Daydreaming back to breakfast yesterday at a local cafe after cutting down our Christmas tree 🎄 I could only eat half of this MASSIVE sammy but it is my favorite combo: egg, hummus, avocado, and loaded with vegetables: roasted red peppers, spinach, cucumber, tomato, & red onion on an everything bagel 🥑 So good, and so filling I had the other half as leftovers today! 🤤 There are so many ways to load up on veggies in the morning, you should try it! 🥒🍅

Stuffed Acorn Squash inspired by a recipe in Bri McKoy’s book, Come & Eat. I love that so many are writing about the table, and the importance of gathering there. God our Father was right all along and knows our need for nourishment, slowing down, feasting, fellowship. Daily. Not just on the special occasions. Phil’s pork roast yesterday for Sunday lunch was preeeety amazing too. We get home from church later than we were used to in Pennsylvania and are always beyond hungry, so anything we eat seems extra delicious!⠀
You can find Bri’s recipe in her book. My rendition goes as follows: ⠀
•Split squash and scrape out seeds (reserve for roasting for a healthy snack that we always scarf down here!) • Butter insides of squash and place face down on pan, roasting for 30 minutes at 400 degrees. • Meanwhile, chop one onion and one cored apple, sauté in 1 tablespoon oil til onion is slightly caramelized. Add two cloves chopped garlic and one pound venison sausage (or ground with a little sage + salt and pepper to taste) and fry til no longer pink. • when squash is tender, scrape out most of it, leaving about a quarter inch in place. Mash the squash and mix with the burger mixture, fill squash shells, top with cheese ...I had mozzarella on hand...and bake til cheese is melted. • Note: I had extra butternut squash in my frig, already roasted, so I mixed in some of that as well because butternut (sweetness) is my favorite squash!⠀ ⠀

French toast for breakfast! Sprouted bread dipped in egg whites, unsweetened almond milk, and cinnamon. Then I poured a little of the pancake syrup from the first THM cookbook and a little of the handy chocolate syrup from THT on top
My baby boy came in to our living room today carrying a little bag and handed it to me, inside this precious necklace, his gift to me for my birthday. It’s a heart shaped little bean, our name for our tiny person before he was born. A blessing we were not sure would arrive. 💫
It was a long journey for us with some sadness along the way I kept private and much praying. We were discussing fertility options just moments before we saw our little bean on a very early scan. We were told to come back 3 weeks running to see if it would grow into a pregnancy. We held our breath and one month later we had confirmed news of our little angel with a due date of Feb 28th.
I committed to nine months holistic wellness combining nutrition with fitness + holistic health practices, acupuncture and homeopathy to balance the body together with much ‘tuning in’ and practicing meditation to nurture little bean.
We opted for hypnobirthing an incredible experience. His early arrival on Valentine’s Day via c section due to a long birthing + precaution with his heart rate fluctuating, my dream came true 💫 and I held our boy in my arms, a feeling I cannot describe. He proceeded with his strength to stabilize in NICU for the next week, the longest week of our lives.
From the moment we were home he’s grown into a happy healthy joyful little person two next year.

CREMA DE PUERROS, CALABACÍN Y GUISANTES (Receta adaptada de mi querida hermana @cpanizo
❤️) INGREDIENTES para 3-4 raciones:
✨1 cebolla blanca
✨1 calabacín verde grande ✨2 puerros grandes ✨1 taza de guisantes ✨sal, pimienta negra, aceite de oliva ✨Nata de soja para darle cremosidad
1-Poner todas la verduras (menos los guisantes) en una olla grande y suficiente profunda. Llenar con agua hasta que cubra.
2-Dejar hervir hasta que el calabacín esté cocido. Después añadir los guisantes y dejar un par de minutos.
3-Triturar al gusto, echar un chorrito de nata de soja, salpimentar y listo!
Queda riquísima y esta lista en apenas 15 minutos 😊😊😊
Black-eyed peas recipe (Indian cuisine )
Black-eyed peas – 1 cup, soaked overnight
Onion – 1 medium, finely chopped
Tomato - 1 medium, finely chopped
Green chilies – 3, chopped
Garlic – 8 cloves, finely crushed
Ginger – ½ inch piece, finely crushed
Cumin seeds – ¾ tsp
Turmeric powder – ½ tsp
Kashmiri red chili powder – 1 tsp
Coriander powder – 1 tsp
Garam Masala – ⅓ tsp
Salt – to taste
Coriander leaves – 2 tbsp, finely chopped
Oil – 3 tbsp
Water – 1 and ½ cup
For preparing the black-eyed peas wash them, rinse them and soak them in enough water overnight. Drain it when ready to cook them
Heat oil in a pressure cooker. Add cumin seeds and allow them to crackle.
Add the onion and sauté it till it turns golden.
Add the green chilies, garlic, and sauté for 2 min
Add the tomato and cook till it turns soft and the oil begins to separate.
Add the spices; turmeric powder, Kashmiri red chili powder, coriander powder and garam masala. Mix well and sauté for a few seconds.
Add the black-eyed peas and cook it well along with the spices for 6-7 minutes. Sprinkle some water when the mixture gets dry.
The oil separates again.
Add water and salt. Pressure cook for 2-3 whistles till the black-eyed beans are done.
When the pressure gets released, open the cooker.
Finish the dish by adding chopped coriander leaves.
