PAPPARDELLE WITH TOMATOES AND BASIL
You can really use any type of pasta you want with this dish. I stayed loose on the measurements for the ingredients. When cooking pasta, I like to just throw ingredients in, so use the amount of tomatoes and basil to your liking.
1 package Pappardelle pasta
2-3 tablespoons extra virgin olive oil
2-3 fresh garlic cloves, minced
cherry tomatoes; cut in half
kosher salt and pepper
crushed red pepper flakes (optional for some heat)
½ cup - 1 cup crushed canned tomatoes (I used my fave canned crushed tomato sauce; I only add a little to help wet the noodles)
black olives; cut in half
fresh basil; torn
fresh mini mozzarella balls; cut in half
freshly grated Parmigiano-Reggiano
Boil pasta in a big pot of salted water. Cook according to package instructions to al dente. Drain, rinse and set aside.
Using a large pan, heat the olive oil over medium-high heat. After a minute or so, add the garlic. Cook for about a minute or 2 and then add your tomatoes. You want to cook them until they are about to burst but do not; for about 3-4 minutes. You still want them somewhat firm and not too soft. Season with salt and pepper and the red pepper flakes if using.
Add in the crushed tomato sauce, olives and the pasta and mix to coat the pasta noodles with the sauce; for about 2 minutes. Lastly, add in the basil and mozzarella balls and gently mix everything up; for about a minute or 2.
Serve with freshly grated Parmigiano-Reggiano and enjoy!

Pumpkin Spice Waffles 🍁
if i may say so myself, these might be one of the best things i’ve made so far. that’s all i really have to say on this wednesday morning. oh and that it’s hump day which means we’re halfway through the week. remember two days ago when you thought you’d never make it to the end of the week? well, now you’re halfway there! next time you catch yourself feeling like you can’t keep up and you just want the week to be over so you can have time to yourself, remember the times when you are enjoying every moment. that time passes by too quickly. it’s the same amount of time—just our perceptions of it change. if it feels too slow, remember that in the grand scheme of life, it’s never enough time.
1 c flour (or whole wheat flour or gf flour if you can’t do gluten)
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 tsp cinnamon
1 tbs pumpkin spice (be generous here)
1/2 c milk of choice
1/4 c melted coconut oil
1 tsp vanilla
2 flax eggs
and I threw in a handful of pumpkin seeds in there for some crunch but mostly to rlly bring the theme home. hope you enjoy!!

PINK DRAGONFRUIT. Had the opportunity to stuff myself silly with one of my favourite fruit! It is from the cactus family and loaded with great phytonutrients and antioxidants including vitamin C, carotene and lycopene (responsible for the red colour!)
Lunching with FAT Salads!
Combat scratching your head each day on what to have for lunch by planning ahead to have key foundational ingredients in your house most of the time (or at least Monday to Friday when your taking lunch to work!)
Key foundational items I always make sure I have to make my FAT salads are:
✅ Washed greens - rocket, spinach, cos ✅ Olives
✅ Seeds - hemp, sesame, sunflower or pumpkin
✅ Olive oil
Then I had any extras such as protein (usually hard boiled eggs as displayed here) and left over veggies from dins the night before. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
This ain't your typical salad. Its loaded with good fats that keeps me satiated till dinner. No snacking required!

PROTEIN 🍗 // Did you know that protein signals to your body that you’re full by increasing production of the hormone that signals satiety? It also increases the hormone associated with control and reducing your appetite? When you eat protein it also triggers the release of dopamine, your reward hormone. One of the most interesting things I find is that a LACK of protein triggers the production of a hormone that causes you to have more cravings for carbohydrates. If all of that wasn’t cool enough, protein contains B vitamins and minerals that help with overall food absorption and is a source of amino acids which is a building block for our cells. I advise my clients to include some quality protein at every meal or snack!

Today’s gluten, grain and dairy-free lunchbox. Salmon and dill fish cakes (I used ground almonds instead of bread crumbs), with oven-baked sweet potato chips and salad leaves with cold-pressed hemp seed oil dressing, almonds, sunflower seeds 😋.
Salmon: Omega 3 EFAs + protein.
Sweet potato: beta-carotene (Vit A), low GI carbs, fibre, magnesium, vit C.
Almonds: magnesium, fibre, vitamin E, calcium, healthy fats.
Sunflower seeds: magnesium, selenium, phosphorus, folate, healthy fats, vitamin E, fibre.

We all know by now that chocolate (actually cacao) helps to improve your mood.. But did you know that it could also help to alleviate stress and contains antioxidants and minerals like iron, copper and maganese?!🙌🏼✨ .
Unfortunately, this is not a free ticket to eat as much chocolate as we want (though I still sometimes do.. Ooops). Make sure to check your labels and try to choose chocolate with at least 70% cocoa content, contains less than 7 ingredients and that preferably uses natural sugars like stevia, or raw honey.
If this🔝 isn't possible, don't beat yourself up! Remember the aim is progress, not perfection. ✨

I required nourishment on all levels today. I took a walk in the brisk nearly autumn air, sat in silence for over an hour, curled up with a book by the electric fireplace, and went to the park with my son where I removed my shoes to feel the grass under my feet. To top it off I made a roasted tomato and pepper soup from scratch (Sprouted Kitchen) with homemade croutons and cheesy toast. Once my son goes to sleep I’m going to dig out some slipper socks and snuggle with a cup of hot tea. Nourishment level 100. #selfcare #recharging #holdplease

. Tbh my thoughts towards competing has changed a little. I used to fiercely be in a “intense prep mode” being so strict on myself and letting nothing get in my way. Since competing a few weeks ago I have backed off a little, I’m being kind to myself and bringing the most natural relaxed ME to the stage that I ever have.
Being a Mum of 3 has been a complete game changer when it comes to strict “diet & training patterns”. It is so important that I keep my head & my health for the welfare of my children and my house hold. I plan on bringing a FIT, NOURISHED, HEALTHY me!. I am entering the #fitmums
category and want to live my life as an example to other Mums. Be active but eat the cake every now and then. We are human and food is so bloody good haha so lets enjoy being balanced!! .

Now autumn has really settled in around us ~ bringing with it all that rejuvenating rain, mist-draped mornings & the intoxicating smell of damp-earth in the air ~ I find myself repeatedly drawn back to the comforting chocolatey 'fullness' of this plant powered & nutrient-packed vegan hot chocolate 💕💕
Need a bit of this in your life??!.... Here's how ~
✨Steam cook 50g (raw weight) cauliflower - packed with vitamin C to top up your immune system ready for the impending wintery germ-fest 😷😷🤧😉
✨Once cooked add cauliflower to high speed blender with 150ml plant-based mylk (I use a combo of plant mylk & the cauliflower cook water for extra nutrients)
✨Add 1tbs sunflower seeds (soaked overnight is even better for unlocking the plant-goodness), 1-2 medjool dates (depending on sweetness), 1 tbsp cacao powder and a pinch of ground cinnamon & cayenne pepper (optional.. but oh so good to really bring a bit of autumnal fire to your belly 🔥🔥)
Blend well until smooth and warm gently in pan to serve. This makes a super rich & thick chocolate, but feel free to add more mylk to thin-down if desired...

We have been loving sweet potatoes over here the past week! As the weather changes I find us craving more hearty warming dishes.
For Ella we have been taking elements of our stews and smashing them up, so she is having somewhat the same flavors as we are. This makes food prep for Baby extremely easy and way less time consuming!
These sweet potatoes were simmered in bone broth from a stew we had this past weekend! We picked some of them out, smashed them, topped them with a little ghee and a sprinkle of Cinnamon and Himalayan salt.
It’s easy to get consumed in thinking what the “right” thing to feed our children is. However I am learning and trusting more and more that by living a healthy lifestyle ourselves as parents, we are leading by example. Sitting down together as family and sharing food that has been made with love and cooked with intention is the best nutrition we can offer!

🍍trying to ease the back too school sniffles with a pineapple papaya and turmeric smoothie, while I’m usually in favour of eating not blending your foods a smoothie is a great way to get nutrients in if you’re feeling below par 🤧🤒 I used the juice of half a lemon, a thick slice of pineapple include the woody core as this is where the magic lies, it contains bromelain a powerful anti inflammatory used for clearing stuffy noses also easing aches and pains and soothing digestion, papaya contains papain an enzyme which supports the actions of bromelain, I also added half a teaspoon of @viridiannutrition

Quick and easy blender salsa. It was my last ditch effort to use up the last of the 75 pounds of tomatoes 🍅 and a bumper crop of bell peppers from our garden. It’s so easy, maybe the easiest recipe I’ve shared yet.
It’s totally scalable. These measurements make one good batch. So you could whip it up quick for Taco 🌮 Tuesday.
6-8 tomatoes 🍅
2 bell peppers
mix of small peppers 🌶
1.5 tsp cumin
1.5 tsp salt
3T lime juice
If you need more spice, add a dash of hot sauce or choose hotter peppers.
We love adding a couple of drops of Lime Vitality too for an extra lime kick. Zing!!
