Ravishing Risotto ✨ Listening to the news this morning I heard the startling idea that the FOOD YOU EAT CAN AFFECT YOUR MOOD 😱 Crazy hey 🙈. . Anyway sorry to start the day with a little sarcasm BUT I am always slightly surprised when the mainstream media suddenly starts announcing things the world of #functionalmedicine has been saying for SO LONG as if it were an Earth shattering discovery 🤷🏻‍♀️. . Moving SWIFTLY on though chaps OF COURSE the things we choose to #nourish ourselves with will absolutely affect how we feel as there is an inextricable link between our nervous & digestive systems in terms of signalling, as well as the availability of nutrients for all our metabolic processes 💛. . And that’s AFTER the JOY we get from the actual APPEARANCE of our plates 😍 I mean a #midweekmeal like this beautiful #risotto is a sure fire way to brighten my day 🙋🏻‍♀️. . I’ve popped the simple #recipe below for you, & I would LOVE to hear your favourite #goodmoodfood 😃. . HAPPY WEDNESDAY EVERYONE 😘 #eatwithyoureyes . . {FENNEL & FIG RISOTTO} Serves 2. 1 small fennel bulb. 1/2 pack @organicorealfoods primavera risotto. 2 fresh #figs . 1/4c walnuts. Small handful parsley . 1tbsp lemon juice. 1/4tsp coconut oil. 2c boiling water. . Heat your oven to 190C, cut the #fennel into 1/4, rub with a little coconut oil & toast for 20 mins. Meanwhile take a sauté pan, add the 1/4tsp coconut oil & the #rice , toss lightly over a gentle heat to toast. Begin adding the water 1/2c at a time, stir & leave to simmer. Continue with the rest of the water as the rice absorbs it, check for texture & add more water if needs be. Shred the parsley & roughly chop the walnuts. Last year a review took place which looked at all the research on fruit and vegetable consumption and health related outcome. The results concluded that we should be looking towards 10 portions per day to improve health. So if people aren’t meeting 5 a day how can we reach 10 and is it worth it? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For each 200g a day increase in fruit and veg, the risk of developing cardiovascular disease was 8% and 3% for total cancer. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 80g is classed as one portion and is approximately one handful (smaller for dried fruit). It includes tinned, frozen, fresh, juiced, dried or cooked. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It’s best to go for different colours as they all contain different nutrients. It is the fibre, vitamins, minerals and antioxidants in fruit and vegetables that have been shown to support health. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Breakfast might include the addition of fruit, juice or dried fruit. Snack could include celery with nut butter, vegetable crisps, smoothies, handful of tomatoes and grated carrot to lunch evening meal might be roasted mixed veggies or adding lentils to your Spaghetti bolognese. ⠀⠀⠀⠀⠀⠀⠀ These recommendations target the general population. The Ayurvedic physicians of India used it for many purposes, including as a diuretic. Coriander is 85 percent volatile oil’s, containing at least 26 of these energetic compounds. Two of those oils, linalool and geranyl acetate, are powerful, cell protecting antioxidants, and are probably behind many of coriander’s curative powers. Did the time 🥣 Apple, pears, carrots and chicken bone broth. Fruits/carrots to stregthen, bone to rejuvenate. I cook at least once a day, but the last 2 week's I even hit 4 times a day- haven't had much time to take a photo! Trying to fit into the school schedule best we can, and keeping the heart of the home (the kitchen) strong means keeping our bodies strong.
