and bear hugs after 8 weeks without my kids! There’s something about the hope and enthusiasm of a fresh year that gets me excited, or maybe it’s just the nice-cream sammy talkin... For the Nut-Butter Chocolate Chunk Cookies (crust layer)👇
1/2 cup sugar + 1/2 cup light brown sugar (or 1 cup coconut sugar, whatever you have works!)
2 flax eggs
16 oz nut butter (I used 9 oz @juliesreal
Cacao Espresso Almond Butter, and then mixed @juliesreal
Cashew Butter and @traderjoes
Peanut Butter for the remaining)
1 dark chocolate bar broken into chunks
1/4 tsp salt
1/2 tsp vanilla
Mix everything together well and scoop into 1 inch balls onto baking sheet. Bake 10-15 minutes at 350F.
For the Peanut Butter-Banana-Chip Nice Cream: 👇
2 frozen bananas
1/2 cup full fat coconut milk
1 cup cashews, soaked overnight
1/2 tsp vanilla
2 tablespoons maple syrup
All the chocolate chips your heart desires
Combine all ingredients into your blender/food processor, I used my @vitamix
, and blend until smooth
press the cookies (once cooled) into a loaf pan lined with parchment paper. Scoop the nice cream on top and spread evenly. Freeze for at least 30 min, cut, and serve
This recipe also makes a perfect nice cream sandwich
Matcha love smoothie bowl
1 cup nut milk
1/2 tsp Matcha powder
1 tsp shredded coconut
3 tbsp hemp seeds
1/2 cup frozen mango
1/2 cup kale
1 serving brainon @e3live
A dash of cinnamon + turmeric
1 cup ice
Topped with gf granola, goji berries, blueberries & shredded coconut 🥥

If you know me at least little, you know I would probably give a toe, a foot and maybe my left arm just to be able to have some peanut butter again 🙈🤷♀️🤣. I miss it so much, guys! recipe and I just changed a few things to make it more "my own" 😊. This bowl is topped with chopped dark chocolate, banana, chopped almonds (other goodies I haven't had in what seems too long 🙈) and some peanut butter 😱🤤.
We safely arrived to Greece after a journey longer than expected, a lot of sweat 🤣 and beautiful memories 😊. We are all pretty tired so, we didn't get to explore the surroundings today 😑. CHOCOLATE PEANUT BUTTER NICECREAM 🥜
● 2 frozen bananas
● 80 ml hazelnut milk (1/3 cup)
● 2 tbsp peanut butter
● 2 tbsp cacao powder
● 2 tsp maca powder
● 1 tbsp chia seeds
● 1 tsp vanilla extract
Add all ingredients into a blender and blend until smooth. 😊

Sheet Pan Garlic Herb Butter Chicken & Potatoes😍
1/3 cup low-sodium chicken broth or stock
1/4 cup unsalted butter, melted (reduced fat or light butter if counting calories/fat)
1 tablespoon finely chopped garlic (or 4 cloves)
2 teaspoons chopped fresh parsley
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
1/2 teaspoon salt (adjust to your tastes)
Fresh ground black pepper, to season
4 x 5 ounce 150 grams boneless, skinless chicken breasts
1 pound (500 grams) baby potatoes, peeled and quartered into 1-inch pieces (Yukon gold or White Carisma Potatoes work the best)
1 pound (500 grams) green beans (or asparagus)
Preheat oven to 200°C 400°F. Lightly grease a baking tray / sheet with cooking oil spray, or a light coating of oil. Set aside.
Combine together the butter, broth (or stock), garlic, parsley, thyme and rosemary together in a bowl.
Place chicken on the baking sheet and arrange the potatoes all around the chicken. Toss 1/2 cup of sauce through the chicken and potatoes, and season well with salt and pepper. Lightly spray all over with olive oil spray or cooking oil spray.
Bake in preheated oven for 15 minutes or when potatoes just start to become golden.
Carefully remove baking tray from the oven and flip each chicken breast. Move the potatoes to one side and place the green beans around the chicken on the other side of the baking sheet. Pour the remaining garlic herb butter sauce over the beans, toss well and return to the oven to broil (or grill) on medium-high heat for a further 10 minutes, or until chicken is cooked through (no longer pink in the middle) and potatoes are for tender.
Broil (or grill) for 2-3 minutes until chicken is golden and potatoes crisp.
Sprinkle with fresh chopped herbs (optional), and serve immediately with pan juices.😋❤️
