SPICED PEAR MUFFINS a go!
They’re grain free, fluffy, and more full of fiber, potassium, and folate than apples.

✔️3 small Seckel Pears or 2 Anjou Pears – stems removed🍐
✔️1 tbsp cinnamon
✔️2 tsp ground ginger or 1 tbsp fresh grated ginger
✔️1/4 cup natural Ginger-ale, ginger kombucha, or club soda🥤
✔️1/4 -1/3 c honey🍯
✔️1 1/2 cup almond flour
✔️1/4 cup coconut flour🥥
✔️1/2 cup tapioca starch
✔️1 tsp baking powder
✔️1 tbsp butter or melted coconut oil🥥
✔️Toppings – 1/3 cup candied walnuts or walnuts halves with honey,🍯🥜
1️⃣Preheat oven to 350F. Line a muffin tray or spray with oil.
2️⃣Next, de-stem and dice pears. Place in medium bowl and mix in your spices, ginger ale or club soda, and honey. Let that soak.
3️⃣In another bowl, sift your flours, starches, baking soda, and salt together.
4️⃣In a separate bowl, whisk your eggs until fluffy then gradually fold into your dry ingredients. Mix in your melted butter.
5️⃣Gently pour your pear and ginger mixture into the egg/flour batter. Mix gently until batter is thoroughly blended.
6️⃣Pour batter into oiled or lined muffins cups. Set aside.
7️⃣Crush your walnuts, pour into a bowl, then mix with a pinch of cinnamon and 1 tbsp or more of honey. Scoop these on top of the muffins before baking.
8️⃣Place muffins in oven on center rack and bake at 350F for 22-25 minutes or until muffins are golden brown.

I have spent so many hours researching Celiac Disease. I found out more than I ever thought possible. I found out more than my doctor told me. I remember getting the call saying my tests came back positive for Celiac Disease. .
All my doctor disclosed was, “You have Celiac Disease. From this point forward, you should eat gluten free. Any questions, let me know.” .
But, what about all the damage I had just done to my body for 20 years?
That’s when I turned to Celiac Disease: A Hidden Epidemic. .

I always feel awful til I’ve had a falafel! Seriously fell in love with the newest build-your-own-bowl fast casual restaurant to hit the Boca scene, aka @eatanzo.
Originally starting out as the Chickpea on Clematis and in Boynton Beach, this Mediterranean style restaurant has great food and MANY #glutenfree
options. Every item has its own unique flavor, which makes the bowls (or pita) taste AMAZING! Did I mention they have a gluten free chocolate chip cookie that is so good, it will make you question whether it is actually gluten free (I promise, it is!). They also make their own drinks in- house that are super fresh. I am already planning my next meal back at Anzo! What we had: 1️⃣. Build your own bowl- falafel, vegetable quinoa, brown rice, sweet potatoes, pickles, pickled onions, garlic broccoli, and marinated tomatoes; 2️⃣. Build your own pita- brown rice, turmeric basmati rice, braised lamb, and crunchy tzatziki; 3️⃣. Gluten free chocolate chip cookie; and 4️⃣. Pistachio spanakopita (not gluten free).
Seared duck breast with salad, mashed sweet potatoes and purple cauliflower sauteed in duck fat.
Pretty easy meal to prepare. Duck breast with salt and pepper cooked in a cast iron skillet on medium from cold. Started skin down to render the fat and crisp the skin. Flipped it halfway and stuck a temp probe and let it get to 125°F. Take out and rested it for 5 min.
Sauteed the cauliflower in the remaining duck fat and then sliced and plated.
Nuked some Trader Joe's frozen sweet potato mash to finish it up.
This meal cost under $8 to make, probably pay over $15 in a restaurant.

Avocado, Chocolate and Coconut Mousse (gluten free and vegan). Ingredients:- Topping:- 2tbsp gluten free jumbo porridge oats, 1 1/2 tsp dedicated coconut, 1 tsp agave syrup. Combine in a bowl then spread on to a lined baking tray. Bake at 200/gas mark 6 for 6 mins until crisp and golden. Mousse:- 2 ripe avocados, 4 tbsp cacao powder (I used @lucybeecoconut
), 5 tbsp agave syrup, 1/2 tsp vanilla extract, 4 tbsp dairy free coconut milk yoghurt. Blitz the avocado, cacao, agave and the tiniest pinch of sea salt until smooth. Add the yoghurt and blitz again. Spoon into 4 small glasses/ramekins. Eat straightaway or chill for up to 24 hours. Sprinkle on the topping just before serving or top with whatever takes your fancy, e.g., raspberries, chopped banana, nuts, the possibilities are endless. Enjoy! 😍
