Last day of school holidays and the girls and I made up these ugly but delicious almond butter choc chip biscuits. 🍪
All you need is a cup of almond butter, an egg, 1/2 teaspoon of baking soda, 1 teaspoon of vanilla extract, 2 tablespoons maple syrup (or honey), 1/2 teaspoon of salt and 1/2 cup dark 70% chocolate buttons. 🍪
Stir everything together in a bowl until well combined. If needed you can add either coconut oil to loosen it up or almond meal to thicken it up. Put tablespoons of the mixture on a lined baking tray, flatten slightly, and bake in a 150^C oven for 15 minutes. Allow to cool. To make these double choc, you could add a teaspoon of cacao powder into the mixture before baking. 😋

Feeling really overwhelmed with a rather large list of things I need to get done today 🙈 It’s been a massive week of packing, moving house, working & hurting my back in the process 😬. I haven’t been eating as well as I usually do over the past week (partly because our kitchen stuff was packed & partly because I was too tired to cook 🙈) but man do I feel crappy for it. Eat rubbish- feel rubbish. • So now that we’re settled into our new place, I’m cooking up a storm of real food goodness for the week 😍 • Roast veggie salad, eggs, Thai-style stir fry, lentil bolognese, turmeric cashew chicken with red rice and chai spiced stewed apples are on the menu 🤤🌿 • When you eat well, you feel well. Sometimes it doesn’t need to be complicated. 🌱We often know what we need to change to move towards a healthier lifestyle, but knowing this is very different to taking action. 🌱 THIS WEEK what is one simple thing you can do to take control of your health? 🌱
Do you use soap or body wash? Do you know what’s in the product you use? Do you understand the ingredients? A standard bathroom can contain cupboards full of toxic and disposable products. You need to look out for ingredients like Parabens, Phthalates, Fragrances, SLS and SLES, Lead, Formaldehyde etc. Look for natural based soaps made of coconut or olive oil with essential oils as the fragrance not a chemically made synthetic one. There are plenty of options out there now in your grocery store, health food store or bulk food store, so there are no excuses for putting your money into companies pockets that do not care about your welfare. Take charge of yourself!!

I didn't have a cracker so used a tea towel and a 🔨. worked a treat!
I placed them in a jar and straight into the fridge to keep the fats and oils fresh. If you've ever eaten a rancid & oxidized nut... you'll know it's extremely unpleasant & unhealthy.
Any dish with pesto is a favorite in my book! I especially love this recipe not only because it’s a delicious and fulfilling vegetarian meal, but it’s also loaded with key nutrients to help fuel the brain such as b-vitamins, slow-digesting whole grains, essential unsaturated fatty acids (almonds, pesto/nuts, edamame, olive oil). 🥗🥦🍣🍓🧠

I missed these little crunchy crackers from Europe. Light, airy and perfectly craquant. Smeared with homemade almond butter and a drizzle of lavender honey, this was my go-to breakfast (and snack.) Stateside, my breakfast routine has gone the nutritional-smoothie route. .
With sudden onset of adrenal fatigue (read: STRESS!) I needed to up my breakfast game. Bone broth powder, MCT oil, licorice root, a zinc/copper combo, 1 tsp maca powder, 1 tb ground flaxseeds, beet root powder, mushroom powder, a heaping spoonful of cocoa powder, organic milk and lots of ice. Et voilà! .
EXCEPT on Saturday’s and Sunday’s when The Hubs cooks a full meal: farm fresh eggs, uncured bacon, simple sausage patties, and sweet potato hash browns. .

An enriching life, and discovering what that means to you particularly, requires alot of exploration and stepping outside of comfort zones to find out what works for you and what doesn't. An enriching food and cooking experience requires exploration of different types of food and different flavours in order to discover what blends well and what doesn't, and yes this also entails stepping of the comfort zone. .
For me personally I had always struggled venturing beyond salmon in terms of cooking fish. Every week I would throw a couple of pieces of salmon inside the oven to bake away and serve up with varying veggies and salads because its easy and I know how to deal with a piece of salmon. Yet every week, while caught up by this simple, comfortable routine, I would miss out on discovering just how delicious other types of fish can be with different herbs and spices - in this case locally sourced coral bream.
So last night, inspired by having guests over for dinner I decided to put the pressure on and try and cook something new! Baked in the oven with coconut oil, freshly grated ginger, crushed garlic, chilli, fresh lime juice, tamari sauce and sesame seeds, and garnished with fresh parsley and spring onion, this white piece of fish went beautifully with an Asian stir fry. Philosophical moral of the post? Never be afraid to try something new, you never know how it may better your life! #lovingwellness #coralbream

when I can I make sure to hit up the markets on a Sunday for my weekly food shop. $50 goes a long long way at the markets getting you a range of fresh fruit and veg and seasonal produce! I like to work with budgets - and am all to aware of the rising cost of living and food prices. So for me a great cost saving method is to hit up the markets first - and plan my meals for the week around the goodies I find. I will then hit up the local Coles or woolies and have a budget for pantry, fridge staples and household items usually around $100 depending if everything has run out all at the same time! (Like usual 😒) if Mr special (Kyle) is with me that might stretch out a little as whatever is on special usually ends up in the trolley! Following that I will swing by the butcher on the way home to buy any meat, poultry and eggs, again with a budget of around $50. So for around $200 a week you can purchase local, fresh produce along with your household products- bear in mind this is for 2 people, and would defiantly need some tweaking in buying in bulk for a family of 4. This method may not be feasible for everyone - so what I would recommend if you can do 1 thing, is to try going to the markets and see if it makes a difference to your weekly food expenses. How do you know if you're making progress (or not) unless you track it?? I get my bloods tested every 6ish weeks. The main things I get checked: full blood count, ESR (active + chronic inflammation marker) CRP (acute inflammation marker), liver and kidneys function.
The numbers tell me a lot about
1. how what I'm eating/supplementing is affecting my body
2. how much stress is affecting me (for example if eating is perfect)
3. if I'm getting worse or closer to remission.
I phoned up my GP for my results yesterday. Very exciting news; ALL of my numbers are in the "NORMAL" range. I collect a hard copy on Monday for actual numbers, but to hear "normal" from the nurse is beyond amazing!! I have not had both ESR + CRP this low in what seems like forever.
If you are sick and continuing to do the same things you have always done and eat the same way you have always eaten, you will continue down the sick path. No chemicals will heal you. This might make some of you angry. I am here to spread the PROOF that you can heal. Everyone deserves to live their healthiest life.
