VEGAN CHOCOLATE CHIP COOKIES 🍪 . . * 1 cup oat flour * 1/4 tsp salt * 1/4 cup sugar, unrefined if desired. Cane or date sugar works fine. * 1/4 cup brown sugar or coconut sugar * 1/3 cup chocolate chips * 2 tbsp milk of choice, plus more if needed * 2 tbsp coconut oil * 1/4 tsp pure vanilla extract/maple syrup. * 1/2 tsp baking soda Combine all dry ingredients in a bowl, then stir add in wet ingredients to form a dough – it will be dry at first, so keep stirring until a cookie-dough texture is achieved. If needed, add 1-2 tbsp extra milk of choice. Form into one big ball, then either refrigerate until firm or freeze until the dough is cold. Once dough is chilled, preheat oven to 325 F. Form dough balls, place on a baking tray with parchment paper leaving enough room between cookies for them to spread. Keep dough cold while waiting to bake. Bake 11 minutes on the center rack. They’ll look underdone when you take them out. Let them cool on the baking tray 10 minutes before touching, during which time they will firm up. ENJOY! They come out so soft and chewy, active prep time 13 minutes , total time 24 minutes . Makes about 24 cookies, refrigerate after cooking. This week I haven’t been much of a breakfast gal. This morning though, I woke up feeling super hungry, so I opted for a nice and hearty bowl of oats. 🌟Are you a breakfast person?? 🌟I generally tend to cycle 🙈 I’ve also been thinking about calcium quite a bit too, because it’s a little tricky to maintain on a plant based diet. With this in mind, I topped these gorgeous oats with a zingy lime, Tahini and maple sauce 😍 YUMMM! Tahini is just so great, it’s got heaps of calcium in it, and it adds so much creaminess to your meals! Just mix it with some citrus juice, your favourite natural sweetener and you’re good to go 👊
So today I had a major binge “session”(?). I found this bag of trail mix in the cabinet and over the course of 3 hours, consumed the entire bag. 160calories * 25 servings. Today I had 4000 calories in one sitting. In addition to my normal meals, this totaled to 6000+ calories for the day. I’m no universe is this normal eating. I was not ravenously hungry, I was not severely starved. I have bad food habits that have lain dormant and unaddressed. It is time for me to address the unaddressed now. It’s been 5 years and I still haven’t grasped a handle on this. For 21 days I will be undergoing a dietary change. I will maintain 2000 calories a day, eating until satiation and practicing mindful eating. Why 21 days? Because I read that that’s how long it takes to build a new habit. Wish me luck. I’ll keep y’all posted. I am determined to succeed.

Carbohydrates are vilified on a daily basis as being a direct cause of weight gain. They are lambasted up and down the country as the food group which purposefully denies you the body you want. “Carbs? No thanks I’m trying to lose weight” is a phrase that if everything else in the world fell silent, would result in our ears perishing via extreme noise. - - There has been a development though. Now only ‘refined carbs cause weight gain.’ Whilst white pasta is seen as some sort of satanic Batman, wholewheat pasta is appears to be Captain America. “I’m being good today, I’m having whole-wheat pasta because I heard it’s better for me.” Well... In terms of body composition and nutrient intake, it is not. - - There is one main nutritional difference between these foods. Fibre. Whilst there is more fibre the less refined foods and fibre is linked to satiety, these foods do not guarantee such satiety. Furthermore, ‘feeling full’ does not directly mean anything because you can literally choose to eat more if you wish. - - It all boils down to the same thing again. Calories. As you can see, there is no difference in calories between rice, pasta or bread. Being fat or not fat is defined by calorie intake - which impacts energy balance - which impacts body composition. Regardless of the food. Therefore in Layman’s terms (despite all the noise), it’s impossible to argue that consuming a higher fibre foods will categorically be better for your body composition than a lower fibre foods. - - - If you prefer white rice, pasta or bread, swapping out your preference for the slightly less refined version as a means to lose fat is therefore pointless. For fat loss, consuming high fibre foods you enjoy is a good idea if you are aware of their caloric value, just as much as consuming lesser fibre dense foods is a good idea if you are aware of their caloric value too. You may have heard that reading nutrition labels is important, but are you clear on which information you should be paying the most attention to out of all that fine print? If your goal relates to body composition (losing fat, building muscle or a combo of the 2) here are the 4 pieces of info you should hone in on: - 1️⃣Serving Size. This is key. All of the other 3 pieces of info are referring back to this number! Find it first. In the label example in the graphic (it’s cottage cheese) you see the serving size is 1/2 cup. - 2️⃣Number of servings. In this example there are six 1/2 cup servings. If you look at the right hand side of the graphic you can see one reason why the number of servings is so important. I don’t know about you, but to me, those boxes of candy at the movies seem made for one person in a single setting. Interestingly, they’re often more than 1 serving😮Some are 3+ servings! What about a pint of ice cream? Would you have guessed 4 servings?! What!? Can you imagine inviting 3 other people to share a pint of ice cream with you🤣 Ummm, no. - 3️⃣Calories. This is calories PER SERVING. So in the example on the graphic there are 80 calories in a 1/2 cup of a cottage cheese. If you could read the print on the box of M&Ms you’d see that it says 220 calories. Sure scales can measure how much weight you carry but they DO NOT tell you how much of that weight is lean mass or how much is fat. If health is your goal, then fat percentage is what we want to keep low. If you’re training and eating right but not seeing the scale move very much, maybe it’s because you’re actually building muscle and still losing fat. I would recommend to try a more accurate test. How good does this chili look 🤤 Matt and I decided to try our hand at making and canning some homemade chili last night, I would say it turned out pretty good!! I’ve never canned anything before, so it was a lot of fun getting shown the ropes! We’re going to take a can of it with us on our vacation as an easy-to-make meal for one of the nights!! ✨¡Master Turrón de chocolate, arroz inflado y avellanas! Ya se acerca la navidad así que si quieres sorprender a tus amigos y familiares ponte manos a la obra. Hoy nuestra dietista de @alimmenta nos enseña a hacer un turrón de chocolate, arroz integral hinchado y avellanas. INGREDIENTES: 🔸200g de chocolate negro (80%) 🔸90g de avellanas naturales 🔸30g de arroz integral hinchado sin azúcar. ELABORACIÓN: 1️⃣Picar las avellanas naturales con una picadora o cuchillo en función de lo grande que quieras que sean los trozos de avellana. Si quieres utilizar otro fruto seco o mezclar varios, adelante. 2️⃣Derretir el chocolate negro (80%) en el microondas o baño maría. 3️⃣Mezclar el chocolate fundido y las avellanas picadas y añadir los 30g de arroz integral hinchado. Si os animáis con otros cereales integrales como la quinoa, mijo, trigo… bienvenidos sean, lo importante es que no lleven azúcar añadido y sean integrales 100%. 4️⃣Una vez están todos los ingredientes mezclados vertemos la mezcla en un recipiente de cristal cubierto con papel vegetal y le damos forma de turrón con ayuda de una cuchara. 5️⃣Y para acabar lo dejamos enfriar en la nevera unas dos horas, hasta que el chocolate este completamente duro . ↪️¡Probadlo en casa y contadnos qué tal!
