Anyone else ever so afraid of failure that they don't even try? This week I've felt so much pressure to do everything perfectly that I haven't accomplished most of what I set out to do. That email I intended to send, that picture I intended to post- none of it was good enough. Today, I took a moment to reflect and realized that all of the pressure I'm feeling is from myself. When we think about our goals and what's preventing us from achieving them, it can be hard to admit that sometimes it's ourselves. We may be so afraid of failing that we don't even try. Or we may be so set on doing something a specific way, we forget to be flexible. No one gets everything perfect the first time. However, I believe that every time we try something new, we grow as a person. We gain new experiences and learn from them, even if the outcome isn't always what we intended. Try something new this week. Get out of your comfort zone. This Greek-inspired dish, featuring chicken, spinach, oregano, feta cheese crumbles and fresh lemon, proves that casseroles can be lighter and brighter without sacrificing taste. Ingredients 1bpackage (16 oz) uncooked orzo pasta 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained 1 bag (5 oz) baby spinach 8 oz feta cheese, crumbled 1/4 cup olive oil 1 tablespoon chopped fresh oregano leaves 1/2 cup reduced sodium chicken broth (from 32-oz carton) 1 lb chicken tenders, cut in 1-inch pieces (about 11 tenders) 1 teaspoon Greek seasoning 1 teaspoon finely grated lemon peel 2 tablespoons sliced green onions Directions: 1. Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package. 2. Meanwhile, in large bowl, mix tomatoes, spinach, about half of the cheese, the olive oil and oregano; stir in cooked pasta. Spoon mixture into baking dish. Drizzle broth over pasta mixture. In same bowl, mix chicken and seasoning until well coated. Place chicken pieces over orzo mixture; cover with foil. 3. Bake 45 minutes; remove foil, top with remaining cheese. Bake 4 to 5 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Top with grated lemon peel and green onions.

My new found love! For anyone who doesn't know High-intensity interval training, also called high-intensity intermittent exercise or sprint interval training, is a form of interval training, a cardiovascular exercise strategy alternating short periods of intense anaerobic exercise with less intense recovery periods, until too exhausted to continue. I forgot to post this weeks meal prep so here it is! Pit bull pancakes for breakfast. The rest of the meals alternate for lunch and dinners. Chicken “fried” rice, shrimp boil, roasted Brussels sprout and chicken salad, and a taco salad “soup”. Everyone ask about the @thedolcediet and what kind of meals we eat. This is a pretty easy example of the extreme variations but it all comes down to one key principle: EAT REAL FOOD. Most of these recipes are not in the Dolce Diet Cookbook but all the principles remain — eat real food, eat until satisfied not until full, eat every 2-4 hours, stay hydrated, AND DONT COUNT CALORIES. All in all, me and @crimpinainteasy13 aim to eat more plant based foods than animal proteins. The reality is that you can eat all your favorite foods if you just source them correctly. Everything in these photos is organic, non-gmo, and wild caught. Cost us about $150 for entire weeks worth of breakfast, lunch, and dinners — not to mention our snacks for the week. So, katie and I each eat about 6-7x a day on average and Sawyer eats about 4-5x a day. So, to make math easy let’s say we collectively eat about 63 meals over the week. That’s basically 3 meals a day for 3 people for 7 days. That equates to being about $2.40 a meal. Did you read that right? $2.40 a meal — all organic, non-gmo, and wild-caught. So, stop buying your $7 coffees and start buying REAL FOOD! Eating healthy is not expensive. Eating clean is easy. I’ll admit, summer is my FAVORITE! There is something about the smell of a sun kissed day that feels magical to me. It feels like something new is just around the corner. Good morning!! 🌞 Today I want to give you a bit more insight on my brand/business. Empowered by Finda Kpakiwa is indicative of the adversities that I have overcome growing up with dyslexia. I was diagnosed at the age of 20. Life had always seemed a bit challenging for me; from learning how to read and comprehend at age 17 to receiving my driver’s license at age 38. . I spent most of my life trying to catch up with my peers and not celebrating the uniqueness that I possessed. Do you find comfort in a familiar schedule or a rush from the brand new? I USED to be a strict schedule type of gal myself, but more recently I have been going with the flow, and embracing unexpected experiences. . Mondays are my most laid back AND most productive. I usually use the morning to relax, recover from a busy weekend, and get a good workout in. The rest of the day is used to get my week in order and my mind back into work mode. . My days vary depending what’s going on at the time. I generally start my week by creating an overview of my schedule, then build in time for client meetings and brainstorming sessions with my tribe. Weekends are spent exploring the city, new hikes, church, and some quality time with my girl @amanda_christina7 . Though my week is flexible, I try to maintain some structure so that I’m always staying on top of things and never losing those connections with clients. The incredible conversations I get to have throughout the week are truly what keeps me going and reminds me why I do all of this.
Gluttony with a healthy twist, decadent, no meat missed, everything but the kitchen sink sandwich. Tofurkey, dairy-free pesto, vegan cream cheese, tomato, sun-dried tomato, marinated artichoke hearts on sourdough. . . . There are different views on what healthy eating is and my job as a health coach and nutrition consultant is to figure what works best for you. The above is an example of a vegan meal on the days I like to say F-it and I just want to stuff my face. It’s not always fresh fruit and veggies but for me it’s a “healthy” alternative to fast/fried/fatty foods. . . . Nutritionally speaking I want to show variety and the ability to make healthier choices. I am not pushing a vegetarian/vegan agenda, that is my personal preference based on my research, understanding and goals. But I can help show the benefits of adding or replacing some foods that will help the quality of your meals. When I decided to implement nutrition packages to my empowered brand, I was in the third trimester of my pregnancy. I was fortunate enough that my pregnancy was very healthy and I was able to finish my nutrition and wellness course on time. However, I knew in order to promote my packages I also had to look the part.
