Breakfast Idea: Curried tofu grilled cheese sandwiches by @yummyyatra
for the tofu filling ⠀
1 pack extra-firm tofu⠀
1 tsp coconut oil⠀
1/4 tsp black mustard seeds⠀
1 medium onion, chopped⠀
1/2 tsp salt (or more)⠀
1/3 tsp turmeric powder⠀
1/3 tsp cumin powder⠀
1 Serrano pepper, chopped⠀
2 tsp garam masala or curry powder ⠀
1/4 cup cilantro, chopped⠀
Juice from 1/3 lemon⠀
Other ingredients ⠀
Sandwich bread slices⠀
1 large tomato , sliced (optional)⠀
Vegan mozzarella cheese (about 2 tbsp per sandwich)⠀
Dairy free butter (about 1/4 tsp per side)⠀
Drain the water out of a pack of extra firm tofu. ⠀
Wrap the tofu with some paper towel and weight it down with some pot or cans. ⠀
Leave aside for an hour for the tofu to dry and release as much water as possible.⠀
Crumble the tofu and set aside. ⠀
Heat a deep skillet on medium heat. ⠀
Add a tsp of coconut oil. ⠀
Add 1/4 tsp of black mustard seeds. Wait for a few seconds for them to start spluttering. ⠀
Add 1 chopped red onion, 1/2 tsp salt, 1/2 tsp turmeric powder, 1/2 tsp cumin powder, 1 Serrano pepper (or more if you like it spicy) and sauté for about 2-3 minutes. ⠀
Now add 2 tsp of garam masala or curry powder. Stir.⠀
Add the crumbled tofu. Mix well.⠀
Add 1/4 cup chopped cilantro and juice from 1/2 lemon. ⠀
Check for seasoning and add more salt or spice at this stage, if you like, and set aside. ⠀
For the grilled cheese - ⠀
Take 2 slices of your favorite bread. Add 2 heaping spoons of the curried tofu on to one slice, a slice of tomato (optional), top with dairy free cheese, cover with the other slice of bread, spread some dairy free butter and toast on both sides until the cheese starts to melt (Use a cast iron skillet for a perfect crispy on the outside, soft and gooey on the inside texture) for approximately 2 minutes on each side on medium heat.⠀

I tried overnight oats for the first time this week. Cold oats just didn’t appeal, even though I actually love porridge and baking with oats. But I gave it a go because I wanted a make ahead snack that I could have after the gym to save time in the morning, and overnight oats seemed like the perfect solution. Now I realise I was missing out and love overnight oats. The overnight oats I’ve been making are fig and “caramel” overnight oats. Oats, almond milk, flaxseeds, cinnamon, cardamom, maple syrup and chunks of my “caramel”- which is really just almond butter, coconut butter and maple syrup mixed together. Topped with figs. Going to put the full recipe on the blog soon! 😍
🍃Paleo Brownies con Pimienta Cayena & Sal Marina🍃 (Versión libre de huevos)
2 batatas #sweetpotato
medianas sancochadas u horneadas
200grs de chocolate Bitter
1 cucharadita de cacao en polvo
Sal marina gruesa
Pimienta Cayena al gusto (debe quedar un poquito picante) opcional
Convertir la batata en puré y agregar el chocolate derretido. Combinar hasta tener una mezcla homogénea para incorporarle el cacao, sal marina pimienta cayena y lo que vayas a utilizar para endulzar (papelón miel Stevia Xilitol) y al tener la mezcla homogénea, dejas reposar la mezcla por 5 minutos y luego llevar al horno 350ºF Por 20 minutos.

With it being summer time its easy to eat poorly, with cookouts, vacations and as for us its been family coming in town and wanting to try new restaurants! Everyone needs to do a cleanse once a month to help us stay dedicated to our #goals
and live a healthier more fulfilling life. I'm so blessed to have found an amazing program that helps me not diet but change my lifestyle habits so I can have fun on occasion but also focus on healthy foods that are delicious. So last night was family movie night and I made a smore's dish with homemade popcorn. I just use a "cleaner" name brand of marshmellows and chocolate so its not total crap. But we need those cheat days its all about 80/20. 80% do your best, 20% your human and enjoy life. Its all about being dedicated-definition : the quality of being dedicated or committed to a task or purpose, wholeheartedness, commitment. Are you dedicated to your health or your families health?

Another delicious breakfast at work! Instead of the egg sandwiches, I had 2 fried eggs over some avocado slides. Perfect post-workout meal!

I had a lovely time at The Happy Tummy event last night at Powder & Magazine. Which coincidentally is my local restaurant so it was amazing that this event was here!
It was such an informative and welcoming event, listening to Lottie and the IBS clinic talk was so interesting and relatable, I’ll be checking out more of their work!
All food prepared was Gluten Free, Dairy Free and Low Fodmap and we got to try some cocktails! I can’t wait for them to bring the menu out officially as I’ll be there straight away 😂
2nd pic: This was a Raw of the Wild Kambucha gin cocktail, I’ve never tasted something quite like it before but it was nice!
3rd pic: little nibbly bits on the table, the bread was soaked in olive oil and salt and was probably the tastiest bread I’ve had in an extremely long time! There were also these seeds which were so nice but I don’t actually know what they were 😂 There were also olives to try but I’m not a massive fan of them so left them.
In the bottom of the pic you can also see my passionfruit martini which was so good!!
4th pic: These were the starters there was mackerel on the left with Kentish tomatoes, tempura squid in the middle which was just incredible, red pepper dip and shaved beef fillet. I’m usually not a fan of beef but this was delicious and really rare which is how I have liked it before!
5th pic: Raw of the wild Kambucha drink
6th pic: vegan fish and chips (tofu in gf batter with chips and sweet potato fries) I’m not a fan of tofu so I did try it but it still does nothing for me the same with sweet potato fries to be honest but the normal fries were lovely!
7th pic: Salmon chargrilled with carrot purée.
Oh my god this Salmon was so soft and full of flavour! I loved it!
8th pic: Chicken breast with oyster mushroom jus. The mushrooms were lovely and peppery and the chicken was lovely.
9th pic: Venison with warm puy lentil salad and berry compote. The compote went so well with it!
10th pic: Cranberry jelly with summer fruit which was so yummy! Blood orange sorbet which was 🙌 and chocolate brownie which reminded me so much of these brownies a girl at uni used to make which were vegan and gluten free as well!

Salen 12 muffins 😎
🌰2 taza de harina de almendras @naturalseedarg
🌰2 huevos (para versión vegana 2 cucharada de semillas de lino en polvo con 1/2 taza de agua)
🌰4 cucharadas de miel @lasquinas
🌰1 banana, bien madura
🌰50 gr de cacao @cacaoelquilla
🌰1/4 cucharadita de bicarbonato de sodio
🌰1/2 cucharadita de polvo para hornear @condiment_celiacos
🌰Un Puñado de Nueces triturado o cortadito previamente .
🌰 Precalentar el horno a fuego moderado
🌰Enmantecar un molde para muffins o poner el molde y los 12 pirotines .
🌰En un bowl grande, mezclar los huevos, la miel y la banana pisada. . .
🌰En otro bowl, tamizar la harina de almendras con el bicarbonato de sodio,el polvo para hornear, el cacao e incorporar a la mezcla de banana. .
🌰Incorporar todo muy bien! .
🌰Qué les quede homogénea la textura,si la ven muy espesa agreguen un poquito de agua.
🌰Por último agregamos las nueces (o lo que quieran) y mezclamos
🌰Rellenar 2/3 de cada molde o pirotin con la preparación.
🌰Llevar al horno y cocinar por 25 minutos .
🌰Retirar y dejar enfriar antes de desmoldar.
🌰Cómo te das cuenta? Yo los pincho con escarbadientes o un cuchillo,si sale seco ya están,si sale con masa le falta.

One of my FAVORITE things to make post workout (or for a sweet snack) is a smoothie bowl. They are so simple, good for your immune system & fun!! I like to make my bowls with acai powder, a superfood / energy boosting antioxidant for your body. It’s perfect for smoothies and smoothie bowls! You can top with whatever, but here are my usual preferences:⠀⠀ ⠀⠀ ⠀⠀ ⠀ ⠀ ⠀⠀ ⠀⠀ ⠀⠀ ⠀⠀ ⠀⠀ ⠀⠀ ⠀ • handful of frozen berries / strawberries, raspberries, blueberries
• frozen banana
• 2 tbs acai powder / I like to use the 100% acai powder, because it tends to last me longer (and it tends to be less expensive).👍🏼
• 1/2 carton of banana @premierprotein
/ you can use almond milk, protein milk or whatever best suits you!
• Mix to whatever consistency you’d like! It’s better to be on the thicker side so your toppings don’t just sink. • Top your smoothie bowl with whatever you’d like! Here I have a low carb gf granola, strawberries, chia seeds (YES to healthy fats), and cacao nibs.
