It’s Megan @chatandchop , if you haven’t been able to tell, I like to have fun. Sometimes I bring wigs to my cooking classes… because who doesn’t laugh a little when they put a brightly colored wig on?!?! When you are in this, it can be all consuming and overwhelming, but I hope for you is that you find ways to “wig out” - mix it up, add some humor, lightness, and fun to all this… (which I know is much easier said than done, but is possible!). Eat on pillows on the living room floor, play music that makes you shake your booty, wear a wig or a formal dress while cooking, whatever you find that makes you laugh, makes you uncomfortable, or makes you grow, do it… It’s essential to healing. Hi there, it’s Megan Gilroy. I am and always have been a sucker for dips and sauces.. of all kinds. My refrigerator is full of jars labeled with the many different things that I frequently dip veggies and meat into. That’s why I felt it appropriate to share two my most recent dips that I’ve been enjoying… the green one is a chimichurri sauce… I love to drizzle it on meat, sautéed plantains, or stuffed sweet potatoes. The other is my take on a sweet ceasar-dressing dip. For this one, I use Worcestershire sauce from @instinctualwellbeing (I like to keep it on hand). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipes below: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Chimmichurri: 1 shallot 3 garlic gloves ½ c red wine vinegar 1 bunch of cilantro ¾ bunch of parsley 3 TBSP fresh oregano ½ c Extra Virgin Olive Oil or Avocado Oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Blend in blender until a smooth but still herby mixture. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Sweet Ceasar: ½ c Coconut Cream 1 c Zucchini Squash, chopped ½ c. Avocado 2 TBSP Worcestershire from @instinctualwellbeing 2 TBSP Capers ½ tsp Sea Salt 1 TBSP fresh Lemon juice 1 fresh Garlic clove ¼ tsp Onion Powder ¼ tsp Turmeric (optional) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Blend in blender until smooth fully blended. Just finished a run w this guy, two yrs ago, this would not have been a big deal, but since embarking on healing my narcolepsy with no meds, exercise has been limited. Incredibly grateful for healing & ability to be physically active. Oh yes, this is me!
